Find Good and Natural Recipes

Gobhi/cauliflower purontha/parantha is very popular in Haryana and Punjab region.  It is made in the breakfast.  Becomes more tasty if accompanied with butter. Its making is very easy and simple.  Here below is the whole process how we can make it:
Ingredients
1 small size cauliflower
1" piece of ginger
1 small onion
1 fresh green chili
salt to taste
1 tsp of garam masala
1 tsp of coriander powder
handful of chopped cilantro
2 cups of wheat flour
1 cup of water
1/4 cup of flour for rolling
oil
Method
1.  Wash and cut cauliflower in small florets.  Soak in warm salty water for 10 minutes. Next clean it very carefully to make it worm free.
2. Now take out from water and keep it in any sieve to remove extra moisture for few minutes.
3. Next take few florets in small zar of mixer and pulse it 5-6 times or grate it with grater box. Pulse t the remaining florets similarly.
4. Peel the onion and ginger.  Now cut roughly chili, ginger and onion. Again pulse them for 4-5 times.

Cut finely onion and ginger with hand if not very good in rolling the stuffed parantha. As done in the mixer zar on pulse contains little bit moisture.
5.  Now mix the cauliflower, onion, chili and ginger mixture together. Add salt, coriander powder and garam masala just before we start making parantha.
6. Take the wheat flour in a big bowl and make a soft dough with 1 cup of water. Keep it aside for 10 minutes.
7.  Now make four balls out of the dough.
8.  Roll it with rolling pin just like roti in round shape.  Put handful of stuffing on it and gather from all sides and make flat ball of it.
9.  Now  roll this stuffed flat ball into the dry flour and slighly press it with hands and then roll it with rolling pin on wooden surface/chakla with very light hand.
10.  Place this stuffed and rolled parantha on the heated tava,/pan etc.  when one side seems dry turn it to the other side.
11.  After that apply oil to both sides and cook it till crisp.
12.  Delectable gobhi parantha/purontha is ready to serve.

Rice flour is a wonderful healthy food which has many health benefits.  It is a good source of magnesium, selenium, vitamins and minerals.  It is consumed almost in every country.  Today I made rice flour tikki which is very delicious and easy to make. Here below is the full recipe:
Ingredients
3/4 cup of rice flour
3/4 cup of glutinous rice flour
1 radish
10 spring onion
2 green chilies
handful of cilantro
salt to taste
1 tsp of garam masala
Method
1.  wash radish, spring onion, green chilies and cilantro.
2.  Cut the spring onion leaves and cilantro very finely.
3. Take the spring onion(white bulbs) and green chilies into small zar of mixer and pulse it 4 to 5 times.  In the same way , take the small pieces of radish in the small zar and make the coarse paste or grate it.
4.  Now take the regular rice flour, glutinous rice flour, salt and garam masala in a big bowl and mix well with spoon.
5. Now add crushed or grated radish, spring onion, spring onion leaves, cilantro and green chilies.
6.  Now knead it and keep it aside for 10 minutes.
7.  Now make 8 to 10 flat round tikkis out of it.
8.  Now heat the non stick pan with 4-5 spoon oil and shallow fry the tikkis on medium heat by covering the pan. Cook like this from both sides.
9.  Delicious rice flour tikkis are ready to serve.

Raw mango/kairi having a sour taste, is used in making many dishes. It has lots of health benefits.  Today I am writing the recipe of kairi chutney.  Here it is:
 Ingredients
1 raw mango
handful of grated coconut
salt to taste
1/2 tsp of garam masala
2 green chilies
1" piece of ginger
1 tbsp of whole coriander
Method
1.  Wash and peel the raw mango.
2.  Cut into pieces.
3.  Take the mango, ginger, green chilies and whole coriander in a blender and blend it with little water.
4. Now add coconut, salt and garam masala and and again blend it till smooth.
5. Transfer it into a bowl.
6.  Kairi chutney is ready to serve.

Capsicum/simla mirch/bellpepper can be stuffed with various fillings.  Today I have made the simla mirch, which I have stuffed with onion. Here below is the whole process how we can prepare it:
Ingredients:
4-5  simla mirch
2 medium sized onion
1 tbsp of grated ginger
1 tsp of red chili powder
1 tbsp of soanf/fennel powder
1 tbsp of coriander powder
1 tsp of garam masala
2 tsp of mango powder
1 tsp of turmeric powder
salt to taste
2-3 tbsp of oil
Method
1. Wash the simla mirch. Take out its stem in its shape with knife. 
2. With a small fork scrape little bit from inside so that it can be stuff properly.
3.  Now grate the onions and mix all the other ingredients except oil and mix.
4.  Now add 1 tsp of oil in this filling and microwave it for 2 minutes in ceramic bowl.
5.  Fill the simla mirchies with microwaved onion stuffing.  It can be filled easily with a small fork.
6.  Now heat the oil in frying pan.  Place the simla mirchies in it.  Once stir it so that oil gets coated to it.
7. cover the lid and cook it on low flame till soft.
8.  Now take out these  into a plate and put the remaining onion mixture in the frying pan.
9.  Cook it fro few minutes.
10  Again add the cooked simla mirchies to the onion stuffing which we are  cooking on low flame.  Stir it, so that all the capsicums get coated with this masala.  Cover the lid.
11.  Again cook it for few minutes by covering the lid.  stir often.
12.  Onion stuffed simla mirchies are ready to serve.

Upma is made with sooji.  It is made in breakfast.  In this recipe, I have replaced the sooji with fresh bread crumbs.  Here is the whole process how we can make it:
Ingredients
6 bread slices
2-3 tbsp of oil
pinch of heeng/asafetida
1 tsp of cumin seeds/mustard seeds
few curry leaves
2 dry red chili
1 cup of frozen mixed vegetables
1 tsp of tomato paste
1 tsp of lime juice
1 finely chopped medium sized onion
1 tsp of grated ginger
2 finely chopped green chilies
3 tbsp of finely chopped cilantro
1 tsp of sugar (optional)
1 finely chopped tomato
Method
1. Grind the bread to make fresh crumbs in small zar of mixer grinder.
2.  Heat the oil in a frying pan. Add heeng cumin seeds or mustard seeds. Let it splutter fully.
3.  Now add  curry leaves, red dry chili chunks, onion and ginger and cook till translucent.
4.  After that add frozen mix vegetable,tomato paste, lime juice, green chili and sugar.  Cook it for 2-3 minutes by covering the pan with lid on low flame.
5. Now add salt and turmeric powder and fresh bread crumbs and mix well.
6.  Cover with lid and cook for 4-5 minutes on very low flame, stirring occasionally.
7.  Now add garam masala and cilantro. Mix well. In the end add tomato pieces and mix.

8.  Fresh bread crumbs upma is ready to serve.
Tip
 Stale bread can be used.  But be ensure there should now be any fungus. Stale but neat and clean bread can be used for this recipe.
