Find Good and Natural Recipes

Murmara /puffed rice is used to offer Gods and Goddesses in temples. It is used in bhel and some namkeens. It is low in calories. One cup of murmure contains 54 calories. Today I am writing the recipe of its poha.  It is very delicious and easy to make.  Here below is its full recipe: 
Ingredients
2 cups of murmura
1 onion (medium size)
1/2 cup of mixed vegetables/peas
1 tbsp of oil
few curry leaves
1 tsp of black mustard seeds
pinch of asafetida
salt to taste
1/2 tsp of turmeric powder
1/2 tsp of sugar
1 tbsp of lemon juice
few peanuts
1 tsp of peanuts powder
1 tsp of roasted channa powder
1 green chili
Method
1.Soak the murmure in water for 10 minutes.
2 Drain out the water through a sieve.  Keep the murmure for 10 minutes.
3.Wash the frozen mixed vegetables or peas.  Put it in the soaked murmure.  
4. Heat the oil in a big frying pan. Add asafetida and mustard seeds and let it splutter till it stops it self. Now put curry leaves and peanuts. Now add onion and cook  it till translucent.
5.  Next add green chili, and murure along with salt, turmeric and sugar. Mix well.  Lower the heat.
6. After that add peanuts powder and roasted channa powder and lemon juice and stir well.  cook it for few minutes.
7.  Delicious murmura poha is ready to serve.

Dibba roti/Minapa roti is made in Andhra Pradesh  in India. It is a very thick crispy roti and ideal for breakfast. Its making is very simple with very few ingredients. Here below is how we can make It :
Ingredients
1 cup of small grain rice
1 cup of dhuli urad dal
1 medium sized onion
2 green chilies
1 inch piece of ginger
handful of chopped cilantro
salt to taste
1 tsp of cumin seeds
small pinch of sodium-bi-carb
oil
Process:
1. Take the rice and dal/pulse in equal quantity.  Soak it overnight in water. 
2.  After that peel and cut the ginger.  Take ginger, green chilies and soaked dal and rice in the container of mixer.  Blend it to thick and coarse paste with very little water. Coarse texture should be like semolina/rava. Best thing of this roti is, its batter doesn't need fermentation.  Just make coarse batter and make the roti.
3. Now add finely chopped onion, cumin seeds, salt and chopped cilantro.  Mix well.
4. Next add small pinch of sodium bi carb and again mix it with light hand.
5.  Heat 3-4 tsp of oil in a non stick pan.  On it put 3 tbsp of batter and spread in round shape with the help of any spoon.
6.  Cover the pan with lid.  Cook it on medium to low flame for 5 minute. By this time, it will be crispy. Now turn it to the other with chimta/tong or spatula. Again cook it for 2-3 minutes. and take out in a plate from pan.
6. Crispy, delicious dibba roti is ready to serve.

Rolled barley poha is a healthy snack.  Here below is, how we can prepare it:
Ingredients
1 cup of rolled barley
1/2 cup of water
salt to taste
1 tsp of sugar
1/2 tsp of turmeric powder
1 tbsp of lime juice
1 tsp of mustard seeds
1 finely chopped green chili
1 tsp of grated ginger
few curry leaves
1/2 cup of frozen mix vegetables
handful of small cubes of cottage cheese (optional)
1 tbsp of finely chopped cilantro
oil
Method
1. First soak 1 cup of rolled barley with 1/2 cup of water in a ceramic bowl. Keep it aside for 10 minutes.
2.  Now add salt, turmeric, sugar, ginger, green chili, lime juice, curry leaves, frozen fresh vegetables  and mix thoroughly with hand.
3. Now heat oil in a ladle on gas stove.  Add asafoetida and mustard seeds and let it crackle till it stops itself. Now put off the flame and add this to the rolled barley mixture and mix well.
4. Now keep in the microwave and cook it for 3 minutes.
5.  After that take out from microwave and stir. At this stage, sprinkle 1 tbsp of water on it and mix.
6.  Again microwave it for 2 minutes.  Now add cilantro and cottage cheese (optional) and stir well and close with lid..
8.  Healthy rolled barley poha is ready to serve.

Oats idlis are very healthy and delicious snack for breakfast and tea time. Yesterday I made it.  It came out very well.  Here below is how we can make it:
Ingredients
1 small cup of oats
1/2 cup od semolina/sooji
3/4 cup of curd
salt to taste
1 tsp of sugar
1/2 tsp of Eno
1 finely chopped green chili
1 cup of finely chopped cilantro/dhania/kothmir/fak chi
1 tsp of mustard seeds
few curry leaves
1/2 cup of grated carrot
1 tbsp of grated ginger
oil
Method
1. Make coarse powder like sooji of oats in mixer. Now take sooji and oats in a big bowl. Make a batter with curd and 1/2 small cup of water. Water is used according to the thickness after adding curd.
2.  Next add salt, sugar, cilantro, green chili,grated carrot and ginger and mix thoroughly. Batter should be thick.
3. Now heat 1 tbsp of oil in a ladle or frying pan.  Put mustard seeds and let it crackle for a while.  After that put curry leaves and then remove from heat and put this on batter.
4. Heat one glass of water  in rice cooker or pressure cooker.
5. Grease the idli molds.
6. Next add eno to the batter and mix it with very gently. Immediately pour the mixture to all idli molds and keep it in cooker. If making in pressure cooker, don't put the whistle. Close the lid or rice cooker or pressure cooker.
7. Steam it for 15 minutes. Check with tooth prick. If it comes out clean, it means it has done.
8. Now take out from the cooker and let it cool down completely, so that it can take its shape.
9. De-mold it with the sharp edge of spoon.  
10.  Healthy and delicious oats idlis are ready to serve.

Many dishes are prepared with leftover rotis/chapatis/phulka. Today I made stale/leftover roti  chilla.  Rather I should say roti sandwitch chilla.  My mother in law used to make it with leftover rotis. After my marriage, I ate it first time in breakfast. I liked it very much.  Today while I was making, it made me nostalgic for those sweet days. Here below is its full recipe:
Ingredients
1 cup of besan
salt to taste
1/4 tsp of turmeric powder
1/4 tsp of garam masala
1/4 tsp of cumin seeds
handful of chopped cilantro
1 finely chopped green chili
1 tsp of grated ginger
3/4 cup of water
1 tsp of lemon juice
oil
Method
1.  First of all we need leftover chapatis.  I took 4 chapatis.
2.  Take the besan and all the ingredients, except oil, in a bowl and  make a batter with 3/4 cup of water pouring gradually.
3. Add 1 tsp of oil to the batter and mix.
4.  Heat a non stick pan or tava. Apply besan batter to one side of roti and place it on greased tava. Now apply besan to the other side. 
5. Put 1 tsp of oil around the roti sandwaitched chilla and flip it over.
6. Cook till crisp from both sides just like chilla/puda. When it it done, remove it from tava and serve it hot with tomato ketchup or any green chutney.

Zucchini has lots of vitamins A& C but very few calories. It helps in losing weight and very good for eyes.  Here I am using this in making chilla. See the recipe below:
Ingredients
2 cups of besan
1 tender zucchini
salt to taste
1/2 tsp of turmeric powder
1 /2 tsp pf red chili powder
1 tbsp of coriander powder
1/2 tsp of garam masala
1 finely chopped green chili
1/4 cup of finely chopped onion
1 tbsp of grated ginger
1 ripe tomato
1/2 cup of finely chopped cilantro
oil
1+3/4 cups of water
Method
1. Sieve the besan and add salt, turmeric, red chili powder, garam masala, coriander powder and mix well.
2.  Grate the zucchini all along with its peels.
3.  Now add zucchini, onion, chilies, cilantro, ginger, and tomatoes to the besan mixture.
4.  Make batter with putting water gradually.  It should be lump free. Batter should  not be  too thick nor too watery. 
5. Now add 1 tsp of oil to the batter and stir well.
6.  Heat a non stick pan/tava.  Grease the pan with oil.
7.  Put 1 ladle full of batter to the heated tava and spread it in round shape with the back of ladle.
8. Put little oil with spoon around the chilla/puda.
9.  As it seems dry, flip it over to the other side with the help of turner/spatula.
10. Apply oil both sides and cook till it crisp.
11. Delicious and healthy Zucchini Chilla/puda is ready to serve.
Tips
1. Putting little oil in batter, prevents it absorbing too much oil while cooking.
2. On non stick first chilla/puda is needed oil , rest can be made with little oil or without oil too.
3.  Everything can be adjusted according to ones taste.
