Find Good and Natural Recipes

Pinwheel samose is  prepared with the same ingredients which we use in making samosas. The difference between the two is of its wrapping, and of course  its shape too.  Samosas are made in triangle shape while pinwheel samosas are made in round wheel shape. It is a very tempting tea time snack.  Here below is its full recipe:
Ingredients
For dough
2 cups of all purpose flour/maida
1/2 tsp of salt
1/2 tsp of ajvain
1/4 cup of oil
1/3 cup of water to knead flour
For stuffing 
2tbsp frozen peas (optional)
4 small or medium sized Potatoes
1 teaspoon Chili powder
1 tsp Turmeric powder
Salt to taste
2 teaspoon chat masala
1tsp coarse soanf powder
1 tsp. coriander powder
1 heaped tbsp tomato ketchup
1 chopped green chili
few curry leaves
2 tbsp Cooking Oil
Method
Stuffing
1. Boil and peel the potatoes. Let it be on normal temperature and now mash it with the back of spatula.  
2. Take the mashed potatoes, frozen peas, salt, coriander powder, red chili powder, soanf, turmeric, chat masala, green chilies,curry leaves and oil, in a ceramic/microwave proof tray /bowl.
3. Mix the whole mixture properly.
4 .Now microwave it for 3 minutes and stir.
5. Next add tomato ketchup and stir.  
Dough
Take the all purpose flour in big plate or bowl.  Add ajvain and salt.  Now mix the oil with the flour rubbing it by hands. Bow make a stiff dough with 1/3 cup of water.  Keep it rest for 15 minutes.
Preparing rolls
1. Divide the dough in two balls.  Make smooth balls out of it.  Now roll it on chopping board/kitchen counter in a rectangle or square shape.  See in the collage below. 
2.  Now spread the potato mixture on it and slightly roll above potato mixture to make it smooth. Sorry, I forgot to take photo of this step. It is missing in collage.
3. Next roll it tightly. Wrap this roll in cling film and roll it with hands on the board. 
4.  Now remove the wrap and cut it into pinwheel samosas pieces.
5.  Press each piece between the palms very gently. 
6.  Preheat the OTG for 15 minutes on 190 degree C with greased tray.
7.  Grease each pin wheel samosa with milk or oil.
8.  Place it on greased tray on  and bake it on 190 degree C till light brown.  I placed the tray on middle rack.  Mine took 35 minutes.  Turn in between and keep an close eye on it.  Baking time may be vary oven to oven. 
9.  Take out from the oven when it is golden brown.

Gobhi/cauliflower/phool gobhi is used for making many dishes.  Earlier I have written its parantha and sabzi recipe.  Today I am writing about its pakora/pakoda.  Here below is what is required and how it is made:
Ingredients
1 medium sized cauliflower
1 cup of besan
salt to taste
1 tsp of turmeric powder
1/2 tsp of chili powder
1 tsp of coriander powder
1/2 tsp of soanf/fennel powder
1 tsp of kasoori methi powder
1 tsp of garam masala
1 tsp of ajvain/carom seeds
small pinch of sodium bi-carb
1/4 cup of chopped cilantro
1 finely chopped green chili
1/2 tsp of lime juice
oil for frying
Method
1.  Wash the cauliflower and cut the flat florets.
2. Take the besan in a big bowl.  Add salt, turmeric powder, chili powder, garam masala, 1/2 tsp of lemon juice, coriander powder, soanf powder, carom seeds and mix.  Now make thick pouring consistency of batter.
3.  Next add finely chopped green chili, cilantro and kasoori methi powder. Mix thoroughly. After that add soda bi-carb and mix gently.  Adding soda bi-carb is optional.
4. Heat the oil in a frying pan.  Dip the cauliflower florets one by one in besan batter and fry light brown from both sides by turning with slotted spoon.  Now take out from the oil. Fry all the pakoras like wise.
5.  Now with the back of any flat bowl press very gently all the pakoras.
6.  Now again fry these pressed pakoras again till crisp.
7.  Crispy gobhi pakoras are ready to serve.

Mathris are tea time snack. It can be made of aata, maida, besan etc.It can be made in many shapes and sizes.  Here below is full recipe of tikoni jaali mathri:
 Ingredients
6 cups of all purpose flour/maida
salt to taste1/2 tsp of crushed black pepper
2 tsp of ajvain/carom seeds
1 tbsp of cumin seeds
1 cup of oil for moyan
1 cup+2 tbsp of water for dough
oil for frying
Method
1.  Sieve the all purpose flour/maida.
2.  Take maida in a big bowl.  Add all the dry ingredients salt, ajvain, cumin seeds, and mix.
3.  Now add oil for moyan. Rub it with both hands.
4.  Now make a hard dough with 1 cup+2 tbsp of water.
5.  Keep the dough for 15 minutes for rest.  Cover it with wet cloth or with any inverted bowl.
6.  Now divide the dough into small parts.  Make balls out of it.
7.  Roll the balls just like round poori.  Now cut it with knife in four parts. In each part make 2-3 cuts in a way from upper and lower and its sides part should be joined. See the mathri carefully.
8.  Heat the oil in a frying pan. Flame should be medium.
9.  Fry all the slotted mathris on medium hot oil. It will take time.  All the bubbles will disappear when it is done.
10.  Take out with any spatula from the frying pan.  Crispy and delicious slotted mathris are ready to serve.

Lacche wali mathri is a delicious mathri with very little sweetness,  Though its making is little tickey, but taking some cautions, it can be prepared.  We start loosing patience when its saata starts coming out. Here below is its full recipe:
Ingredients
1 cup of maida
1 tsp of oil for moyan
For Satta
1/4 cup of boora
1/4 cup of rice flour
2 tsp of pure ghee
oil for frying
Method
1. Take the maida/all purpose flour in a big bowl.  Add oil for moyan and rub with hands.
2. Now with 1/4  cup of water knead the dough which should be niether hard nor too soft. Keep the dough for rest for 15 minutes.
3. for preparing saatta take the pure ghee in  a bowl and add boora and rice flour to it.  Mix well.  It should not be too loose.
4.  Now divide the dough into two parts.  Make balls out of it.
5.  Roll each ball into a big roti by applying oil to the chakle and rolling pin.  Instead of chakla it can be rolled on any hard surface.
6.  Now apply saata to the rolled roti with fingers.  It should be very thin layer.  If apply too much it will come out while we again roll it.
7.  Now make tight roll of it.  Prepare the second roll from the other dough boll like wise.
8.  Now cut each roll into 3 pieces.  Don't cut too thin.
9.  Now grease your hand and place one piece on the palm in the way cutting place should be above and down and press gently with other hand's palm to flatten it.  Make it flatten it again very gently.  Now keep it on the hard surface and make two cuts in  middle of this mathri.  Prepare all the mathris like it.
10.Heat the oil in a frying pan.  Put a small piece of dough to check whether oil is hot or not. If it come out above immedialty, it means it is how.  Now lower the heat to medium.
11.  Now it is the time to fry all the mathris.  Fry only two or three at a time depending on the quantity of oil in which you are frying it.
12. On medium heat it will be crispy.  It needs patience.  When it gets crispy take out from the frying pan with any slotted spoon.
13.  Sweet multi layered mathri is ready.

Crispy Nachos Chips is a Mexican snacks item.  It is served with fresh salsa. Here I have made it with corn tortillas. It can be made in children party.  Children love it. In Few minutes it can be prepared with tortillas.  Here below is how it can be made:
Ingredients
Few corn tortillas
oil for frying
salt 
black pepper powder
Method
1.  Stack the tortillas on chopping board and cut into 8 triangles.
2.  Heat the oil in a frying pan. 
3.  Put into oil handful of tortillas one by one so that they should not deshape and stick to each other.
4. Fry till golden brown.
5. Take out with any spatula when it is done. 
6. Sprinkle salt and black pepper powder.  Crispy corn tortilla Nachos chips are ready to serve.
7.  Enjoy it with fresh salsa.

Mathris are made in various flavours. Today I have made methi masala mathri.  It is very delicious and worth trying. Here below is in full details how to make it:
Ingredients
2 cups of all purpose flour/maida
salt to taste
1 tsp of ajvian
1 tsp of coarse black pepper
1/4 cup of oil for moyan
1/4 cup+2tbsp of water
handful of dried kasuri methi
1 tsp of cumin seeds
oil for frying
Method
1. Sieve the maida. Add salt, ajvain,cumin seeds, black pepper, and mix. 
2. Now add 1/4 cup of oil and mix it by rubbing with both hands.
3. Make a hard dough with 1/4 cup+2bsp of water.
5. Keep it rest for 10 minutes.
6. Now make it smooth with oily hands for few minutes.
7. Now make 25 small balls/pedis out of it. 
8. Roll it into small roundels. After that prick it with tooth prick or fork. 
9. Heat the oil in a frying pan on medium heat.
10. Fry all the masala mathris in hot oil on low to medium flame till golden brown.  It takes about 8 to 10 minutes. Take out from oil.
11. Crispy and flavorful methi mathris are ready to serve.

Rolled barley poha is a healthy snack.  Here below is, how we can prepare it:
Ingredients
1 cup of rolled barley
1/2 cup of water
salt to taste
1 tsp of sugar
1/2 tsp of turmeric powder
1 tbsp of lime juice
1 tsp of mustard seeds
1 finely chopped green chili
1 tsp of grated ginger
few curry leaves
1/2 cup of frozen mix vegetables
handful of small cubes of cottage cheese (optional)
1 tbsp of finely chopped cilantro
oil
Method
1. First soak 1 cup of rolled barley with 1/2 cup of water in a ceramic bowl. Keep it aside for 10 minutes.
2.  Now add salt, turmeric, sugar, ginger, green chili, lime juice, curry leaves, frozen fresh vegetables  and mix thoroughly with hand.
3. Now heat oil in a ladle on gas stove.  Add asafoetida and mustard seeds and let it crackle till it stops itself. Now put off the flame and add this to the rolled barley mixture and mix well.
4. Now keep in the microwave and cook it for 3 minutes.
5.  After that take out from microwave and stir. At this stage, sprinkle 1 tbsp of water on it and mix.
6.  Again microwave it for 2 minutes.  Now add cilantro and cottage cheese (optional) and stir well and close with lid..
8.  Healthy rolled barley poha is ready to serve.

Oats idlis are very healthy and delicious snack for breakfast and tea time. Yesterday I made it.  It came out very well.  Here below is how we can make it:
Ingredients
1 small cup of oats
1/2 cup od semolina/sooji
3/4 cup of curd
salt to taste
1 tsp of sugar
1/2 tsp of Eno
1 finely chopped green chili
1 cup of finely chopped cilantro/dhania/kothmir/fak chi
1 tsp of mustard seeds
few curry leaves
1/2 cup of grated carrot
1 tbsp of grated ginger
oil
Method
1. Make coarse powder like sooji of oats in mixer. Now take sooji and oats in a big bowl. Make a batter with curd and 1/2 small cup of water. Water is used according to the thickness after adding curd.
2.  Next add salt, sugar, cilantro, green chili,grated carrot and ginger and mix thoroughly. Batter should be thick.
3. Now heat 1 tbsp of oil in a ladle or frying pan.  Put mustard seeds and let it crackle for a while.  After that put curry leaves and then remove from heat and put this on batter.
4. Heat one glass of water  in rice cooker or pressure cooker.
5. Grease the idli molds.
6. Next add eno to the batter and mix it with very gently. Immediately pour the mixture to all idli molds and keep it in cooker. If making in pressure cooker, don't put the whistle. Close the lid or rice cooker or pressure cooker.
7. Steam it for 15 minutes. Check with tooth prick. If it comes out clean, it means it has done.
8. Now take out from the cooker and let it cool down completely, so that it can take its shape.
9. De-mold it with the sharp edge of spoon.  
10.  Healthy and delicious oats idlis are ready to serve.

Makke ke aate ka upma is called turn cornmeal in Jamaica. It is ideal dish for breakfast and tea time.  I have made this Jamaican dish little bit mixing with our Indian cooking.  It is very healthy and delicious too.  Here is the whole process how I made it:
Ingredients
1 small cup of makke ka aata/ maize flour
2 cups of coconut milk (250 grams)
3.1 tsp of oil
4.1 tbsp of butter
few curry leaves
1 bowl of frozen vegetables
salt to taste
1/2 tsp of turmeric powder
1 tsp of lime juice
1 tsp of cumin seeds
1 tsp of black mustard seeds
1/2 cup finely chopped cilantro
1/2 cup of chopped spring onion leaves
1/2 cup of cottage cheese cubes (optional)
1 finely chopped green chili
Method
1. Roast the maize flour with one tsp pf oil on medium flame till slightly change in color not too much. Now take out in another plate and clean the pan.
2. In the same pan take 1 tbsp of butter and keep it on heat.
3.  Now add cumin seeds and mustard seeds and let it crackle for a while. Next and curry leaves.
4. Next add frozen vegetables, salt and turmeric powder.
5.  After that add the coconut milk and stir.
6. Now add maize flour and mix.
7.  While stirring constantly, add lime juice, spring onion leaves, and half of cilantro.
8.  Cook constantly stirring till oil separates
9.  Delicious turn cornmeal/makke ka upma is ready and remove from heat. Add remaining cilantro and cottage cheese cubes and mix thoroughly and transfer it into a serving dish.
Tip
1.After cooking, as oil completely separates from upma, this (oil/butter) can be consumed with upma or can be discarded.
2. Instead of frozen vegetables, steamed or frozen corn can be added to it. It tastes great in it.

Vadas are made with many vegetables and pulses.  Today I am writing the recipe of peas vada.  It is very tempting and delicious tea time snack.  Here is the whole process how I made it:
 Ingredients
2 cups of frozen peas
4 slices of bread
1 finely chopped green chili
1tbsp of grated ginger
1 tbsp of finely chopped onion
2 tbsp of lime juice
salt to taste
1/2 tsp of chili powder
1 tsp of cumin seeds
1 tbsp of garam masala
handful of cilantro
few mint leaves
Method
1. Make fresh bread crumbs with four slice of bread in vegetable chopper.
2.  Next make a coarse mixture of peas in the vegetable chopper.
3.  After that mix the coarse peas, crumbs, chili, ginger, onion, lime juice, salt, chili powder. garam masala  cilantro,mint leaves and cumin seeds.  Mix it thoroughly with hands, can be put 1/4 cup of water in it if it is too thick.
4. Now make its vadas, making little hole in it with finger or with any drinking straw.  Prepare all the vadas out of the mixture.
5.  Now heat the oil in a frying pan/kadahi.  Fry all the vadas from both sides in hot oil till crisp. When its done, take out from oil with spatula. 
6.  Crispy matar vadas are ready to eat.

Rice flour is a wonderful healthy food which has many health benefits.  It is a good source of magnesium, selenium, vitamins and minerals.  It is consumed almost in every country.  Today I made rice flour tikki which is very delicious and easy to make. Here below is the full recipe:
Ingredients
3/4 cup of rice flour
3/4 cup of glutinous rice flour
1 radish
10 spring onion
2 green chilies
handful of cilantro
salt to taste
1 tsp of garam masala
Method
1.  wash radish, spring onion, green chilies and cilantro.
2.  Cut the spring onion leaves and cilantro very finely.
3. Take the spring onion(white bulbs) and green chilies into small zar of mixer and pulse it 4 to 5 times.  In the same way , take the small pieces of radish in the small zar and make the coarse paste or grate it.
4.  Now take the regular rice flour, glutinous rice flour, salt and garam masala in a big bowl and mix well with spoon.
5. Now add crushed or grated radish, spring onion, spring onion leaves, cilantro and green chilies.
6.  Now knead it and keep it aside for 10 minutes.
7.  Now make 8 to 10 flat round tikkis out of it.
8.  Now heat the non stick pan with 4-5 spoon oil and shallow fry the tikkis on medium heat by covering the pan. Cook like this from both sides.
9.  Delicious rice flour tikkis are ready to serve.
