Find Good and Natural Recipes

Rolled barley poha is a healthy snack.  Here below is, how we can prepare it:
Ingredients
1 cup of rolled barley
1/2 cup of water
salt to taste
1 tsp of sugar
1/2 tsp of turmeric powder
1 tbsp of lime juice
1 tsp of mustard seeds
1 finely chopped green chili
1 tsp of grated ginger
few curry leaves
1/2 cup of frozen mix vegetables
handful of small cubes of cottage cheese (optional)
1 tbsp of finely chopped cilantro
oil
Method
1. First soak 1 cup of rolled barley with 1/2 cup of water in a ceramic bowl. Keep it aside for 10 minutes.
2.  Now add salt, turmeric, sugar, ginger, green chili, lime juice, curry leaves, frozen fresh vegetables  and mix thoroughly with hand.
3. Now heat oil in a ladle on gas stove.  Add asafoetida and mustard seeds and let it crackle till it stops itself. Now put off the flame and add this to the rolled barley mixture and mix well.
4. Now keep in the microwave and cook it for 3 minutes.
5.  After that take out from microwave and stir. At this stage, sprinkle 1 tbsp of water on it and mix.
6.  Again microwave it for 2 minutes.  Now add cilantro and cottage cheese (optional) and stir well and close with lid..
8.  Healthy rolled barley poha is ready to serve.

Aaloo/potatoes  are used in various dishes. Today I have made gravy wale aaloo, without oil and in microwave.  Believe me, I have not used even a drop of oil in it.  Its making is very simple.  Here below is what is required  and how to make it:
Ingredients:
2 boiled potatoes
1 tbsp of tomato paste
2 green chilies
1 tsp of grated ginger
salt to taste
1/2 tsp of turmeric powder
pinch of red chili powder
1 tsp of  whole coriander powder
1 tsp of cumin seeds
1 tsp of mustard seeds
1/2 tsp of fennel seeds
1/8 tsp of kalongi
few curry leave
2 tbsp of chopped cilantro
1/4 tsp of garam masala
small pinch of asafetida/heeng
Method
1. Wash and boil the potatoes.
2. Peel and break into pieces with hands.
3. Take a microwave safe bowl.  Put salt, turmeric, chili powder, ginger, green chili, tomato paste, whole coriander powder, heeng, cumin seeds, mustard seeds, fennel seeds and kalongi to the potatoes and mix well.
4.  Now add 3 cups of water to it and again mix well with spoon.
5.  Keep it in the microwave,  Now microwave it for 15 minutes (Total time). For that set microwave for 5 minutes on 100% power level, 5 minutes on 30% power and again 5 minutes on 100 % power.  Total microwave time is 15 minutes on different power levels.
6.  Now take out the sabzi bowl from the microwave.  Add garam masala and cilantro and mix well.
7.  Delicious fat free aaloo sabzi is read to serve.

All purpose flour/maida's dhokla, I prepared it in microwave in a microwave proof glass bowl.  It came out very soft.  Here is the whole process how I made it:
Ingredients
3/4 cup of all purpose flour (maida)
1/4 cup of semolina
salt to taste
1/2 tsp of turmeric powder
1 tsp of sugar
1 tsp of ginger paste
1/2 tsp of green chili paste (optional)
1 tsp of oil
1/2 cup of sour curd
1/2 tsp of lime juice
1 tsp of Eno
1/4 cup of water
For tempering
2 tbsp of oil
pinch of asafetida
Few silted green chili
few curry leaves
1 tsp of mustard seeds
1 tsp of white sesame seeds (optional)
Method
1.  Take the all purpose flour and semolina in a bowl with salt, turmeric, sugar and mix well.
2.  Add curd and water to it and make smooth batter of it. Keep it aside for rest so that semolina can absorb water.
3.  Next add ginger and chili paste and mix.  Then add oil and again mix.
4.  Grease the microwave proof bowl.  Bowl should be with lid.
5.  Now add Eno and mix it with very gently/light hand.
6.  After that pour it into the grease bowl and cover it with lid as shown in picture.
7.  Now place it in microwave .
8.  Microwave it for 5 minutes.
9.  Soft dhokla is ready.
10.  Let cool it completely and cut into desired shapes.
Tempering
1. Heat the oil in a pan.  First put split green chilies and fry it little bit and take out.
2. Next add mustard seeds and then sesame seeds.  Let it splutter till it stops itself.
3. Now add curry patta and pinch of heeng.  When its done, remove from fire and pour it on the dhokla and cut into desired sshapes pieces.
Tips
1.  Covering the bowl with lid is essential, otherwise dhokla will hard.
2.  While its getting cool just before cutting into pieces, it should be covered with lid.
3. Don't keep the dhokla too thick, otherwise it will raw at the bottom.
4. To keep it soft, cover the lid while microwaving and while cooling as well.  Covering the lid is very essential while making dhokla in glass bowl.

Khichadi is considered a light, healthy and comfort dish.  It is very good to have it while stomach is upset.  It is prepared by mixing green moong dal and rice for patients, though it can be made with other dals too. Today I have prepared it in microwave with multi stage + delayed cooking.  Delay start cooking is very convenient function. With this feature, we can prepare food, even we are not at home or busy in other work. Here below is the whole process how to prepare khichdi with these functions and without(in simple microwave) too: Read carefully both the ways:
Ingredients
3/4 cup of mixed rice and green moong dal
salt to taste
1 tsp of turmeric powder
pinch of asafetida
1 tsp of cumin seeds
1 tsp of oil
1 tbsp of grated ginger
onion and tomato (optional)
Method
1. Wash the mixed dal and rice few times with water.
2. Take the dal and rice with 2.5 cups of water in ceramic pot . Its lid should be hole in it.
3. Add the salt, turmeric powder, cumin seeds, asfetida, ginger and oil.  If using onion and tomato can be added too now.  It is optional. Here I am making simple khichadi without it.
4. As we are making it in multistage cooking +delayed cooking .  So keep it in microwave on turntable and close the door of microwave.
5.  Now first of all clock should be set on exact time.
6.  First we have to set power level and time (multi stage) as we needed different different power level and time for cooking it. Therefore, press power level, it will show 100% .  Programme it for 3 minutes on 100% power.  Now again press power level to 50 %. and set the time 2 minutes.  Now again press power level to 30 % and set time for 15 minutes. Thus, we programmed 20 minutes time in total.
100%--------------3 minutes
50% ---------------2 minutes
30%---------------15 minutes
7. Now after setting power level and time press the clock icon to set the desired time for delay cooking. I wash the dal and rice at 9 AM. At least 2- 3 hours should be soaking time.  So I set the time for delayed cooking 11.30 AM. Then to confirm the time press the go/start icon.
8.  After setting the time for delay cooking, microwave oven clock will show the present time as usual.
9.  At exact 11.30 cooking is started.  After 20 minutes, khichdi is ready.
10. Now let it be in the microwave for 2 minutes as standing time.
11.  Now take out the pot from the microwave and stir.  Again cover it with lid till time of eating.
Khichdi in Simple Microwave
1. Wash dal and rice and soak it for 3 hours.
2.  Put these soaked dal and rice in a ceramic pot with salt, turmeric powder, ginger, asafetida, cumin seeds and 1 tsp of oil.
3.  Place the pot in microwave and cook it for 3 minutes on 100 % power.
4.  Now again cook it on 2 minutes on 50 % power.
5.  After that cook it on 30 % power for 15 minutes.  
6.  Now let it be for 2 minutes inside after cooking for standing time.
7.  Now take out the pot and stir and cover the lid till the time of eating.
8.  Healthy khichdi is ready to serve. It tastes great with ghee, pickle, curd, papad, and raita etc.
Tip
No need to stir in between in both ways.

Tindora (Ivy gourd)  is also known as kundru, tendli etc.  Whenever we feel like eating stuffed tinda or parwal, I make stuffed tindora, as in thailand these vegetable are not available.  Taste-wise is not too much difference as all are from gourd family.  Tindora is available here in Thai market, but in a very big size.  It takes long time to be soft.  Therefore, I make it in microwave.  It is very easy to make in it, though takes enough time. Earlier I used to make stuffed vegetable partially in microwave and partially in frying pan.  But here I have made this fully in microwave.  Here below is the whole process:
Ingredients
250 grams of Tindora
1 big grated onion
2 tbsp of grated ginger
salt to taste
1 tsp of turmeric powder
1 tbsp of coriander powder
1 tbsp of fennel seeds powder
1 tsp of mango powder/imli paste
1 tsp of red chili powder
1/2 tsp of garam masala
2 tbsp of oil
Method
1. Wash, and peel the tindoras.
2. Cut it lengthwise in the middle of it in the way that its lower part should remain as intact.  I made 3 lengthwise cut  so that masala can be filled properly.
3.  Peel the onion and ginger and grate it coarsely.  Mix all the dry spices.  Now the filling mixture is ready.

4.  Now stuff the onion masala in the tindoras with knife and handle of spoon.
5.  Put the oil in microwave safe bowl.  Now roll the tindoras in this oil. Close the lid and microwave it on 100% power for 7 minutes.
6.  Now take out the bowl and turn the tindoras to the other side.
7.   Close the lid and keep in the microwave again.
8.  Now set the microwave for 7 minutes
                          3 minutes for 100% power
                          4 minutes for 50% power
9. By this time it became soft.  Now take out the bowl and put all the remaining onion masala on the tindoras and mix it with spoon very gently.
10  Microwave it with 2 minutes with lid.
11.  Now turn it again with very light hand so that all the masala stick to the the vegetable.
12.  Again microwave it for 2 minutes without lid.
13.  Delicious stuffed tindoras are ready to enjoy. It took 18 minutes in total time. sometimes it takes little more time.  Time may vary.
