Find Good and Natural Recipes

Momos/dimsum/wanton is a very healthy snack.  It is made in Nepal, Bhutan and china etc. It has become street food in India too. It is eaten with very spicy chutney.  Here below is its full recipe
Ingredients
2 cups of all purpose flour/maida
1/2 tsp of salt
2/3 cup of water
4 cups of finely chopped cabbage
1.5 cups of grated pumpkin or carrot
1 cup finely chopped green onion leaves
1 finely chopped onion
1 tsp of grated ginger
1/2 cup of finely chopped cilantro
1/2 cup of grated cottage cheese or tofu (optional)
1 tsp of sugar salt to taste
1 tsp of light soy sauce
1 tsp of dark soy sauce
1 tsp of black pepper powder
2 tbsp of oil
Method
1. Take maida/APFlour and salt in a  big bowl.  Make a soft dough with 2/3 cup of water.  This much water is sufficient for 2 cups of maida. Smooth it with little bit or generously greasy hands.  Now keep it rest for 10 minutes covering with wet cloth.  On wet cloth keep the plate.
2.  Finely chop the cabbage in vegetable chopper.  Grate the pumpkin or carrot. Finely chop the spring onion leaves with knife. Spring onion white bulb and onion can be chopped in chopper too.
3.  Take the chopped cabbage, ginger and pumpkin/carrot in a cloth and squeeze out all the water from it.
4.  Take 2 tbsp of oil in a frying pan. Add onion and cook it for few minutes till translucent. After that add cabbage,paneer or tofu and pumpkin or carrot. Next add salt, sugar, black pepper powder and both the soy sauces and stir well. Flame should be high. Dry the water while stirring. Remove from heat.  Now add green onion leaves and cilantro and mix. Stuffing is ready.
5. Divide the dough into 25 pieces.  If making bite size, then divide it into 45 to 50 pieces.  Now make the balls out of it by rounding between both the palms.
6.  Now roll one ball and stuff the 1.5 spoons of vegetables while making its pleates. Make it any shape. Roll and stuff all the dough balls like wise. 
7.  Next boil the water in rice cooker or any other pot.  Put the momos/ dimsum on a greased steam basket with little distance.  Keep it on the boiling water in rice cooker and close the lid.
8.  Steam it for 6-7 minutes till transparent.
9.  Momos/dimsum are ready to serve. These are served very hot.
Tips
1. Vegetables can be used of one's choice.  Generally cabbage and carrot are used.  But here I have used pumpkin. 
2. It can be steamed in any pot  e.g pressure cooker, rice cooker steamer etc.  Here I have steamed in steam basket on rice cooker.  Can be kept on momos plate on a rack.  Momos plate is a plate with holes.
3.  If making it in advance, Keep it in a tray and cover it with slightly wet cloth then wrap the tray with cling film. Then cover with any other big tray. Keep it in the refrigerator.  While serving just steam again for 2-3 minutes.  Do not steam for a long, otherwise it will be dry and will be difficult in eating.

Sweet potatoes dahi chaat is a  falahari chaat which can be consumed during vrats/fasts.  It is very delicious, simple and easy to make.  Few days back, I made it.  Here below is its details:
Ingredients
1 cup of boiled and diced sweet potato/shakarkandi
3/4 cup of curd
 black salt to taste
1/4 tsp of roasted cumin powder
1/4 tsp of garam masala
pinch of red chili powder
1 tsp of sugar
4 tbsp of imli/tamarind chutney
3 tbsp of black boiled channe/chole (optional)
1 tsp of besan namkeen sev (optional)
1 tsp of finely chopped cilantro
Method
1. First of all, wash, boil, peel and cut into cubes the sweet potatoes or roughly break into pieces.
2.  Next take the diced shakarkandi in a plate. Put some black channe on it.
3.  After that prepare the curd for the chaat. Filter curd through a sieve.Now add sugar, red chili, black salt, roasted cumin powder, black pepper and garam masla and mix well.
4. Pour this curd on the shakarkandi and channe plate.
5. Next put some tamarind chutney.
6. Finely, garnish it with cilantro and besan sev.
7.  Chatpati shakarkandi dahi chaat is ready to serve.
Tip
Black channe and besan sav is optional.  Without it, this chaat can be eaten in vrats and fasts.

Tori/turai/gilki/galki/luffa is considered very good for stomach. Many people, especially children do not like to eat it. But stuffed tori sabzi is an exception.  It is very tasty and healthy too.  Today I have made this sabzi with smooth torai.  Here is the whole process how I made it:
Ingredients
250 grams of tori/turai/gilki
2 inch piece of grated ginger
1 big onion
salt to taste
1 tsp of turmeric powder
1/2 tsp of red chili powder
1 tbsp of coriander powder
1 tbsp of fennel/soanf powder
1 tsp of mango powder
1/2 tsp of garam masala powder
2 tbsp of oil
Method
1. Wash and peel the turais/toris.  
2. Cut one tori into two to three pieces. Cut all the toris into pieces like wise.  Now cut each piece in lengthwise in the middle of it, in  the way that its lower part should remain as intact.
3.  Peel the ginger and onion and pulse it few times in small zar of mixer or in vegetable chopper as a coarse paste.
4.  Now add all the spices and 1 tsp of oil and mix.
5.  Next stuff all the toris pieces with this onion masala mixture.
6.  Heat the oil in a frying pan. Place all the stuffed pieces into it.  Cover the lid and cook it on medium flame turning it frequently with the help of tong till little soft.
7.  Now take out all the toris into a plate.
8.  Now cook the remaining onion masala mixture in the same pan. After that add the tori pieces which we have taken out in a plate to the pan again and coat it with this cooked masala with a spatula very gently.
8. Cook it two minutes and remove from heat.
9. Transfer it into serving bowl. Stuffed toris are ready to serve.

Podina pyaji chutney were used to make in coarse texture with kundi sota in our childhood. I tried it to make it in the same texture in vegetable chopper.  It goes well with dal in main course.  Here below is how we can make it:
Ingredients:
handful of fresh mint leaves/podina
two tsp of grated jaggery
1 tsp of tamarind paste
1 medium sized onion
salt to taste
1 tsp of coriander powder
1/4 sp of garam masala
1 tsp of grated ginger
1 green chili
Method
1.  Wash the mint leaves, peel and roughly chop the onion, ginger, and chop green chili.
2,  Take mint leaves, onion, ginger, green chili and jaggery, tamarind paste in the container of vegetable chopper and blend or chop in it till coarse texture.
3.  Next add salt, coriander powder, and garam masala and mix it again for few second.
4. Podina payaji chutney is ready and transfer it into a serving bowl.
Tip
 Instead of jaggery and tamarind, imli chutney can be used.

Rolled barley poha is a healthy snack.  Here below is, how we can prepare it:
Ingredients
1 cup of rolled barley
1/2 cup of water
salt to taste
1 tsp of sugar
1/2 tsp of turmeric powder
1 tbsp of lime juice
1 tsp of mustard seeds
1 finely chopped green chili
1 tsp of grated ginger
few curry leaves
1/2 cup of frozen mix vegetables
handful of small cubes of cottage cheese (optional)
1 tbsp of finely chopped cilantro
oil
Method
1. First soak 1 cup of rolled barley with 1/2 cup of water in a ceramic bowl. Keep it aside for 10 minutes.
2.  Now add salt, turmeric, sugar, ginger, green chili, lime juice, curry leaves, frozen fresh vegetables  and mix thoroughly with hand.
3. Now heat oil in a ladle on gas stove.  Add asafoetida and mustard seeds and let it crackle till it stops itself. Now put off the flame and add this to the rolled barley mixture and mix well.
4. Now keep in the microwave and cook it for 3 minutes.
5.  After that take out from microwave and stir. At this stage, sprinkle 1 tbsp of water on it and mix.
6.  Again microwave it for 2 minutes.  Now add cilantro and cottage cheese (optional) and stir well and close with lid..
8.  Healthy rolled barley poha is ready to serve.
