Prawn Corn Egg Chowder

Chowder is a seafood or vegetable stew, often served with milk or cream and mostly eaten with saltine crackers. Today's chowder is not the thick one but I tried a thin chowder though used all the basic ingredient to make it.The chowder comes out very delicious and the boiled egg add the extra kick.I am sure you all will love it.

Prawn Corn Egg Chowder

Ingredients
  • 5 to 6 prawn shelled and cleaned
  • 2 egg boiled
  • 1/2 cup small cubes baby corn blanched
  • 1 potato boiled and mashed
  • 1 onion sliced
  • 1/2 tsp paprika powder
  • 1/2 cup milk
  • 2 cup chicken stock
  • 1 tbsp butter / butter substitute
  • 1 tsp chopped parsley
  • to taste salt and pepper
Cooking Directions
  1. Melt butter in a pan. Add onion fry a little then add prawn fry a little. Then add the mashed potato, paprika powder, salt. Mix well. Add stock. Mix well. Add baby corns cubes. Let it cook for 5 minutes. Now add milk. Mix well. Cook for another 3 minutes. Now put off the flame. Season it with pepper and garnish with parsley and boiled eggs. Serve hot with crusty bread.

Ingredients
  • 1 big beetroot peeled and boiled
  • 1 tsp grated ginger
  • 5 to 6 garlic c love
  • 6 to 8 prawn
  • 2 tbsp fresh coriander
  • 1 1/2 cup coconut milk
  • 1 tsp grated coconut (optional)
  • 1 tbsp butter
  • to taste salt and pepper
Cooking Directions
  1. Take beetroot, ginger, garlic, and coriander in a blender. Make a fine paste. Now add the coconut milk with salt and pepper. Now blend well. Heat butter in a pan fry the prawn a little sprinkling little salt and pepper and grated coconut if using I use as like the crunchy butter fried coconut while having the smooth soup. Fry a little then add the beetroot coconut mixture. Mix well and put off the flame. Serve hot or at room temperature with a dash of lemon juice and crispy bread toast. This carrot potato soup is very delicious and healthy.In this soup I use coconut oil.The health benefits of coconut oil include hair care, skin care, stress relief, cholesterol level maintenance, weight loss, boosted immune system, proper digestion and regulated metabolism. It also provides relief from kidney problems, heart diseases, high blood pressure, diabetes, HIV, and cancer, while helping to improve dental quality and bone strength. These benefits of oil can be attributed to the presence of lauric acid, capric acid and caprylic acid, and their respective properties, such as antimicrobial, antioxidant, anti-fungal, antibacterial and soothing qualities.In this soup I also use Kokum/Garcinia indica fruit petal that's too is very healthy.   • 1 potatoes peeled and cubed

  1. Soak kokum in 1/2 cup of water for 10 to 15 minutes.
  2. Heat coconut oil. Add mustard seed and crushed fennel. Now add the sliced coconut and curry leaves with sliced onion , garlic and ginger. Fry a little then add cubed potato and carrot chunks. Mix well. Then add 3 cups of vegetable stock with salt and pepper as it comes to boil then add the kokum/Garcinia indica fruit petal with that water in which it was soaked.Cook in high flame for 10 to 15 minutes. Till the potatoes and carrots are well cooked.Serve hot with bread rolls.

  • 1 carrot peeled and chunks
  • 1 small beet root cube

  • 1 bunch freshly chopped coriander
  • 1 tbsp butter
  • 1/2 tsp crushed black pepper
  • 1/4 tsp fennel and carom seed little crushed
  • to taste salt
  • 6 cup chicken stock/ vegetable stock/ water

Cooking Directions
  1. Heat butter in a pan. Add garlic fry then add crushed black pepper, fennel and carom. Now add onion, ginger, tomatoes and chicken. Mix well. Add vegetables, chicken stock, chopped coriander and salt. Cover and cook in medium flame till the chicken is well cooked. You can add more vegetables like green peas and turnips if you want to make it more veggie loaded and yummy. Once the drumsticks are well cooked put off the flame. Serve hot with bread rolls.

While it is boiling whisk two egg with salt and pepper. Mix well. Let it come to boil and then put off the flame and have it with any bread roll. I love to have this egg n vegetable soup with my garlic bread roll.

Chicken clear soup is one of my favorite. This chicken clear soup is very refreshing during the summer as I use lime juice in it.Chicken soup has long been touted as a form of folk medicine to treat symptoms of the common cold and related conditions.
The most widely cited of these studies, published in the medical journal Chest in 2000, is by Dr. Stephen Rennard of the University of Nebraska Medical Center in Omaha. He conducted laboratory tests to determine why chicken soup might help colds, beginning with his wife’s homemade recipe, handed down by her Lithuanian grandmother. Using blood samples from volunteers, he showed that the soup inhibited the movement of neutrophils, the most common type of white blood cell that defends against infection. Dr. Rennard theorizes that by inhibiting the migration of these infection-fighting cells in the body, chicken soup essentially helps reduce upper respiratory cold symptoms.
Another study by Mount Sinai researchers in Miami also suggests that chicken soup has more than just a placebo effect. They looked at how chicken soup affected air flow and mucus in the noses of 15 volunteers who drank cold water, hot water or chicken soup. In general, the hot fluids helped increase the movement of nasal mucus, but chicken soup did a better job than the hot water, according to the 1978 report, also published in Chest. Chicken soup also improves the function of protective cilia, the tiny hairlike projections in the nose that prevent contagions from entering the body, according to a 1998 Coping With Allergies and Asthma report.
 None of the research is conclusive, and it’s not known whether the changes measured in the laboratory really have a meaningful effect on people with cold symptoms. However, at the very least, chicken soup with vegetables contains lots of healthy nutrients, increases hydration and tastes good, too.

  • 1 cup boneless chicken cubes
  • 1 onion sliced
  • 1/2 tsp ginger chopped
  • 6 garlic clove
  • 1tsp butter/ diet butter

  • 5 cup water
  • 1 tbsp lime juice
  • to taste salt and pepper
Cooking Directions
  1. Take boneless chicken, ginger, 4 garlic cloves, onion and 5 cups of water in pressure cooker with little salt and pepper and cook for 4 to 5 whistle or until the chicken is well boiled.
  2. Strain the chicken stock and keep it aside.
  3. Heat butter in a pan and add finely chopped the rest garlic cloves. Fry till brown then add the chicken stock simmer for 8 to 10 minutes. Add coconut milk, lime juice and freshly ground pepper. Mix well. Put off the flame and serve with garlic cheese bread or any bread of your choice. Enjoy a delicious healthy meal in minutes.

Ingredients
  • 1 cup black gram dal skin less/ dhuli urad dal
  •  1 1/2 cup water
  • 2tbsp butter
  • 1/2 tsp whole cumin
  • 1/4 tsp fennel seed
  • 8 to 10 whole black pepper
  • 1/2 tsp grated ginger
  • 2 tbsp butter
  • 1/2 tsp sugar (optional)
  • to taste salt and pepper
Cooking Directions
  1. Wash the dal well. Now in a pressure cooker or a heavy bottom pan with water cook the dal till it is well cooked mash it well. Heat 1 tbsp of butter in a pan then add cumin , fennel seed, whole black pepper. Fry a little till you get the smell of butter fried cumin and fennel then add grated ginger and black pepper. Stir a little and then add the cooked dal. If needed add little more warm water according to your choice of consistency. I think bit thick consistency go well for this soup. Now let it come to boil while keep stirring then add sugar (if using) , salt and pepper powder.Mix well. Put off the flame and then add another table spoon of butter. Serve hot with bread or steamed rice with dash of little lime juice. I am sure you will love this yummy creamy soup.

  • 2 cups white kidney beans
  • 2 big tomatoes chopped

  • 1 tbsp fresh cream / Greek yogurt

  1. Soak beans in water overnight. Now in a heavy bottom pan heat oil add crushed garlic and onion. Stir for few second then add white beans, tomatoes, rosemary, thyme, salt and pepper and vegetable stock. Cover and in a slow flame cook for 2 hours or until the beans are soft. To make it more colorful you can add finely chopped spinach and cook for another 20 minutes. Now add grated cheese if using and fresh cream or Greek yogurt which one you prefer to use and lemon juice. Garnish with cilantro or parsley and serve hot. Prawn Onion Tomato Soup

Ingredients
  • 2 fresh tomato puree
  • 1 big onion sliced
  • 1/4 cup green peas
  • 10 to 12 small prawn
  • 1 tsp butter
  • 1 tbsp cheese spread
  • 1 tsp dry basil or fresh
  • 2 cups chicken stock/ vegetable stock/ water
  • 1 tsp cornflour (optional)
  • 1 tsp salt and pepper to taste
Cooking Directions
  1. Take pan and the add butter and onion saute till transparent. Then add prawns stir a little. Then add tomato puree and green peas. Mix well. Then add chicken stock or whatever you are using. Let it come to boil. If you want the consistency bit thick then add cornflour with water and add to the soup. Cook for another 2 to 3 minutes. Then add cheese spread, fresh or dried basil. Happy Halloween With Pumpkin Mushroom Soup

Ingredients
  • 1 kg Pumpkin
  • 1 head garlic
  • 1 tsp rosemary powder
  • 1 tsp olive oil
  • 10 button mushroom cut into halves
  • 1 tsp butter
  • 1 tomato garlic sauce
  • 1 small onion chopped
  • 3 to 4 cups chicken stock
  • 1/2 tsp dry roasted coarsely grind cumin powder
  • 2 cube grated cheese
  • 1/2 cup fresh cream
  • 1 tsp olive oil
  • 1 tsp lemon juice (optional)
  • to taste salt and pepper
Cooking Directions
  1. Take the flesh of pumpkin rub it with rosemary and mashed garlic drizzle olive oil and roast in oven till bit tender. Cool down and then make a smooth puree. Heat butter in pan and place the mushroom cook over high heat until the moisture is cooked off. Add the tomato garlic sauce toss and keep aside. Take another sauce pan add olive oil then chopped onion. fry till translucent. Add the pumpkin puree. Stir for 2 minutes.
  2. Add chicken stock. Let it come to boil. Then simmer it for 10 to 12 minutes in low heat. Now add grated cheese. Adjust seasoning. Mix well. Then add fresh cream, cook for another one minute. Put off the flame. Sprinkle coarsely ground cumin powder. Mix the cooked mushroom in it. Sprinkle little lemon juice if needed. You can do it another way also ladle the soup in a bowl and then place the mushroom in one side as garnish. Enjoy a happy Halloween with hot Pumpkin Mushroom yummy soup.

Zero oil vegetable soup is a very delicious and healthy soup. Good for the weight watcher and heart healthy too. You can  take and mix any vegetable of your choice. I just suggest  few which I like.One caution while choosing the vegetables if you are pregnant or planning such then skip raw papaya. The Papaya latex's main constitiuants are papain and chymopapain which have teratogenic (abnormalities of physiological development) and abortifacient (Can induce an abortion) effects . It does this by increasing the chances of uterine contractions as the papain acts like prostaglandin and oxytocin which are known to put a mothers body into labour and hence an adverse effect on the babies and mothers health. I just want all my readers to stay safe healthy and happy. I am sure you all will like this completely oil free comfy soup. Enjoy.



Zero Oil Vegetable Soup

Ingredients
  • 2 carrots cubes
  • 4 to 6 okra cut into halves
  • 4 to 6 big chunks of bottle gourd with or without skin
  • 4 to 6 big chunks of skinless raw papaya
  • 2 to 3 baby potatoes optional
  • 6 to 7 french beans head and tail off and then cut into big pieces
  • 1 big tomato cut into chunks
  • 1 big onion cut into chunks
  • 3 to 4 garlic clove
  • 1 inch fresh ginger chopped
  • hand full of chopped fresh coriander and mint leaves
  • 1/2 tsp whole cumin
  • 1/2 tsp whole coriander
  • 1 to 2 tsp lemon juice
  • to taste salt and pepper
Cooking Directions
  1. Boil water in a saucepan and then add all the vegetables, onion, ginger, garlic and chopped coriander and mint leaves. Cover with a lid and then cook till done. Now heat a pan and dry roast the cumin and coriander seed. Add the boiled vegetables in it. Add salt and pepper and let it boil for another 2 minutes and then end up with dash of lemon juice.

Just these weekend I was down with flu. So I thought to make a whole comfy meal which will be delicious, quick to make and healthy too. In this recipe I use different types of proteins but if you want you can skip any of them. It's a delicious filler. Serve hot and relish , I am sure you will love it.



Yummy Pasta Soup

Ingredients
  • 1 pack rotini pasta
  • 1 cup bottom mushroom
  • 1/ 2 cup shallow fried boneless fish shredded
  • 1/2 cup boiled chicken shredded
  • 2 to 3 small boiled potato cut into halves (optional)
  • 1 tbsp tomato basil pasta sauce
  • 1/2 tbsp chopped garlic
  • 1 tsp olive oil
  • 3 cup chicken stock
  • to taste salt and pepper
  • 1 tsp cheese grated (optional)
  • hand full chopped parsley
Cooking Directions
  1. Heat oil in a pan. Then add garlic. Fry till you get the fried smell. Now add the button mushroom, pasta. Now add the chicken stock add pasta sauce, salt pepper and shredded boiled chicken and potatoes. Cook till the pasta is cooked and the mushroom is tender. Now add the shallow fried shredded fish. Mix well. Add cheese if using. Mix well. Now sprinkle parsley. Yummy pasta soup is ready. It is a full meal so relish hot and have fun.

Today I am sharing with you a colorful soup Russian Borscht recipe.This recipe is specially to celebrate the vibrant colorful charm of womanhood. I am sure you all will love it as it is healthy,loaded with vegetables and yet simple to make and it taste awesome.


Russian Borscht

Ingredients
  • 1 cup chopped beet
  • 1 cup chopped cabbage
  • 1 cup chopped onion
  • 3 cup chicken stock
  • 1 cup chopped tomatoes
  • 1 bay leaves
  • 1 tsp chopped dill weed
  • 1 tsp butter (optional)
  • 1 tbsp lemon juice
  • 1 tsp salt and pepper
Cooking Directions
  1. In a pan take chopped beet, carrots, onion and chicken stock, bay leaves. Bring to boil. Simmer for 20 minutes. Now add chopped cabbage and tomatoes. Cover and cook in slow flame for another 15 to 20 minutes until the cabbage is tender. Stir in salt pepper, butter (if using) and dill weed. Top each serving with sour cream.

You can enjoy it anytime but I love it for my cozy comfy dinner.Broccoli as we all know is called the miracle food which is nutrient-rich vegetable can enhance your diet and benefit your health. In this soup I try to infuse a little different flavor which give this soup it's exotic touch. I hope the blend of  flavor will surprise you too.Have it and love it...!



Broccoli N Cauliflower Soup

Ingredients
  • 4 to 6 florets of cauliflower
  • 4 to 6 florets of broccoli
  • 5 to 6 cloves of garlic chopped
  • 2 whole cardamom slightly crushed
  • 10 to 12 whole black pepper
  • 1/2 tsp olive oil
  • 1 tsp butter
  • 1/2 tsp sugar ( optional)
  • 2 cup water/ vegetable stock
  • 1 tbsp lemon juice
  • to taste salt and pepper
Cooking Directions

  1. Heat oil in sauce pan. Now add whole black pepper and crushed cardamom and chopped garlic. As who get the fried favor of garlic add the florets of cauliflower. Add little salt and toss well. Now add warm stock or water whatever using. Let it boil for 5 to 6 minutes. When the cauliflower is half cooked, add broccoli and let it cook for another 5 to 6 minutes. Now add butter, sugar if using and adjust seasoning. Finish it off with lemon juice. Serve pipping hot. Enjoy with your favorite bread rolls.

Cream of pea soup is a very yummy comfy soup during winter months.I was watching a cookery show where Chef Sanjeev Kapoor one of the most well known celebrity chef from India was showing this soup.It looks scrumptious so I take no time to make it.I improvised the recipe by adding fresh cream and dried basil as the fresh is not available to me  but truly speaking it taste awesome. Fresh green peas is also good for health as it's low in fat and full of protein, fiber and micronutrients. Help in anti-aging, strengthen immune system and  full of energy. So for me cream of pea is one I love any time and I am sure if you try once it will soon be in your fav list. Give a try and let me know.



Cream Of Pea Soup

Ingredients
  • 1 cup fresh green peas
  • 1 onion sliced
  • 1tsp basil ( fresh or dried)
  • 1 cup milk
  • 1/2 cup vegetable stock
  • 2tbsp fresh cream
  • 1tsp olive oil/ butter
  • 1/4 tsp sugar (optional)
  • to taste salt and pepper
Cooking Directions
  1. Heat olive oil or butter whatever you are using. Now add chopped sliced onion and fry until translucent. Add fresh green peas . Stir for a minute. Add salt pepper and basil and vegetable stock. Let it come to boil. Put off the flame. Take it in a bowl and keep aside for 10 to 15 minutes until it comes to room temperature. Now put the whole thing into your blender and make a fine smooth paste. Put a sauce pan on heat then pour the green peas mixture. Add a cup of milk and let it boil for 2 minutes . You can add more milk if you want a little less thick consistency. Adjust seasoning. Now add fresh cream mix and put off the flame. Serve hot with your favorite bread croutons.

Delicious comfy hot soup in a lazy winter night has no substitutes. This hot and sour onion soup is not like the regular Chinese soup. I mix and match few flavors which  is the specialty of this hot and sour onion soup.. Instead of  vinegar I use lemon juice to make it sour and to make it hot I use pepper and chilly garlic sauce. If you want to keep the heat low you can skip the chilly garlic sauce but I suggest that use it once may be you can lower the quantity according to your taste.With all this the main  twist of the recipe is the roasted spice used.  I am sure if you are bored having the same hot and sour soup then it can be a change. Hot And Sour Onion Soup

Ingredients
  • 2 finely chopped onion
  • 1/2 cup finely chopped carrots
  • 1/2 cup very finely shredded cabbage
  • 1/4 cup finely chopped spring onion
  • 5 cups chicken stock
  • 1 chicken seasoning cube
  • 1tbsp tomato sauce
  • 1tsp chilly garlic sauce ( optional)
  • 1/2 tsp roasted cumin powder
  • 1 tsp soy sauce
  • 1 1/2 tbsp corn starch
  • 1 tbsp vegetable oil/ olive oil/ canola oil
  • 1 to 2 tbsp lemon juice
  • salt and pepper to taste
Cooking Directions
  1. Take a pan and heat oil in it then add the chopped onions. Slightly fry them. Now add other vegetables. Stir for a minutes . Now add warm stock . When it come to boil add the chicken seasoning cube, tomato sauce, chilly garlic sauce if using, soy sauce. Let it boil for a minute. Now add little soup to the cornstarch mix well then return all to the pan. Adjust seasoning. Now add lemon juice and roasted cumin powder. Mix well and put off the flame. Serve hot.

A very gorgeous, healthy and very tasty warm chicken soup is absolutely perfect for the fall. Fall chicken soup is easy, quick and one which very satisfying. I have not used fresh mint and cilantro but cooked it and this add a very unique flavor to this soup.Roasted almond gives this soup a crunchy nutty taste which I am sure you  all will love. Fall Chicken Soup

Ingredients
  • 1 cup shredded chicken
  • 1 cup beet chopped
  • 1/2 cup tomato paste
  • 1 onion finely chopped
  • 2 tsp garlic finely chopped
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 cup chicken stock
  • 1 tbsp olive oil
  • 2 tbsp cilantro finely chopped
  • 2 tbsp mint leaves finely chopped
  • salt and pepper to taste
  • 1 tsp fresh cream optional
  • 3 tbsp toasted almond flakes
Cooking Directions
  1. Warm olive oil in a large saucepan over medium heat.
  2. Stir in onion and garlic till soft but not brown now add the beet and stir for a minute. Add shredded chicken stir for one minute then add tomato paste and chopped cilantro and mint leaves.  Mix well.Then add the chicken stock. Stir in and then season with salt and pepper. Bring to boil and cover and simmer until the beets and chicken are tender. Add diced red and green bell pepper cook for another 2 to 3 minutes. Put off the flame and add a spoon full cream. Mix well. Ladle into bowls. Garnish with toasted almond flakes.
