Chicken In Chinese Style

Chinese style chicken is the most yummy  and easy to cook chicken. I try to make it more healthy with carrot and capsicum add it not only make the platter healthy but colorful too. Loaded with healthy ingredients this one is hot and spicy.You can reduce the heat of dish according to your taste. I am sure you all will love this simple yet delicious and colorful dish. Chicken In Chinese Style

Ingredients
  • 500 grm chicken bite size with or without bone ( boiled)
  • 2 carrots peeled and cubed( slightly blanched)
  • 1 green bell pepper cubed
  • 1 tbsp garlic finely chopped
  • 1/2 tbsp ginger finely chopped
  • 1 tbsp soy sauce
  • 1 tbsp chilly garlic sauce
  • 3 to 4 chopped green chilly
  • 1/2 tsp crushed fresh black pepper
  • 1/4 cup chopped coriander leaves
  • 1/2 cup chopped spring onion
  • 1/4 tsp MSG (optional)
  • 1 tbsp corn flour
  • 1/4 tsp sugar
  • 3 vegetable oil
  • 1 tsp rice wine vinegar
  •  salt to taste
Chicken In Chinese Style

Cooking Direction :
Marinate the boiled chicken in 1/2 tsp of garlic paste and salt for 15 minutes . Heat 1 tbsp of oil and fry the chicken till little golden. Fry the blanched carrot a little too. Heat 2 tablespoon of oil in a pan and add the chopped ginger ,garlic, chilly and fry till the color is slightly changed and you get the fried aroma of garlic and ginger. Now add the chopped spring onion sauté and then add capsicum fry for a min then add chopped coriander. Reduce heat and add soy sauce, chicken stock, sugar, salt, pepper, chilly garlic sauce and MSG( if using) and bring it to boil. Add the fried chicken and carrot cook for 2 to 3 minutes.Now add the corn flour mixed water and cook for 2-3 minutes.Put off the flame and then add vinegar. Mix well.Garnish with chopped spring onion and serve hot with fried rice. Enjoy Chicken in Chinese style.

Chicken Soup

Ingredients
  • 4 chicken drumstick
  • 1 carrot peeled and chunks
  • 1 small beet root cube
  • 1 big onion slice
  • 6 to 7 garlic clove
  • 1 inch ginger chopped
  • 2 tomatoes chopped
  • 1 bunch freshly chopped coriander
  • 1 tbsp butter
  • 1/2 tsp crushed black pepper
  • 1/4 tsp fennel and carom seed little crushed
  • to taste salt
  • 6 cup chicken stock/ vegetable stock/ water

Cooking Directions
  1. Heat butter in a pan. Add garlic fry then add crushed black pepper, fennel and carom. Now add onion, ginger, tomatoes and chicken. Mix well. Add vegetables, chicken stock, chopped coriander and salt. Cover and cook in medium flame till the chicken is well cooked. You can add more vegetables like green peas and turnips if you want to make it more veggie loaded and yummy. Once the drumsticks are well cooked put off the flame. Serve hot with bread rolls.

Garlic Chicken With Bell Pepper

A very delicious dish worth try whenever you want to try something hot and fiery. Garlic Chicken With Bell Pepper

Ingredients
  • 250 grm boneless chicken cubes
  • 1 cup red green n yellow bell pepper cubes
  • 1/2 onion flakes (optional)
  • 1 tbsp garlic paste
  • 2 tbsp tomato paste
  • 1 tsp dry roasted chilly flakes (optional)
  • 1 tbsp sesame oil 
  • 4 tbsp vegetable oil
  • 1 egg
  • 1/2 tsp + 1 tsp cornstarch
  • 1 tsp lime juice
  • 1 tsp soy sauce
  • 1 cup chicken stock
  • to taste salt and pepper

Cooking Directions
  1. Mix 1/2 tsp cornstarch with egg, little salt and pepper whisk well. Marinate the chicken cube with the mixture. Heat oil. Now fry the chicken cubes and set aside. Heat 1 tbsp sesame oil add garlic paste. Stir and then add tomato paste, onion and bell pepper. Stir well. Then add fried chicken . Mix well. Add 1 tsp cornstarch, soy sauce with 1 cup stock. Mix well. Let it come to boil then as the sauce thickens adjust seasoning put off the flame. Add chilly flakes and and lime juice. Mix well. Spread garlic chicken with bell pepper in a bed of vegetable fried noodles and enjoy and delicious dinner.

Chicken Clear Soup

Chicken clear soup is one of my favorite. This chicken clear soup is very refreshing during the summer as I use lime juice in it.Chicken soup has long been touted as a form of folk medicine to treat symptoms of the common cold and related conditions.
The most widely cited of these studies, published in the medical journal Chest in 2000, is by Dr. Stephen Rennard of the University of Nebraska Medical Center in Omaha. He conducted laboratory tests to determine why chicken soup might help colds, beginning with his wife’s homemade recipe, handed down by her Lithuanian grandmother. Using blood samples from volunteers, he showed that the soup inhibited the movement of neutrophils, the most common type of white blood cell that defends against infection. Dr. Rennard theorizes that by inhibiting the migration of these infection-fighting cells in the body, chicken soup essentially helps reduce upper respiratory cold symptoms.
Another study by Mount Sinai researchers in Miami also suggests that chicken soup has more than just a placebo effect. They looked at how chicken soup affected air flow and mucus in the noses of 15 volunteers who drank cold water, hot water or chicken soup. In general, the hot fluids helped increase the movement of nasal mucus, but chicken soup did a better job than the hot water, according to the 1978 report, also published in Chest. Chicken soup also improves the function of protective cilia, the tiny hairlike projections in the nose that prevent contagions from entering the body, according to a 1998 Coping With Allergies and Asthma report.
 None of the research is conclusive, and it’s not known whether the changes measured in the laboratory really have a meaningful effect on people with cold symptoms. However, at the very least, chicken soup with vegetables contains lots of healthy nutrients, increases hydration and tastes good, too.

Ingredients
  • 1 cup boneless chicken cubes
  • 1 onion sliced
  • 1/2 tsp ginger chopped
  • 6 garlic clove
  • 1tsp butter/ diet butter
  • 1 tbsp coconut milk
  • 5 cup water
  • 1 tbsp lime juice
  • to taste salt and pepper
Cooking Directions
  1. Take boneless chicken, ginger, 4 garlic cloves, onion and 5 cups of water in pressure cooker with little salt and pepper and cook for 4 to 5 whistle or until the chicken is well boiled.
  2. Strain the chicken stock and keep it aside.
  3. Heat butter in a pan and add finely chopped the rest garlic cloves. Fry till brown then add the chicken stock simmer for 8 to 10 minutes. Add coconut milk, lime juice and freshly ground pepper. Mix well. Put off the flame and serve with garlic cheese bread or any bread of your choice. Enjoy a delicious healthy meal in minutes.
