Last weekend I went to vegetable market to buy fresh fruits and vegetables.  There I saw some small green pumpkins. It were so fresh, I couldn't help myself from buying it. Next day when I cut it, I saw its seeds were very raw.  Usually I roast pumpkin seeds in microwave. But seeing such fresh seeds, I thought of making its juice with its guts. Here below is how I made it:
Ingredients
 1 cup of pumpkin guts
1 tbsp grated ginger
1 tsp sugar (optional)
2 tbsp finely chopped mint leaves
1 tbsp of lime juice/fresh half lemon
Black salt to taste
Fresh crushed black pepper
Method
1 Cut the pumpkin and scoop out its guts/seedy pulp with spoon.
2. Put ginger and pumpkin guts in a blender and blend it with 1 glass of water for few minutes.
3. Strain it through strainer.
4. Now put again in blender the remaining residue after filtering the juice with one more glass of water and blend it again for few minutes. Again filter it through a sieve. Next add hand torn fresh mint leaves, sugar, lemon juice, black salt and black pepper powder in the juice and mix with spoon.
5. Pour the juice in glasses and serve.

Peels contain many valuable nutrients.  This sabzi is made out of peels of fresh pea pods, which we generally throw after shelling the pea pods.  Here below is its recipe:
Ingredients
1 cup of peeled peels of fresh pea pods
1 medium sized potato
1 tbsp of oil
1 tsp of cumin seeds
1 pinch of hing
1 big sized onion
1 tsp of grated ginger
1 finely chopped green chili
red chili powder optional
1 dry red chili
1 tsp of tomato paste or 1 chopped tomato
1/2 tsp of turmeric powder
1/2 tsp of garam masala
salt to taste
Method
To prepare peels
1. Peel the peels, you must be wondering, is it possible to peel the peel? Yes of course..peas peels has two layers. Upper layer is very soft just like any other sabzi, and the second layer is of white color, very hard to chew and transparent.  Break the corner of the peel and carefully drag the white portion  towards yourself. Discard this white.
3. After that cut the soft green peels into small pieces.
4. Wash. and peel the potato and cut into any shape.
Making Sabzi
1.  Heat the oil in a pan.  When it is hot add hing, and cumin seeds and let it crackle for a while to light brown color.  Now add dry red chili chunks, onion and ginger and saute it till translucent.
2. Next add tomato paste of finely chopped tomato whichever is available, turmeric powder, green chili and salt.  Cook till it separates from oil on very low heat.
3.  After that add diced potato and peeled peels of fresh pea pods. Mix it well with spatula. Cover the lid. Cook it till it gets tender on very low heat.
4.  Now add garam masala and mix.
5.  Matar ke chilke ki sabzi is ready to serve.  Enjoy it in main meal with roti, poori, parantha, tandoori roti and naan etc.
Enjoy Healthy Cooking!!!

Often we buy tinned fruits.  We consume fruits and throw the remaining syrup.  Here I have made sweet chilla/puda out of it.  Here below is how we can prepare it very easily:
 Ingredients
1 cup of wheat flour
3/4 cup of syrup of tinned fruit
2 tbsp of water or as required
1 tsp of fenne/soanf
2 tsp sugar (optional)
Method
1.  Take wheat flour in a bowl  and add leftover syrup of tinned fruits  slowly and make a thick but dropping consistency of batter. Add water if required.
2.  Add fennel/soanf.
3.  Heat a non stick tava/pan/crepe maker and grease it few drops of oil with tissue paper.
4. Pour 1 ladle of batter on it and spread in round shape. Pour little oil with spoon around it.

Many dishes are prepared with leftover rotis/chapatis/phulka. Today I made stale/leftover roti  chilla.  Rather I should say roti sandwitch chilla.  My mother in law used to make it with leftover rotis. After my marriage, I ate it first time in breakfast. I liked it very much.  Today while I was making, it made me nostalgic for those sweet days. Here below is its full recipe:
Ingredients
1 cup of besan
salt to taste
1/4 tsp of turmeric powder
1/4 tsp of garam masala
1/4 tsp of cumin seeds
handful of chopped cilantro
1 finely chopped green chili
1 tsp of grated ginger
3/4 cup of water
1 tsp of lemon juice
oil
Method
1.  First of all we need leftover chapatis.  I took 4 chapatis.
2.  Take the besan and all the ingredients, except oil, in a bowl and  make a batter with 3/4 cup of water pouring gradually.
3. Add 1 tsp of oil to the batter and mix.
4.  Heat a non stick pan or tava. Apply besan batter to one side of roti and place it on greased tava. Now apply besan to the other side.
5. Put 1 tsp of oil around the roti sandwaitched chilla and flip it over.
6. Cook till crisp from both sides just like chilla/puda. When it it done, remove it from tava and serve it hot with tomato ketchup or any green chutney.
Enjoy Healthy Cooking!!!

water melon seeds
1 medium size onion
3 medium size tomatoes
1 inch piece of ginger
12 pepper corn

1 tbsp of tomato ketchup (optiional)
Method
1.  After eating water melon's  red part, peel the white rind. Here I have used its seeds too.

3.  Next take the water melon rind, its seeds, onion, ginger, tomatoes, salt and pepper corn with 3 cups of water in a pressure cooker.  When it comes on full pressure and first whistle comes, lower the heat and cook it for 10 minutes. Here I am making it in Hawkins Pressure cooker of 3 liters.
4.  Now let it cool off completely.
5.  After that open the lid and take it in the blender and make it smooth.
6.  Now strain it through a strainer.
7.  Next take it again in  cooker and keep it on flame.  Add sugar, lime juice and garam  masala  and mix.  When it starts boiling, remove from heat.
8.  Lastly, add tomato ketchup and mix.
9.  Healthy water melon soup is ready to serve.

Dhokla chaat is very tasty and at the same time very easy to make.  It can be prepared with leftover dhokla too.  Though here I have made fresh besan dhokla in microwave. It tastes just like dahi bada, but it is more healthier than that.  Here below is the whole process of besan dhokla and its chaat:
Ingredients
For Dhokla
3/4 cup of besan(rice cooker cup)
1/4 cup of semolina
salt to taste
1/2 tsp of turmeric powder
1 tsp of sugar
1tsp of ginger paste
1/2 cup of sour curd
1/2 tsp of lime juice
1/2 tsp of Eno
1/4 cup of water
2 tbsp of oil
pinch of asafetida
2 slit or chopped green chilies
few curry leaves
1 tsp of mustard seeds
For chaat
1 cup of curd
1/2 tsp of roasted cumin powder
1 tsp of sugar
 black salt to taste
1/4 tsp of garam masala
1/4 tso of red chili powder
4 tbsp of tamarind chutney
2 tbsp of green chutney
handful of boiled black chole/channe
basen namkeen sev
Method
1.  Take the besan and semolina in a bowl with salt, turmeric, sugar and mix well.
2.  Add curd and water to it and make smooth batter of it. Keep it aside for rest so that semolina can absorb water.
3.  Next add ginger and mix.
4.Heat the oil in a pan for tempering.  First put slit green chilies and fry it little bit and take out. Next add mustard seeds. Let it splutter till it stops itself. Now add curry patta and pinch of heeng.  When its done, remove from fire and pour it on the dhokla batter.
5.  Grease the microwave proof bowl.  Bowl should be with lid.
6.  Now add Eno and mix it very gently/light hand.
7.  After that, pour it into the greased bowl and cover it with lid as shown in picture.
8.  Now place it in microwave .
9.  Microwave it for 5 minutes.
10.  Soft dhokla is ready.
11.  Let it cool completely and cut into desired shapes.
Preparing Curd
12. Take curd in bowl. Filter it though a sieve.  Now add black salt, red chili powder, garam masala and roasted cumin powder.
Preparing Plate
13. Place few pieces of dhokla on a plate. Cover it with spicy curd.
14. Put kale/black chole, imli/tamarind chutney and any green chutney over it.
15. It can be garnished with radish julienne , mint or cilantro and sev.
16. Chatpati dhokla chaat is ready to serve

Leftover roti  chaat is a very chatpati dish just like dahi vada chaat. Though it seems like papdi chaat but it is more closer to dahi vada. As in papdi chaat we keep little bit crunchiness of papdi but in stale roti chaat we soak completely dried roti into buttermilk till it gets soft. It is very easy and simple to make. Here below is the whole process how we can make it out of a baasi roti:
Ingredients
2 lefover dried  roti
2 cups of whisked curd
salt to taste
1 tsp of sugar
1 boiled and diced potato
handful of boiled black channa
1/4 tsp of garam masala
1/4 tsp of red chili powder
1/4 tsp of roasted cumin powder
3 tbsp of  sweet n sour tamarind chutney
Method
1.  Dry the leftover roti in freeze by keeping open in a plate till it dries completely or in sun or in microwave. Earlier it was used to dry in sun.
2.  Now crush or break it roughly.
3. Take 2 cups of whisked curd.  Add 1 tsp of sugar and salt and mix.
4.  Add the roughly broken pieces of roti into this curd. And soak it for 2-3 hrs or till completely soaked/soft.
5.  When it is completely soft, add diced potato, black channe, tamarind chutney, and all the other spices earlier written in ingredients list, to it and mix.
6.  Transfer it into a plate and can be garnished with red chili powder, black cumin powder and cilantro.
7.  Chatpati leftover roti chaat is ready to serve.
Tips
Use the tamarind chutney and other spices according to your taste.

Orange peels as I have mentioned in my precious posts related to orange peels,  have many health  benefits. Today I writing the recipe how to make its pickle.  It is very easy and quick to make.  Here below is how we can make it:
Ingredients
1 big bowl of orange peels strips
1.5 tsp of turmeric
2 tsp of red chili powder
2 tsp of salt
1 tsp of mustard powder
3 tbsp of white vinegar
4 tbsp of mustard oil
2 tbsp of soanf powder
1 tsp of garam masala
Method
1. Wash and dry ( with cloth ) the oranges.  Now peel the oranges.  Here we are using orange peels only.
2.  Cut the peels into strips.
3.  Now take the peels strips in a big bowl all along with all above mentioned ingredients.  Mix well and transfer into a dry and clean bottle.   Keep it for few days in normal temperature in summer, but under sun in winter.
4. In 2-3 days pickle will be ready. Taste improves as it matures day by day. I have kept it outside, after one month, it is still good.  Shake well occasionally.
Tip
Heat the oil till smoky. After reaching it on room temperature use in the pickle.  If we put without heating it, there comes a strong smell of oil.  So heating and cooling of oil is important.
