Find Good and Natural Recipes

In  one of my previous post, I have made the salad dressing or chutney with cabbage and ripe papaya seeds.  Its peppery taste enhances the taste of any salad.  Here I have prepared the cabbage and papaya salad.  Here below is the whole process:
Ingredients
1 cup of papaya pieces
½ cup of shredded cabbage
1 tbsp of cabbage and ripe papaya seeds chutney or salad dressing
1 tbsp of olive oil
½ tsp of lemon juice
Method
1. Wash, peel and cut ripe papaya in bite sized pieces.
2. wash and shred the cabbage .
3.  Mix salad dressing, olive oil and lemon.  See the  recipe post  for salad dressing “Cabbage & Papaya Seeds chutney"  on this blog.
4.  Add this mixture into papaya pieces and cabbage in a big bowl. Mix properly, and salad should be coated with this mixture.
5. With Peppery taste of salad dressing  papaya and cabbage salad is ready to serve. Any fruit and vegetable can be added.

Last weekend I went to vegetable market to buy fresh fruits and vegetables.  There I saw some small green pumpkins. It were so fresh, I couldn't help myself from buying it. Next day when I cut it, I saw its seeds were very raw.  Usually I roast pumpkin seeds in microwave. But seeing such fresh seeds, I thought of making its juice with its guts. Here below is how I made it: 
Ingredients
 1 cup of pumpkin guts
1 tbsp grated ginger
1 tsp sugar (optional)
2 tbsp finely chopped mint leaves
1 tbsp of lime juice/fresh half lemon
Black salt to taste
Fresh crushed black pepper
Method
1 Cut the pumpkin and scoop out its guts/seedy pulp with spoon.
2. Put ginger and pumpkin guts in a blender and blend it with 1 glass of water for few minutes.
3. Strain it through strainer.
4. Now put again in blender the remaining residue after filtering the juice with one more glass of water and blend it again for few minutes. Again filter it through a sieve. Next add hand torn fresh mint leaves, sugar, lemon juice, black salt and black pepper powder in the juice and mix with spoon. 
5. Pour the juice in glasses and serve.

Peels contain many valuable nutrients.  This sabzi is made out of peels of fresh pea pods, which we generally throw after shelling the pea pods.  Here below is its recipe:
Ingredients
1 cup of peeled peels of fresh pea pods
1 medium sized potato
1 tbsp of oil
1 tsp of cumin seeds
1 pinch of hing
1 big sized onion
1 tsp of grated ginger
1 finely chopped green chili
red chili powder optional
1 dry red chili
1 tsp of tomato paste or 1 chopped tomato
1/2 tsp of turmeric powder
1/2 tsp of garam masala
salt to taste
Method
To prepare peels
1. Peel the peels, you must be wondering, is it possible to peel the peel? Yes of course..peas peels has two layers. Upper layer is very soft just like any other sabzi, and the second layer is of white color, very hard to chew and transparent.  Break the corner of the peel and carefully drag the white portion  towards yourself. Discard this white.
3. After that cut the soft green peels into small pieces.
4. Wash. and peel the potato and cut into any shape. 
Making Sabzi
1.  Heat the oil in a pan.  When it is hot add hing, and cumin seeds and let it crackle for a while to light brown color.  Now add dry red chili chunks, onion and ginger and saute it till translucent.
2. Next add tomato paste of finely chopped tomato whichever is available, turmeric powder, green chili and salt.  Cook till it separates from oil on very low heat.
3.  After that add diced potato and peeled peels of fresh pea pods. Mix it well with spatula. Cover the lid. Cook it till it gets tender on very low heat.
4.  Now add garam masala and mix. 
5.  Matar ke chilke ki sabzi is ready to serve.  Enjoy it in main meal with roti, poori, parantha, tandoori roti and naan etc.

Often we buy tinned fruits.  We consume fruits and throw the remaining syrup.  Here I have made sweet chilla/puda out of it.  Here below is how we can prepare it very easily:
 Ingredients
1 cup of wheat flour
3/4 cup of syrup of tinned fruit
2 tbsp of water or as required
1 tsp of fenne/soanf
2 tsp sugar (optional)
Method
1.  Take wheat flour in a bowl  and add leftover syrup of tinned fruits  slowly and make a thick but dropping consistency of batter. Add water if required.
2.  Add fennel/soanf.
3.  Heat a non stick tava/pan/crepe maker and grease it few drops of oil with tissue paper.
4. Pour 1 ladle of batter on it and spread in round shape. Pour little oil with spoon around it.
5.  When it starts drying from upper side, turn it to another side. And apply oil and cook till crisp from both sides.
6.  Sweet fruity flavor chilla is ready to serve.

Many dishes are prepared with leftover rotis/chapatis/phulka. Today I made stale/leftover roti  chilla.  Rather I should say roti sandwitch chilla.  My mother in law used to make it with leftover rotis. After my marriage, I ate it first time in breakfast. I liked it very much.  Today while I was making, it made me nostalgic for those sweet days. Here below is its full recipe:
Ingredients
1 cup of besan
salt to taste
1/4 tsp of turmeric powder
1/4 tsp of garam masala
1/4 tsp of cumin seeds
handful of chopped cilantro
1 finely chopped green chili
1 tsp of grated ginger
3/4 cup of water
1 tsp of lemon juice
oil
Method
1.  First of all we need leftover chapatis.  I took 4 chapatis.
2.  Take the besan and all the ingredients, except oil, in a bowl and  make a batter with 3/4 cup of water pouring gradually.
3. Add 1 tsp of oil to the batter and mix.
4.  Heat a non stick pan or tava. Apply besan batter to one side of roti and place it on greased tava. Now apply besan to the other side. 
5. Put 1 tsp of oil around the roti sandwaitched chilla and flip it over.
6. Cook till crisp from both sides just like chilla/puda. When it it done, remove it from tava and serve it hot with tomato ketchup or any green chutney.

Water melon rind is used in making many dishes.  Today I have made its soup.  Its very healthy and nutritious. It works well for me in headache for getting some relief. Here is its recipe:
Ingredients
white rind of small half water melon 
water melon seeds
1 medium size onion
3 medium size tomatoes
1 inch piece of ginger
12 pepper corn
1 tsp of sugar
1 tbsp of lime juice
salt to taste
1/2 tsp of garam-masala
1 tbsp of tomato ketchup (optiional)
Method
1.  After eating water melon's  red part, peel the white rind. Here I have used its seeds too.
2.  Now chop roughly onion, ginger, and tomatoes. though I have written medium size tomatoes, but I have used here very tiny tomatoes.
3.  Next take the water melon rind, its seeds, onion, ginger, tomatoes, salt and pepper corn with 3 cups of water in a pressure cooker.  When it comes on full pressure and first whistle comes, lower the heat and cook it for 10 minutes. Here I am making it in Hawkins Pressure cooker of 3 liters.
4.  Now let it cool off completely.
5.  After that open the lid and take it in the blender and make it smooth.
6.  Now strain it through a strainer.
7.  Next take it again in  cooker and keep it on flame.  Add sugar, lime juice and garam  masala  and mix.  When it starts boiling, remove from heat.
8.  Lastly, add tomato ketchup and mix.
9.  Healthy water melon soup is ready to serve.
