Find Good and Natural Recipes

Aaloo pakodi sabzi is made  when there is no green vegetable is available  just like in rainy season. This is very delicious and easy to make. Here below is its full recipe:
Ingredients
2 potatoes
6 pakodies
2 tbsp of oil
Pinch of asafetida
1 tsp of cumin seeds
1 tbsp of grated ginger
1/2 cup of chopped onion
2 tomatoes
1 tsp turmeric powder
Salt to taste
½ tsp red chili powder
½ tsp of garam masala
1 finely chopped green chili
Cilantro for garnishing
Method
1. For Pakoris/pakodis see one of my previous post Pakodi/Fulki.
2. Wash, peel and cut the potato into bite sized pieces.
3. Heat oil in a pressure cooker. Add asafetida, cumin seeds and let it crackle.
4. Now add ginger and onion and let it be light brown.
5. After that put finely chopped tomatoes with salt, turmeric powder,  red chili and green chili.  Cook it till oil separates from it.
6. Next add potatoes and stir well.
7.  After that add 4 cups of water.  Close the lid of pressure cooker.
8.  When first whistles comes, lower the flame to its lowest.  Cook it for 7 minutes.  After that remove from fire.
9.  Now let it get be cooled completely.  Open the lid and add pakodis/pakoris to it and cook it for 5 minutes with half covered lid.
10.  Put off the flame.  Now add garam masala and finely chopped cilantro leaves.
11.  Aaloo pakodi sabzi is ready to serve.

Aaloo/potatoes  are used in various dishes. Today I have made gravy wale aaloo, without oil and in microwave.  Believe me, I have not used even a drop of oil in it.  Its making is very simple.  Here below is what is required  and how to make it:
Ingredients:
2 boiled potatoes
1 tbsp of tomato paste
2 green chilies
1 tsp of grated ginger
salt to taste
1/2 tsp of turmeric powder
pinch of red chili powder
1 tsp of  whole coriander powder
1 tsp of cumin seeds
1 tsp of mustard seeds
1/2 tsp of fennel seeds
1/8 tsp of kalongi
few curry leave
2 tbsp of chopped cilantro
1/4 tsp of garam masala
small pinch of asafetida/heeng
Method
1. Wash and boil the potatoes.
2. Peel and break into pieces with hands.
3. Take a microwave safe bowl.  Put salt, turmeric, chili powder, ginger, green chili, tomato paste, whole coriander powder, heeng, cumin seeds, mustard seeds, fennel seeds and kalongi to the potatoes and mix well.
4.  Now add 3 cups of water to it and again mix well with spoon.
5.  Keep it in the microwave,  Now microwave it for 15 minutes (Total time). For that set microwave for 5 minutes on 100% power level, 5 minutes on 30% power and again 5 minutes on 100 % power.  Total microwave time is 15 minutes on different power levels.
6.  Now take out the sabzi bowl from the microwave.  Add garam masala and cilantro and mix well.
7.  Delicious fat free aaloo sabzi is read to serve.

Aaloo Kadhi can be eaten while observing fast.  During navratris fast, generally we get fed up eating fried stuffs every day.  This kadhi can be enjoyed with samo/samak/samkiye/sanwa rice pulav or with kuttu roti.  Some people eat turmeric during fast.  So if you are the one who doesn't take turmeric, kashmiri red chili can be used to give it a little color.  It is very easy and simple to make.  Moreover, it needs very few ingredients.  Here is the whole process how we can make it:
 Ingredients
3 medium sized boiled potato
1.5 cups sour curd
salt to paste
1 tsp of turmeric powder (optional)
1/2 tsp of red chili powder
1/2 tsp of garam masala
1 tsp of coriander seeds
few curry leaves
2 tsp of pure ghee/ oil
1 finely chopped green chili
few dried red chili chunks
handful of finely chopped cilantro
Method
1.  Boil and peel the potato.  Now mash it very smooth.
2.  Take curd in a big bowl. Add salt, turmeric, and red chili powder and whisk it for a minute.
3.  After that add mashed potatoes and 1 cup of water and whisk it for a moment.
4.  Heat the oil in a pan.  Now add the hand crushed coriander seeds, curry leaves and red chili chunks. Let it be slightly brown.
5.  Now add curd and potato batter constantly stirring.  
6.  When it starts boiling, it is time to stop stirring.  
7.  Now lower the heat to the minimum and cover the pan with a cover.
8.  Stir occasionally.  Let it cook till thick like kadhi.
9.  Potato kadhi is ready.  Remove from heat.
10.  Add garam masala and cilantro and stir.
Tip
Before boiling point, stirring is very essential.
