Prawn Corn Egg Chowder

Chowder is a seafood or vegetable stew, often served with milk or cream and mostly eaten with saltine crackers. Today's chowder is not the thick one but I tried a thin chowder though used all the basic ingredient to make it.The chowder comes out very delicious and the boiled egg add the extra kick.I am sure you all will love it.

Prawn Corn Egg Chowder

Ingredients
  • 5 to 6 prawn shelled and cleaned
  • 2 egg boiled
  • 1/2 cup small cubes baby corn blanched
  • 1 potato boiled and mashed
  • 1 onion sliced
  • 1/2 tsp paprika powder
  • 1/2 cup milk
  • 2 cup chicken stock
  • 1 tbsp butter / butter substitute
  • 1 tsp chopped parsley
  • to taste salt and pepper
Cooking Directions
  1. Melt butter in a pan. Add onion fry a little then add prawn fry a little. Then add the mashed potato, paprika powder, salt. Mix well. Add stock. Mix well. Add baby corns cubes. Let it cook for 5 minutes. Now add milk. Mix well. Cook for another 3 minutes. Now put off the flame. Season it with pepper and garnish with parsley and boiled eggs. Serve hot with crusty bread.

  • 1/2 tsp cardamom powder
  • 2 glass chilled milk

  • to taste sugar/honey/sugar substitute
Cooking Directions
  1. Take mango pulp, cashew, cardamom powder, salt and sugar in a blender. Blend it well. Now add the chilled milk and blend well.Add fresh cream if using. Mix with soft hand. Serve the chilled mango milk shake in your favorite glass. Enjoy a delicious yummy mango milk shake.

  • 1 big beetroot peeled and boiled
  • 1 tsp grated ginger
  • 5 to 6 garlic c love
  • 6 to 8 prawn
  • 2 tbsp fresh coriander
  • 1 1/2 cup coconut milk

Cooking Directions
  1. Take beetroot, ginger, garlic, and coriander in a blender. Make a fine paste. Now add the coconut milk with salt and pepper. Now blend well. Heat butter in a pan fry the prawn a little sprinkling little salt and pepper and grated coconut if using I use as like the crunchy butter fried coconut while having the smooth soup. Fry a little then add the beetroot coconut mixture. Mix well and put off the flame. Serve hot or at room temperature with a dash of lemon juice and crispy bread toast. Ingredients
  • 1 big carrot cut into thin strips
  • 2 tsp cashew powder
  • 3 garlic clove crushed
  • 2 tsp olive oil
  • 3 eggs
  • 1/2 tsp ginger juice
  • 1/2 tsp butter
  • to taste salt and pepper
Cooking Directions
  1. In a skillet heat olive oil. Add crushed garlic fry a little. Then add carrots, salt and pepper. Mix well fry in medium to high flame till the carrot is little soft.Add cashew powder.Mix well.Fry for a minutes then put off the flame and keep aside.
  2. Now in bowl whisk  three eggs with salt, pepper and ginger juice. Heat  another skillet brush butter and pour the eggs and make a thin sheet of open faced omelette. In a bowl take the thin sheet of open faced omelette place the fried carrot on it and then cover the top with the edges of omelet. Serve hot. You can have it simply the way it is or serve with a crisp loaf of butter toasted bread.

This carrot potato soup is very delicious and healthy.In this soup I use coconut oil.The health benefits of coconut oil include hair care, skin care, stress relief, cholesterol level maintenance, weight loss, boosted immune system, proper digestion and regulated metabolism. It also provides relief from kidney problems, heart diseases, high blood pressure, diabetes, HIV, and cancer, while helping to improve dental quality and bone strength. Mix well. Then add 3 cups of vegetable stock with salt and pepper as it comes to boil then add the kokum/Garcinia indica fruit petal with that water in which it was soaked.Cook in high flame for 10 to 15 minutes. Till the potatoes and carrots are well cooked.Serve hot with bread rolls.

The swirling water will help prevent the white from "feathering," or spreading out in the pan. Let it poach: Turn off the heat. Lift it out.( I love my yolk runny so I lifted it immediately but if you want hard yolk cover the pan and let it be there for 5 to 6 minutes before removing.)  Remove the egg with a slotted spoon and serve immediately topped with fried onion and green peas.

  • 100 g egg noodles
  • 3 cloves garlic
  • 1/2 inch ginger
  • 1 onion
  • 1 red chilly soaked in warm water
  • 1/2 tsp roasted coriander seed
  • 1/4 tsp roasted cumin seed
  • 1/2 cup coconut milk
  • 1 cup chicken stock/ vegetable stock
  • 6 to 8 prawn cleaned and deveined
  • 2 boiled eggs
  • 1 carrot cubed and blanched
  • 6 broccoli florets
  • 6 to 8 bottom mushroom
  • hand full l chopped coriander
  • 1 tsp lemon juice
  • 1 kaffir lime leaves/ lime leaves
  • 2 tsp oil
  • 1 tsp salt
  • 1 lemon wedge

Cooking Directions
  1. Take ginger, garlic, onion, red chilly, cumin, coriander in your blender and make a fine paste. Now heat oil in a pan. Add prawn .Stir a little then add the paste. Mix well with prawn. Then add vegetables and mushroom. Then add coconut milk, vegetable/ chicken stock and salt. Let it come to boil. Then add kaffir lime leaves. Meanwhile, cook your egg noodles in a pan of boiling water for 4 mins until soft. Drain, then tip into the laksa pan. Add boiled eggs. Season to taste, then serve in a bowl, topped with chopped coriander and lemon wedge. Enjoy piping hot prawn egg and mushroom laksa.

When coupled with other phytonutrients in green peas—including phenolic acids like ferulic and caffeic acid, and flavanols like catechin and epicatechin—the combined impact on our health may be far-reaching. For example, some researchers have now speculated that the association between green pea and legume intake and lowered risk of type 2 diabetes may be connected not only with the relatively low glycemic index of green peas (about 45-50) and their strong fiber and protein content, but also with this unusual combination of antioxidant and anti-inflammatory phytonutrients.Even though green peas are an extremely low-fat food (with approximately one-third gram of total fat per cup) the type of fat and fat-soluble nutrients they contain is impressive. Recent research has shown that green peas are a reliable source of omega-3 fats in the form of alpha-linolenic acid (ALA). In one cup of green peas, you can expect to find about 30 milligrams of ALA.   1. In a pressure cooker add all the ingredients except cheese. Let it go for 2 whistle. Let the steam go out then open the cooker then add grated cheese. Mix well. A very flavorful mild soft light cucumber and potato soup is ready to cherish. Serve luke warm. Have it with your favorite bread roll.

Creamy Colorful Vegetable Salad

Ingredients
  • 2 cup mixed vegetables blanched
  • 1/2 cup mayonnaise
  • 1 tbsp cream cheese
  • 1/4 tsp garlic powder
  • 1tsp roasted whole cumin
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • to taste salt n pepper
Cooking Directions
  1. Take a bowl mix mayonnaise , cream cheese, garlic powder, lemon zest and lemon juice, salt and pepper. Mix well. Now add the vegetable mix well. Add roasted cumin.
  2. Mix with soft hands. Then garnish with cilantro or parsley. Yummy creamy colorful vegetable salad is ready to get with your grilled fish steaks or spicy chicken fried steaks or any other main dish recipes you think will go well with it.

Chicken Clear Soup

Chicken clear soup is one of my favorite. This chicken clear soup is very refreshing during the summer as I use lime juice in it.Chicken soup has long been touted as a form of folk medicine to treat symptoms of the common cold and related conditions.
The most widely cited of these studies, published in the medical journal Chest in 2000, is by Dr. Stephen Rennard of the University of Nebraska Medical Center in Omaha. He conducted laboratory tests to determine why chicken soup might help colds, beginning with his wife’s homemade recipe, handed down by her Lithuanian grandmother. Using blood samples from volunteers, he showed that the soup inhibited the movement of neutrophils, the most common type of white blood cell that defends against infection. Dr. Rennard theorizes that by inhibiting the migration of these infection-fighting cells in the body, chicken soup essentially helps reduce upper respiratory cold symptoms.
Another study by Mount Sinai researchers in Miami also suggests that chicken soup has more than just a placebo effect. They looked at how chicken soup affected air flow and mucus in the noses of 15 volunteers who drank cold water, hot water or chicken soup. In general, the hot fluids helped increase the movement of nasal mucus, but chicken soup did a better job than the hot water, according to the 1978 report, also published in Chest. Chicken soup also improves the function of protective cilia, the tiny hairlike projections in the nose that prevent contagions from entering the body, according to a 1998 Coping With Allergies and Asthma report.
 None of the research is conclusive, and it’s not known whether the changes measured in the laboratory really have a meaningful effect on people with cold symptoms. However, at the very least, chicken soup with vegetables contains lots of healthy nutrients, increases hydration and tastes good, too.

Ingredients
  • 1 cup boneless chicken cubes
  • 1 onion sliced
  • 1/2 tsp ginger chopped
  • 6 garlic clove
  • 1tsp butter/ diet butter
  • 1 tbsp coconut milk
  • 5 cup water
  • 1 tbsp lime juice
  • to taste salt and pepper
Cooking Directions
  1. Take boneless chicken, ginger, 4 garlic cloves, onion and 5 cups of water in pressure cooker with little salt and pepper and cook for 4 to 5 whistle or until the chicken is well boiled.
  2. Strain the chicken stock and keep it aside.
  3. Heat butter in a pan and add finely chopped the rest garlic cloves. Fry till brown then add the chicken stock simmer for 8 to 10 minutes. Add coconut milk, lime juice and freshly ground pepper. Mix well. Put off the flame and serve with garlic cheese bread or any bread of your choice. Enjoy a delicious healthy meal in minutes.

Today sharing with you all a very delicious eye appealing salad you can call it garden of love packed with goodness of protein, crab and colorful vegetables nutrient goodness. It's one of its kind. I use heart shaped cookie cutter to make all of it. You can use any other shape of size of your choice and enjoy a hearty weekend salad.

Ingredients
  • 1 beetroot peeled blanched
  • 1 carrot peeled blanched
  • 1 egg
  • 1 potato blanched
  • 6 to 8 broccoli florets
  • 5 tbsp olive oil
  • 2 garlic
  • 1 sprig thyme
  • 1 sprig of rosemary
  • 1 tbsp sweet chilly sauce (optional)
  • to taste salt n pepper
Cooking Directions
  1. In this salad I cut all the veggies in heart shape to give it a different eye pleasing effect in your platter. Use your cookie cutter to bring this effect or go with regular chunk pieces of this vegetables.Put olive oil filled pot in a low flame add sprig of thyme n rosemary, garlic n little salt. Simmer the vegetables except broccoli in this infused oil for 15 minutes, add broccoli in last 2 minutes. Bring them out from oil and place in a kitchen paper to drain the excess oil. Keep aside.
  2. Now drizzle little bit oil in a flat nonstick pan. I put large cookie cutter on it. Break one egg and cautiously place it, if you don't want to take so much effort just poach one egg. Now in a serving plate arrange all the cooked veggies and place the poached egg in the middle. Sprinkle salt and pepper  and drizzle sweet chilly sauce, it's optional . It's just add that extra zing. Enjoy a delicious eye catching salad... your own garden of love.

This is a very delicious healthy recipe. I can take the raw flavor of fish so fried a little but if you can then steam the raw fish. It taste awesome.Fish is a really nutritious food, being rich in protein, vitamins and minerals which are essential to maintain good health. Frequent consumption of white fish, improves blood pressure, lowers cholesterol and reduces weight, according to a study conducted by researchers at the Nutrition & Obesity Unit of Hospital Ramón y Cajal in Madrid.



Whole Fish Cooked in Chinese Style With Pepper and Baby Corn

Ingredients
  • 1 whole white flesh fish(bassa/ bhetki (barrmundi)/talapia)
  • 1 red bell pepper finely sliced
  • 4 small baby corn slit from in between
  • 2 inch ginger peeled and finely julienned
  • 2 tbsp soy sauce
  • 1 cup chicken stock
  • 1 tsp castor sugar
  • 2 tsp sesame oil
  • 1tsp Chinese red chilly sauce
  • 2 tbsp or to taste white whine vinegar
Cooking Directions
  1. Clean the fish and make a diagonal cuts into the fish down to the bones on both sides. I fry the fish in sesame oil just to get over the rawness but you can steam as it is. Now in a bowl mix take soy sauce, sugar, chicken stock, sesame oil, red chilly sauce and white whine vinegar. Mix well now in a heat proof plate place place the fish and pour the sauce mixture on it.Top it with ginger julienne and scatter sliced red pepper and baby corn on top and sides, if you want you can add fine julienned of scallions and finely chopped coriander. Let the water come to boil in the steamer now steam the fish with the lid on. Cook till the fish is cooked but the pepper is not too soft.
  2. Gently lift the fish out of the steamer, reserving the liquid. Place the fish on plates or in shallow bowls. Divide the ginger, baby corn and capsicum between the plates and pour the remaining liquid over fish.
  3. Serve with stir fried noodles or jasmine rice.

Dal Soup

Ingredients
  • 1 cup black gram dal skin less/ dhuli urad dal
  •  1 1/2 cup water
  • 2tbsp butter
  • 1/2 tsp whole cumin
  • 1/4 tsp fennel seed
  • 8 to 10 whole black pepper
  • 1/2 tsp grated ginger
  • 2 tbsp butter
  • 1/2 tsp sugar (optional)
  • to taste salt and pepper
Cooking Directions
  1. Wash the dal well. Now in a pressure cooker or a heavy bottom pan with water cook the dal till it is well cooked mash it well. Heat 1 tbsp of butter in a pan then add cumin , fennel seed, whole black pepper. Fry a little till you get the smell of butter fried cumin and fennel then add grated ginger and black pepper. Stir a little and then add the cooked dal. If needed add little more warm water according to your choice of consistency. I think bit thick consistency go well for this soup. Now let it come to boil while keep stirring then add sugar (if using) , salt and pepper powder.Mix well. Put off the flame and then add another table spoon of butter. Serve hot with bread or steamed rice with dash of little lime juice. I am sure you will love this yummy creamy soup.

  • 3 to 4 egg
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/4 tsp cumin powder
  • 4 tbsp grated cheese

  • 1/2 tsp whole black pepper
  • 1/2 tsp sugar
  • 1 tsp salt and pepper
Cooking Directions
  1. Cooked the shell pasta according to package instruction. On a low heat place a pan grease with very little oil, break the eggs one by one into the pan wait for few second then scramble the egg so that it remains gooey. Keep aside. Heat oil in pan. Add whole black pepper, chopped garlic,onion and bell pepper.Fry till onions are translucent. Now add tomato puree, tomato paste, basil, oregano, cumin powder, sugar, salt and pepper. Mix well.
  2. Let it cook for few second then add the cooked pasta. Mix well. Put off the flame. Serve in a plate and top with gooey scramble egg and grated cheese. Enjoy Shell pasta with gooey egg scramble.
