Find Good and Natural Recipes

In  one of my previous post, I have made the salad dressing or chutney with cabbage and ripe papaya seeds.  Its peppery taste enhances the taste of any salad.  Here I have prepared the cabbage and papaya salad.  Here below is the whole process:
Ingredients
1 cup of papaya pieces
½ cup of shredded cabbage
1 tbsp of cabbage and ripe papaya seeds chutney or salad dressing
1 tbsp of olive oil
½ tsp of lemon juice
Method
1. Wash, peel and cut ripe papaya in bite sized pieces.
2. wash and shred the cabbage .
3.  Mix salad dressing, olive oil and lemon.  See the  recipe post  for salad dressing “Cabbage & Papaya Seeds chutney"  on this blog.
4.  Add this mixture into papaya pieces and cabbage in a big bowl. Mix properly, and salad should be coated with this mixture.
5. With Peppery taste of salad dressing  papaya and cabbage salad is ready to serve. Any fruit and vegetable can be added.

Shredded Egg Salad

I was looking for something new and simple for my dinner and then a I came across this simple shredded Egg Salad. It's not only easy to make but taste awesome. I am sure if you try it once you will love this eye appealing shredded egg salad.

Shredded Egg Salad

Ingredients
  • 3 egg hard boiled
  • 2 tbsp grated cheese
  • 1 tsp chopped onion
  • 1/8 tsp olive oil
  • 1 tsp chopped parsley/ cilantro
  • to taste salt and pepper
Shredded Egg Salad

Cooking Directions
  1. Take hard boiled eggs and let it rest in ice water for 6 to 8 minutes. Then peel of the shell . With a grater grate the eggs in a bowl. Then add grated cheese, greens of your choice, chopped onion. Very gently mix and drizzle a little olive oil. Serve and enjoy delicious shredded egg salad.

Creamy Colorful Vegetable Salad

 Last year can't share recipes regularly which I always love to do but this year hope to share as many delicious and healthy recipes and health talk as I can. As the year start let share a very colorful easy to make creamy vegetable salad.


Creamy Colorful Vegetable Salad

Ingredients
  • 2 cup mixed vegetables blanched
  • 1/2 cup mayonnaise
  • 1 tbsp cream cheese
  • 1/4 tsp garlic powder
  • 1tsp roasted whole cumin
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • to taste salt n pepper
Cooking Directions
  1. Take a bowl mix mayonnaise , cream cheese, garlic powder, lemon zest and lemon juice, salt and pepper. Mix well. Now add the vegetable mix well. Add roasted cumin.
  2. Mix with soft hands. Then garnish with cilantro or parsley. Yummy creamy colorful vegetable salad is ready to get with your grilled fish steaks or spicy chicken fried steaks or any other main dish recipes you think will go well with it.

Today I am sharing with you all a very delicious salad recipes with black grapes and green peas sprout.Here in this recipe I use green peas sprout,sprouts are incredibly nutritious; the act of sprouting alone is said to increase levels of B Vitamins, as well as Vitamins C, E and A, sometime up to 15 times the original content! Seeds, nuts, grains, and legumes all have awesome nutritional profiles, are a great source of plant protein. Another bonus of sprouting? It makes their protein more bioavailable to the body!   • 1 cup black grapes
  • 1/2 cup green peas sprout
  • 1 tsp olive oil
  • 1 tsp lemon juice

Delicious Salad - Garden of Love

Today sharing with you all a very delicious eye appealing salad you can call it garden of love packed with goodness of protein, crab and colorful vegetables nutrient goodness. It's one of its kind. I use heart shaped cookie cutter to make all of it. You can use any other shape of size of your choice and enjoy a hearty weekend salad.

Ingredients
  • 1 beetroot peeled blanched
  • 1 carrot peeled blanched
  • 1 egg
  • 1 potato blanched
  • 6 to 8 broccoli florets
  • 5 tbsp olive oil
  • 2 garlic
  • 1 sprig thyme
  • 1 sprig of rosemary
  • 1 tbsp sweet chilly sauce (optional)
  • to taste salt n pepper
Cooking Directions
  1. In this salad I cut all the veggies in heart shape to give it a different eye pleasing effect in your platter. Use your cookie cutter to bring this effect or go with regular chunk pieces of this vegetables.Put olive oil filled pot in a low flame add sprig of thyme n rosemary, garlic n little salt. Simmer the vegetables except broccoli in this infused oil for 15 minutes, add broccoli in last 2 minutes. Bring them out from oil and place in a kitchen paper to drain the excess oil. Keep aside.
  2. Now drizzle little bit oil in a flat nonstick pan. I put large cookie cutter on it. Break one egg and cautiously place it, if you don't want to take so much effort just poach one egg. Now in a serving plate arrange all the cooked veggies and place the poached egg in the middle. Sprinkle salt and pepper  and drizzle sweet chilly sauce, it's optional . It's just add that extra zing. Enjoy a delicious eye catching salad... your own garden of love.

Today I am sharing with you all a very delicious Asian flavored Sesame Cucumber salad. Cucumber is very healthy a good source of Vitamin B. Ingredients
  • 2 cucumber
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • 1 tbsp white sesame seed ( slightly toasted)
  • 1 tsp sugar
  • to taste salt and pepper
Cooking Directions
  1. With a sharp knife, slice the cucumbers into circles.
  2. Combine rest of the ingredients in a large bowl and toss together until completely incorporated and the sugar has dissolved. Now add the cucumber slices and mix with the ingredients. Serve immediately at room temperature. To make it more eye appealing add few small cubes of tomatoes and spring onion. Your delicious sesame cucumber salad is ready.

Ingredients
  • 1 cup kidney beans boiled
  • 1 onion sliced
  • 1 tsp ginger chopped
  • 1 green bell pepper sliced
  • 1 tomato sliced
  • 1/2 cup green peas
  • 3 tbsp tomato garlic sauce
  • 1 tsp olive oil
  • 1/2 tsp dry basil/ or fresh leaves
  • 1 green chilly chopped (optional)
  • to taste salt and pepper
  • 1 tsp lime juice
  •  shaved cheese slices
  • 1tsp chopped parsley for garnish
  • 3 drops balsamic vinegar
Cooking Directions
  1. Heat oil in pan. Then add chopped garlic fry till little golden. Add sliced onion. Fry till translucent. Then add boiled kidney beans, boiled green peas, sliced green bell pepper, salt and pepper. Stir for 2 to 3 minutes. Then add tomato garlic sauce. Mix well. Add sliced tomato and green chilly if using. Mix well. Put off the flame. Add lime juice. Now garnish with shaved cheese slices...more the merrier ...;) , chopped parsley and drops of balsamic vinegar. Serve and relish warm spicy kidney bean salad.

 A very delicious healthy and filling salad good at any time of the day. This lentil salad idea is inspired from the recipes of  two good friends of mine Jagruti and Shobha who are both wonderful food bloggers and very beautiful ladies inside out......you can check the delicious varieties of this recipe and many other mouthwatering dishes in their blogs. Inspired from them I just twisted little bit and made my version and it comes out awesomely delicious. Two toasted brown bread ...one apple and a bowl of yummy healthy lentil salad what more can you ask for to enjoy a filling breakfast.



Healthy Lentil Salad

Ingredients
  • 1 cup boiled yellow Bengal gram/ sweet corn
  • 1 big tomato chopped
  • 1 cucumber chopped
  • 1 onion chopped
  • 1/2 cup coconut grated
  • 1/2 tsp grated ginger
  • 1 tbsp tomato sauce
  • 2 tbsp lemon juice
  • 1/2 tsp chilly flakes or sauce ( optional)
  • 2 tsp oil
  • 2 tsp grated cheese (optional)
  • to taste salt and pepper
Cooking Directions
  1. Boil the lentil or sweet corn whatever you prefer to use until bit crunchy and not too soft. Strain and let it dry. Now in a small bowl take oil, salt , pepper, chilly flakes or sauce if using and tomato sauce and lemon juice. Mix well. Take a big bowl take the lentil and grated coconut, ginger and chopped cucumber , tomato and onion. Add the vinaigrette and grated cheese. Mix well and serve lentil salad immediately.

I have used red spinach in this recipe you can use regular spinach if red is not available to you.But you can look for it in the farmers market as spring is the best time for this. Red spinach has sweet green flavor and delicate texture.It is very low in calories,good source of vitamin C, vitamin A,plus iron and other essential minerals.Red spinach paired well with egg, bacon,spring vegetable nuts and fresh cheese.In this recipe I use all that go well with red spinach and use the flavor of garlic which mingle very well with red spinach. Simple yet appetizing salad. A great celebration dish if well presented can make your Easter dinning a shinning and happy experience.



Fruity Nutty Egg Salad

Ingredients
  • 2 egg hard boiled
  • 10 to 12 almond
  • 10 to 12 green/ black grapes
  • 10 to 12 baby red spinach/ green spinach
  • 1 orange pulp cut into small peices
  • handful parsley and mint chopped
  • 10 small bite size beet root blanched
  • 1 tbsp orange juice
  • 1 tsp lemon juice
  • 1/8 tsp garlic powder
  • 1 cubes cheese shaved
  • 1/8 tsp sweet chilly sauce (optional)
  • 1 1/2 tsp olive oil
  • 1 tsp salt and pepper
Cooking Directions
  1. Roast the almond and keep aside. Now take a bowl mix olive oil with orange juice, lemon juice, garlic powder, sweet chilly sauce (if using), salt and pepper. In a bowl take the blanched beet root and almond and grapes.Take a spoon full of vinaigrette and marinate the beetroot, almond and grapes. Now make a bed of baby spinach.Place the beet root and grapes and almond. Above it place the halved egg and now pour the vinaigrette over it and sprinkle chopped parsley and mint leaves and shaved cheese and orange pulp with very soft hand. A healthy, delicious and appetizing fruity nutty egg salad is ready to serve for your Easter party.

Beetroot and Walnut Salad

Ingredients
  • 2 beet root cut into bite size chunks
  • 1/2 cup walnut
  • 2 tbsp chopped parsley
  • 2 hard boiled egg whites sliced and chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1tbsp balsamic vinegar
  • 1 tsp brown sugar
  • 1tsp salt and pepper
Cooking Directions
  1. Rinse the beetroot well. Place it in a pressure cooker or a pot , cover with water. Boil until it is tender. Drain the water and skin off while the beet is still warm. Now pat dry the beet with a kitchen paper or towel. Cut them into bite size chunks.Take a bowl mix balsamic vinegar, olive oil, brown sugar, lemon juice, brown sugar, salt and pepper. Mix well. Now mix vinaigrette with the beet chunks. Cover tightly, and refrigerate at least an hour or two before serving. Toast the walnut and keep in a air tight container. While serving add the sliced hard boiled egg white pieces. Mix well. Adjust seasoning. Sprinkle chopped parsley and toasted walnut. A delicious healthy, crunchy, nutty salad is ready to serve.

Festive time starts two weeks back in my part and this will go on for the coming full months and then start the cake and cookie time for Christmas and New Year. Festive months mean lot of sweets and all other foods that will do no good but add on few calories. Pumpkin Salad with NuNatural's Orange Lemon Vinaigrette

Ingredients
  • 1/2 pumpkin cut into bite size triangles
  • 1 bunch baby spinach leaves
  • 1 dropper NuNatural Lemon Nustevia or to taste
  • 1 dropper NuNatural Orange Nustevia or to taste
  • 11/2 tbsp lemon juice
  • 1/2 tsp or to taste black salt
  • 1/8 tsp or to taste white pepper powder
  • 2tbsp olive oil
  • 1 red onion finely sliced
  • handful lightly toasted cashew and almond sliced
Cooking Directions
  1. Put the pumkin on a flat baking tray, drizzle with some oil and season with salt and pepper bake in a 180c oven for 15 minutes or when it is just tender but not brown. Set aside to cool to room temparature.
  2. Now take a bowl add olive oil, NuNatural orange and lemon stevia ( shake well before using to get the most  brilliant flavor), lemon juice, black salt and white pepper powder. Mix well.
  3. Scatter baby spinach leaves on a platter, scatter the pumpkin and onions and nuts. Drizzle NuNatural's orange lemon vinaigrette over it and toss a bit. Serve.

Ingredients
  • 2 can chickpeas/ garbanzo beans
  • 1 cucumber, peeled, and diced
  • 1 tomatoes, seeded and diced
  • 1 red onion sliced
  • 1/3 cup parsley chopped
  • 1tbsp garlic paste
  • 1tbsp cumin powder roasted
  • 4 tbsp lemon juice
  • 2 tbsp green onion chopped
  • 10 to 12 black grapes halved
  • 2 tbsp olive oil
  • 2 pinch sugar
  • 1/2tsp black salt
  • Salt and freshly ground pepper to taste
Cooking Directions
  1. Heat oil in a pan .
  2. Add sugar and garlic paste.
  3. Stir for few second when you will get the fried smell of garlic then drain the chickpeas and add it. Fry till you see the chickpeas are warm and glazed. Seasoned with salt and pepper. Now add the onion, tomato, cucumber. Mix well and put off the flame now add black grapes, green onions, lemon juice, and roasted cumin powder, black salt chopped parsley. Mix well. Garnish with few fresh sprigs of parsley.Serve warm.

Egg salad with lime vinaigrette is one of my favorite when I am looking for some healthy snacks and I am in hurry or on the go. This dish is quiet a good feeler and boost up your energy as eggs are quality source of protein. Eggs are good for the brain function as they contain choline. Choline is a nutrient that regulates the brain, nervous system and cardiovascular health. It is mainly good for the pregnant women, helps in fetal brain development and prevents birth defects. Eggs are good for eyes as they contain lutein and zeaxanthin. These nutrients are found in eggs more than other food sources. Consuming eggs lowers the risk of cataracts. Eggs are also good source of Vitamin D and other vital vitamins, minerals and antioxidant. This gives you healthy nails and hair. Ingredients
  • 3 eggs boiled and cut into big chunks
  • 1 cucumber cut into chunks
  • 1 tomatoes cut into chunks
  • 1 onion cut into big flakes
  • 2 tbsp olive oil
  • 1tbsp Lime juice
  • 1/4 tsp honey
  • 1/4 tsp dijon mustard
  • a pinch toasted cumin powder
  • salt and pepper to taste
  • 1 tbsp toasted sesame seed
  • 1tbsp chopped cliantro
Cooking Directions
  1. In a bowl take lime juice, Dijon mustard, honey, toasted cumin, salt, pepper.
  2. Mix well.
  3. Now slowly whisk the mixture and go on adding the oil. Whisk well so that all are mixed well.
  4. Take a bowl and in it take cucumber chunks, tomato chunks , onion flakes ( you can add boiled carrots, beet root and broccoli if you want) then add desired amount of vinaigrette in it. Mix well. Now add egg chunks pour little vinaigrette above it and mix with soft hands.
  5. In a serving plate arrange the salad garnish with toasted sesame and chopped cilantro. Serve immediately.

Ingredients

  • 3 slices Boar's Head Chipotle Chicken
  • 1cup baby arugula , loosely packed
  • 3 toothpicks
Cooking Directions
  1. Lay chicken slices on a clean, flat work surface. Place one piece of cheese on top of each chicken slice.
  2. Toss Arugula lightly with Deli Dressing and place in middle of each piece of cheese.
  3. Starting at one end, tightly roll up chicken and cheese to enclose Arugula. Use toothpick to secure roll; repeat for remaining slices.

Ingredients
  • 1 mango cubed
  • 1 apple cubed
  • 1 cucumber peeled and cubed
  • 1 banana sliced
  • 1 sweet lime skin off and cubed
  • 8 to 10 black grapes
  • 1/4 cup sweet lime juice
  • 1 tbsp lemon juice
  • 1tsp or to taste black salt
  • 1tsp sugar
  • 1/2 tsp roasted cumin crushed
  • a pinch red chili powder
Cooking Directions
  1. In a bowl prepare the vinaigrette take all the juice and black salt, sugar, crushed cumin powder. Mix well.
  2. In a bowl take all the fruits cubes now add the sweet lime vinaigrette. Mix well and let it rest in your refrigerator for 30 minutes. Put it in a serving bowl and sprinkle little red chilly powder. Relish this yummy fruit salad.

Watermelon salad is an intriguing summer salad, cool and refreshing. This is a very light and filling salad and goes very well with grilled meat fish or even veggies. Watermelon is definitely a fun food to enjoy during summer. The bright red triangular wedges packed with sweet juices are not only eye pleasing but full of healthy nutrients. Many of us think of watermelon as a great snacks but when you will come to know about it nutritive value you will give it a star place in your menu. Now count the healthy facts watermelons are excellent source of Vitamin A which help to maintain the eye health, Vitamin C which strengthen your immunity, prevent cell damage and Vitamin B6 which helps to convert protein into energy and helps in brain function. Today we are making this healthy watermelon more appetizing.



Ingredients:
Watermelon     1 deseeded cubed or scoop balls
Onion 1 small finely slice
Simple syrup ¼ cup
Olive oil 1tbsp
Lemon juice 2 tbsp
Ginger juice 1tsp
White pepper ¼ tsp
Black salt to taste
Crumbled feta cheese ¼ cup
Pumpkin seed (toasted) 1 heaping tbsp
Walnut 8 to 10 chopped
Fresh mint leaves 1 tbsp chopped

Procedure

Cut the watermelon in triangles and then with a small fruit scooper scoop small deseed scoop. Take them in a bowl. Now in another bowl mix simple syrup, olive oil, lemon juice, ginger juice, white pepper, black salt. Mix well. Now mix half of the vinaigrette with water melon and sliced onion. Place it on a serving bowl now sprinkle crumbled feta, toasted pumpkin seed, walnut and mint leaves and then drizzle rest of the vinaigrette. Have it as healthy snacks or serve it in a brunch with grilled fish or meat. I am sure you will love it.

Cold tofu salad is perfect healthy nutritious salad during summer. I once had it in my friend place and love it so much that I created my own version and it came out delicious. I am sure you will love this inspired version of Japanese tofu salad. The great part of this recipe is that it needs no cooking yet you get a delicious flavorful calcium rich dish.



Ingredients:
Silken tofu cube   8 to 10
Soya sauce 2 tbsp
Worcestershire sauce 1tsp
Ginger juice few drops
Garlic juice 1tsp
Sesame oil 1tsp (optional)
Duck egg 1 ( hardboiled egg yolk)
Green onion chopped 3 tbsp
Fresh cilantro chopped 1tsp
Toasted sesame seed ½ tsp

Procedure:

In a small bowl mix soya sauce, Worcestershire sauce, and garlic and ginger juice and sesame oil. Mix well. Now arrange the tofu cubes. Scoop the egg yolk and place on it. Then sprinkle green onion and cilantro and then pour the sauce mix above it. Sprinkle toasted sesame seed and your delicious cold tofu salad is done. I am sure you will love this quick, fresh, light cold tofu salad especially in hot summer after work dinning.
