Ingredients
  • 6 mini cheese stuffed buns
  • 1 egg
  • 1tsp onion juice
  • 1tsp ginger n garlic juice
  • 6 heart shaped beetroot sliced blanched in vegetable broth
  • 3 to 4 tbsp crumb
  • 1 tsp salt n pepper
  • 1/2 cup vegetable oil

Cooking Directions
  1. Whisk egg with onion, garlic, ginger juice, salt and pepper. Dip the buns in egg mixture and then coat with crumbs. Fry till golden. If you want to use less oil use air-fries to fry them. It will be crispy outside and gooey within. Take them out. Place the blanched beetroot slice on them. Fix them with small wooden skewers and then enjoy the crispy fried cheesey buns with your favorite dip or sauce. Enjoy this mini delights as your V-day special appetizer.

Garlic Chicken With Bell Pepper

Ingredients
  • 250 grm boneless chicken cubes
  • 1 cup red green n yellow bell pepper cubes
  • 1/2 onion flakes (optional)
  • 1 tbsp garlic paste
  • 2 tbsp tomato paste
  • 1 tsp dry roasted chilly flakes (optional)
  • 1 tbsp sesame oil 
  • 4 tbsp vegetable oil
  • 1 egg
  • 1/2 tsp + 1 tsp cornstarch
  • 1 tsp lime juice
  • 1 tsp soy sauce
  • 1 cup chicken stock
  • to taste salt and pepper

Cooking Directions
  1. Mix 1/2 tsp cornstarch with egg, little salt and pepper whisk well. Marinate the chicken cube with the mixture. Heat oil. Now fry the chicken cubes and set aside. Heat 1 tbsp sesame oil add garlic paste. Stir and then add tomato paste, onion and bell pepper. Stir well. Then add fried chicken . Mix well. Add 1 tsp cornstarch, soy sauce with 1 cup stock. Mix well. Let it come to boil then as the sauce thickens adjust seasoning put off the flame. Add chilly flakes and and lime juice. Mix well. Spread garlic chicken with bell pepper in a bed of vegetable fried noodles and enjoy and delicious dinner.

Cucumber And Potato Soup

Ingredients
  • 1 cup peeled potato small cubes
  • 2 cup peeled seedless  cucumber small cubes
  • 1 big tomato peeled chopped
  • 1 bay leaves
  • 1/2  star anise
  • 1 green cardamom
  • 4 clove
  • 1/2 inch cinnamon
  • 1 or 2 cheese cube grated
  • 1 small knob of butter
  • 2 1/2 cup water/ stock
  • to taste salt and pepper

  1. In a pressure cooker add all the ingredients except cheese. Let it go for 2 whistle. Let the steam go out then open the cooker then add grated cheese. Mix well. A very flavorful mild soft light cucumber and potato soup is ready to cherish. Serve luke warm. Have it with your favorite bread roll.

Cucumbers are low in calories,carbs, sodium, fat and cholesterol.  When we eat any parantha we consume lots of calories only in the stuffing of parantha.  Here I have made cucumber sandwich parantha, very low calories in its stuffing but no compromise with its taste.  Here below is its full recipe details: 
Ingredients
2 cups of wheat flour
1 cup of water
Stuffing
2 grated big cucumber
1 tbsp of finely chopped ginger
2 tbsp of finely chopped onion
1/4 cups of finely chopped cilantro/drumstick leaves
salt to taste
1 finely chopped green chili
1 tbsp of coriander powder
1 tsp of garam masala
Method
1.  Wash, and grate the big cucumber with greater which has big holes. Squeeze the  grated cucumber with hand or  take this grated cucumber in a cloth and squeeze it both hands just like we squeeze clothes.  There should not be left any water. Save this water in a bowl and use for kneading the dough.
2.  Take the wheat flour in a bowl and knead a soft dough with water+the squeezed water.  Keep if for rest for 10 minutes.
3.  Now add all the ingredients  to the grated and squeezed cucumber. Mix well.
4. Knead the dough again for few minutes till smooth.
5. Heat the tava or non stick pan.
6.  Make  very small two balls out of the dough and roll very thin rotis with the help of dry flour.
7.  Now spread evenly handful of cucumber mixture on one roti and sandwitch it by covering it with another rolled roti. Stick the edges by pressing with fingers.  Now roll it with very light hand.
8.Put the rolled parantha on heated tava or non stick pan.9. When it seems dry and turn it to the other side and apply oil to both sides. 
10. Make it crisp.
11. Crispy kheera (cucumber) parantha is ready to serve.

Hello friends returning to blogging after a long break. Hope all you are doing well. Today I 'm sharing with you a very delicious pasta recipe Pasta tomatina. It's truly drool worthy. In this recipe I use farm fresh ripe red tomatoes. The tomato has been referred to as a "functional food," a food that goes beyond providing just basic nutrition. Due to their beneficial phytochemicals such as lycopene, tomatoes also play a role in preventing chronic disease and deliver other health benefits.Tomatoes are also an excellent source vitamin C, biotin, molybdenum and vitamin K. They are also a very good source of copper, potassium, manganese, dietary fiber, vitamin A (in the form of beta-carotene), vitamin B6, folate, niacin, vitamin E and phosphorus. Pasta is a perfect foundation for healthy, nutritious and satisfying meals.Pasta tomatina is such a delicius healthy recipe filled with antioxidant-rich tomato sauce and protein-packed cheese with little dash of fiber rich vegetables. Pasta Tomatina

Ingredients
  • 100 g pasta of your choice
  • 1 cup tomato puree
  • 1 tbsp red chilly sauce (optional)
  • 1 tsp mixed Italian dried herbs
  • 1/2 cup cream cheese
  • 1 1/2 tbsp crushed garlic
  • 2 tbsp butter
  • 1/2 cup chicken / vegetable stock
  • 1 onion big slices (optional)
  • 4 tbsp finely chopped beetroot (optional)
  • 2 tsp finely chopped green beans (optional)
  • to taste salt and pepper
Pasta Tomatina

Cooking Directions
  1. Boil the pasta in water adding salt and a teaspoon of oil.
  2. In a pan add a teaspoon of butter fry the sliced onion and with toss finely chopped beetroot and green beans with little salt and pepper. Keep aside.
  3. In another pan heat a teaspoon of butter add garlic. Fry a little. then add tomato puree. Stir well. Add dried herbs, red chilly sauce if using want little heat , salt and pepper. Mix well . Then add 1/2 cup of stock. Let it boil. When the sauce thickens. Add cream cheese. Mix well. Add boiled pasta and let the sauce get well coated now you can add fried onion and veggies. Mix well. Put off the flame.Serve hot a delicious whole meal pasta tomatina.
