Find Good and Natural Recipes

Wheat Dalia is a healthy and ideal for breakfast. It is made sweet as well as namkeen.  Here below is the recipe of namkeen Dalia:
Ingredients
1 cup of wheat dalia
1/4 cup of peas
1/4 cup of finely chopped carrot
1/4 cup of chopped cauliflower
few curry leaves
2-3 tbsp of cilantro
2-3 tbsp of oil
pinch of hing/asafetida
1 tsp of mustard seeds
salt to taste
1/2 tsp of turmeric powder
1 /2 tsp of garam masala
pinch of red chili powder or to taste
1/2 tsp of tomato paste
Method
1.  Heat the oil in a pressure cooker. Add hing and mustard seeds and let it splutter till it stops itself.
2.  Thereafter, add curry patta and wheat Dalia and roast constantly stirring till lights golden brown.
3.  Now add peas, cauliflower and carrot, tomato paste, ginger paste,turmeric, red chili powder and salt.  Roast 1/2 minutes constantly stirring with spatula.
4.  Next add 3 cups of water and mix.
5.  Close the lid of pressure cooker.  As it starts whistling, lower the heat and cook it for 5 minutes.  After that remove from heat.
6.  Let the pressure cooker cool down.  Now open the lid and add  garam masala and cilantro and mix
7. Namkeen Dalia is ready to serve.

Peels contain many valuable nutrients.  This sabzi is made out of peels of fresh pea pods, which we generally throw after shelling the pea pods.  Here below is its recipe:
Ingredients
1 cup of peeled peels of fresh pea pods
1 medium sized potato
1 tbsp of oil
1 tsp of cumin seeds
1 pinch of hing
1 big sized onion
1 tsp of grated ginger
1 finely chopped green chili
red chili powder optional
1 dry red chili
1 tsp of tomato paste or 1 chopped tomato
1/2 tsp of turmeric powder
1/2 tsp of garam masala
salt to taste
Method
To prepare peels
1. Peel the peels, you must be wondering, is it possible to peel the peel? Yes of course..peas peels has two layers. Upper layer is very soft just like any other sabzi, and the second layer is of white color, very hard to chew and transparent.  Break the corner of the peel and carefully drag the white portion  towards yourself. Discard this white.
3. After that cut the soft green peels into small pieces.
4. Wash. and peel the potato and cut into any shape. 
Making Sabzi
1.  Heat the oil in a pan.  When it is hot add hing, and cumin seeds and let it crackle for a while to light brown color.  Now add dry red chili chunks, onion and ginger and saute it till translucent.
2. Next add tomato paste of finely chopped tomato whichever is available, turmeric powder, green chili and salt.  Cook till it separates from oil on very low heat.
3.  After that add diced potato and peeled peels of fresh pea pods. Mix it well with spatula. Cover the lid. Cook it till it gets tender on very low heat.
4.  Now add garam masala and mix. 
5.  Matar ke chilke ki sabzi is ready to serve.  Enjoy it in main meal with roti, poori, parantha, tandoori roti and naan etc.

Gobhi/cauliflower/phool gobhi is used for making many dishes.  Earlier I have written its parantha and sabzi recipe.  Today I am writing about its pakora/pakoda.  Here below is what is required and how it is made:
Ingredients
1 medium sized cauliflower
1 cup of besan
salt to taste
1 tsp of turmeric powder
1/2 tsp of chili powder
1 tsp of coriander powder
1/2 tsp of soanf/fennel powder
1 tsp of kasoori methi powder
1 tsp of garam masala
1 tsp of ajvain/carom seeds
small pinch of sodium bi-carb
1/4 cup of chopped cilantro
1 finely chopped green chili
1/2 tsp of lime juice
oil for frying
Method
1.  Wash the cauliflower and cut the flat florets.
2. Take the besan in a big bowl.  Add salt, turmeric powder, chili powder, garam masala, 1/2 tsp of lemon juice, coriander powder, soanf powder, carom seeds and mix.  Now make thick pouring consistency of batter.
3.  Next add finely chopped green chili, cilantro and kasoori methi powder. Mix thoroughly. After that add soda bi-carb and mix gently.  Adding soda bi-carb is optional.
4. Heat the oil in a frying pan.  Dip the cauliflower florets one by one in besan batter and fry light brown from both sides by turning with slotted spoon.  Now take out from the oil. Fry all the pakoras like wise.
5.  Now with the back of any flat bowl press very gently all the pakoras.
6.  Now again fry these pressed pakoras again till crisp.
7.  Crispy gobhi pakoras are ready to serve.

Bathua is known as weed and it is very rich in fiber. It  is said that it has laxative properties which cures constipation. Here I have made its lassi.  Here below is how we can make it:
Ingredients
3-4 handful of chopped bathua leaves
3 cups of curd
black salt to taste
1/4 tsp of black pepper powder
pinch of soanth powder (dried ginger powder)
1/2 tsp of roasted cumin powder
1/4 tsp of garam masala
1 tsp of cumin seeds
pinch of hing
1/2 tsp of oil
Method
1. First of all wash, break leaves from stem and chop it.
2. Now boil it with little water till soft or microwave it for 5 minutes with little water. Mash it with spatula.
3.  Next take boiled, and cooled bathua leaves, curd, salt and all the remaining ingredients in a big container of mixer blender.
4. Blend it on 2 to 3 pulse.
5. Heat the little oil in a ladle, add hing and cumin seeds and let it be brown in color.  Put this chonk in lassi.
6. Batua leaves lassi is ready, transfer into glasses and serve.

Marua/sweet basil  pyaji chutney is a coarse textured salsa dip with great taste.  It is very simple and easy recipe.  Here below is how we can make it:
Ingredients
handful of Marua/sweet basil leaves
2 ripe tomatoes
1 tbsp of grated ginger
2 fresh green chilies
1 medium sized onion
1 tbsp of lemon juice/white vinegar(optional)
1 tsp of garam masala
salt to taste
Method
1. Wash the cilantro, ginger, green chilies and sweet basil leaves.
2. Peel and cut the onion roughly. Chop the green chilies and grate the ginger or it can be finely chopped too.
3. Take onion, green chilies and ginger in vegetable chopper and chop it first. After that add marua, cilantro, coriander powder, lime juice, salt and tomatoes. Blend it into the vegetable chopper till coarse chutney. 
4.  Chatpati marua salsa dip is ready to serve.
