Find Good and Natural Recipes

Mathris are tea time snack. It can be made of aata, maida, besan etc.It can be made in many shapes and sizes.  Here below is full recipe of tikoni jaali mathri:
 Ingredients
6 cups of all purpose flour/maida
salt to taste1/2 tsp of crushed black pepper
2 tsp of ajvain/carom seeds
1 tbsp of cumin seeds
1 cup of oil for moyan
1 cup+2 tbsp of water for dough
oil for frying
Method
1.  Sieve the all purpose flour/maida.
2.  Take maida in a big bowl.  Add all the dry ingredients salt, ajvain, cumin seeds, and mix.
3.  Now add oil for moyan. Rub it with both hands.
4.  Now make a hard dough with 1 cup+2 tbsp of water.
5.  Keep the dough for 15 minutes for rest.  Cover it with wet cloth or with any inverted bowl.
6.  Now divide the dough into small parts.  Make balls out of it.
7.  Roll the balls just like round poori.  Now cut it with knife in four parts. In each part make 2-3 cuts in a way from upper and lower and its sides part should be joined. See the mathri carefully.
8.  Heat the oil in a frying pan. Flame should be medium.
9.  Fry all the slotted mathris on medium hot oil. It will take time.  All the bubbles will disappear when it is done.
10.  Take out with any spatula from the frying pan.  Crispy and delicious slotted mathris are ready to serve.

Macaroni Canna chaat caters the Indian taste.  It is very easy and simple recipe but very chatpati chaat just like all the other chaats.  Here below is its full recipe:
 Ingredients;
1 cup of boiled macaroni
1 cup of boiled black channa/kale chole/channe
1/2 cup of boiled water of channa
haqndful of chopped onion
1 tbsp of grated ginger
2 tbsp of tomato paste
1 chopped tomato
1 tsp of cumin seeds
black salt to taste
1 fresh green chili
3 tbsp of tamarind chutney
2 tbsp of white vinegar
1/4 tsp of red chili flakes
1/2 tsp of cumin powder
1/2 tsp of garam masala
2 tbsp of oil
handful of chopped cilantro
1/2 cup of chopped cucumber
Method
1. Soak the black channa overnight and boil it in a pressure cooker by adding 1 drop of oil for 30 minutes as the first whistle comes. Let it cool and take out the channa as we have to use channa and 1/2 cup of its water only.  Use the remaining channa water in gravies or as desired.
2.  Boil the macaroni al dente and drain the water and again pour some water over it in order to prevent from sticking together.
3.  Heat the oil in a pan.  Put the cumin seeds in hot oil and let it crackle little bit.  Now add onion and ginger and saute it little bit.  Now add Tomato paste, salt, red chili flakes, and fresh green chili.  cook it till oil separates from mixture.
4.  Now add boiled pasta and boiled black channa  with h
1/2 cup of boiled channa water and stir it.
5. Next add sweet and sour tamarind chutney, white vinegar, cumin powder,and garam masala. Cook it for two to three minutes to dry water, continuously stirring. When it becomes little bit dry, switch off the  gas flames.
6.  Take out in a serving dish.  Add finely chopped tomato and cucumber and mix.  Garnish it with cilantro and serve.  Chatpati macaroni chaat is ready.

Boiled carrot can be used in making many dishes, recently I used in carrot lassi which was my previous post. I heard so many times boiling carrot as whole but I had never seen.  Before that I was using carrot by grating  and cutting. So I thought of boiling it in pressure cooker.  Here below is how we can boil it:
Ingredient
carrots
water
Method
1.  Wash the carrots.  Now take the carrots in pressure cooker with one cup of water.
2.  Now close the lid and keep it on flame.
3.  As soon as the first whistles comes, lower the heat to lowest.
4.  Cook it on 6 minutes. After that remove from flame.
5.  Now let the pressure cooker cool down completely.
6.  Next open the lid, and take out the carrots in a plate. It can be kept in refrigerator  and can be used as required.
7.  Now peel it just like we peel boiled potatoes. Take the grater with big holes, and grate it.  Keep it in refrigerator, as a whole or after grating it.  Use it as and when required.

In winter  generally palak and btathua lassies are made.  Today I have prepared boiled carrot lassi.  Here below is its full recipe:
Ingredients 
1 medium sized carrot
3 cups of curd
black salt to taste
1/4 tsp of black pepper powder
pinch of soanth powder (dried ginger powder)
1/2 tsp of roasted cumin powder
1/4 tsp of garam masala
Method
1. First of all, wash, peel and boil the carrot. For this, take carrot with one cup of water in pressure cooker and keep on gas stove.  When first whistle comes, lower the heat at lowest and cook it for 6 minutes. Switch off the stove. 
2. Let the pressure cooker cool off completely.  After that Take out the carrot and grate it with a greater having big holes.
3.  Next take boiled,and grated carrot, curd, salt and all the remaining ingredients in a big container of mixer blender.
4. Blend it for few seconds not too much. 
5.Carrot lassi is ready and transfer into glasses and serve.

Mooli/radish salsa dip or coarse textured chutney is a tasty and very healthy which requires no cooking and no oil at all.  Here below is its full recipe:
Ingredients
1 medium sized mooli
2 ripe tomatoes
1 tbsp of grated ginger
handful of cilantro
2 fresh green chilies
1 tbsp of lemon juice/white vinegar(optional)
1 tsp of garam masala
salt to taste
Method
1. Wash the cilantro, ginger, green chilies and radish.
2. Peel and cut the radish and onion roughly. Chop the green chilies and cilantro too. Grate the ginger or it can be finely chopped too.
3. Take radish,green chilies and ginger in vegetable chopper and chop it first. After that add cilantro, coriander powder, lime juice, salt and tomatoes. Blend it into the vegetable chopper till coarse chutney. 
4.  Chatpati radish chutney is ready to serve.
