Find Good and Natural Recipes

Shahtut/shahtoot/mulberry is a juicy fruit with sweet and sour taste while fully ripe shatoot is very sweet in taste. Here below is how I made its milk shake:
Ingredients
20 -25 mulberries
4 tsp of sugar
2 cups of milk
Method
1.  First of all wash the mulberries with fresh water. Break its stem.  
2.  Take the mulberries, is cup of milk and sugar in mixer's container.  Blend it for a minute.
3.  Now add  remaining milk and blend it again for a second or pulse it once.
4.  Delicious pinkish or purplish shahtoot milk shake is ready.  Transfer it into glasses.  Put ice cubes if required and serve. Adding ice cubes is optional.

Lemon grass was not so common, when I was young, first time I had it in a Thai soup in Thailand many years ago. Having been tasted it, I started buying it. My favorite was to make its infused water. Now It has become so popular that everyone using it in many ways in India too. Recently I  made its squash/syrup which I use in making lemon grass lemonade drink. Here below is its full details how I made it:
Ingredients
3 cups of sugar
1 cups of water 
1.5 cups of lemon juice
4 inch long piece of ginger
7sticks of lemon grass
Process
1.  Take 3 cups of sugar and 1 cup of water in a deep pan.  Put it on the flame and let it boil continuously stirring.
2.  Chop ginger and lemon sticks and add to the boiling syrup.
3.  Make one string consistency syrup on medium heat.
4.  Remove from the heat.
5.  Let it cool. And then add 1.5 cups of lemon juice. Mix properly.
6.  Strain it through a strainer.
7.  Store this syrup in a clean and sterilized bottle.  This concentrate can be kept for three months in the refrigerator.
8. To make a drink, add 1/4 cup of syrup to one glass of water or per your taste.
Serving suggestions for lemon grass lemonade drink:
Take 3 tbsp of squash or to taste in a glass and add chilled water. Mix well. Add 1 tbsp of socked basil leaves and serve.

Last weekend I went to vegetable market to buy fresh fruits and vegetables.  There I saw some small green pumpkins. It were so fresh, I couldn't help myself from buying it. Next day when I cut it, I saw its seeds were very raw.  Usually I roast pumpkin seeds in microwave. But seeing such fresh seeds, I thought of making its juice with its guts. Here below is how I made it: 
Ingredients
 1 cup of pumpkin guts
1 tbsp grated ginger
1 tsp sugar (optional)
2 tbsp finely chopped mint leaves
1 tbsp of lime juice/fresh half lemon
Black salt to taste
Fresh crushed black pepper
Method
1 Cut the pumpkin and scoop out its guts/seedy pulp with spoon.
2. Put ginger and pumpkin guts in a blender and blend it with 1 glass of water for few minutes.
3. Strain it through strainer.
4. Now put again in blender the remaining residue after filtering the juice with one more glass of water and blend it again for few minutes. Again filter it through a sieve. Next add hand torn fresh mint leaves, sugar, lemon juice, black salt and black pepper powder in the juice and mix with spoon. 
5. Pour the juice in glasses and serve.

Bathua is known as weed and it is very rich in fiber. It  is said that it has laxative properties which cures constipation. Here I have made its lassi.  Here below is how we can make it:
Ingredients
3-4 handful of chopped bathua leaves
3 cups of curd
black salt to taste
1/4 tsp of black pepper powder
pinch of soanth powder (dried ginger powder)
1/2 tsp of roasted cumin powder
1/4 tsp of garam masala
1 tsp of cumin seeds
pinch of hing
1/2 tsp of oil
Method
1. First of all wash, break leaves from stem and chop it.
2. Now boil it with little water till soft or microwave it for 5 minutes with little water. Mash it with spatula.
3.  Next take boiled, and cooled bathua leaves, curd, salt and all the remaining ingredients in a big container of mixer blender.
4. Blend it on 2 to 3 pulse.
5. Heat the little oil in a ladle, add hing and cumin seeds and let it be brown in color.  Put this chonk in lassi.
6. Batua leaves lassi is ready, transfer into glasses and serve.

In winter  generally palak and btathua lassies are made.  Today I have prepared boiled carrot lassi.  Here below is its full recipe:
Ingredients 
1 medium sized carrot
3 cups of curd
black salt to taste
1/4 tsp of black pepper powder
pinch of soanth powder (dried ginger powder)
1/2 tsp of roasted cumin powder
1/4 tsp of garam masala
Method
1. First of all, wash, peel and boil the carrot. For this, take carrot with one cup of water in pressure cooker and keep on gas stove.  When first whistle comes, lower the heat at lowest and cook it for 6 minutes. Switch off the stove. 
2. Let the pressure cooker cool off completely.  After that Take out the carrot and grate it with a greater having big holes.
3.  Next take boiled,and grated carrot, curd, salt and all the remaining ingredients in a big container of mixer blender.
4. Blend it for few seconds not too much. 
5.Carrot lassi is ready and transfer into glasses and serve.

Moringa/drum stick leaves are a power house of nutritional value. It  contains highest protein, amino acids, vitamin A, vitamin c, calcium, potassium, and  iron etc etc. Today I have prepared lassi with these leaves.  Here below is how I made it:
Ingredients
3-4 handful of chopped moringa leaves
3 cups of curd
black salt to taste
1/4 tsp of black pepper powder
pinch of soanth powder (dried ginger powder)
1/2 tsp of roasted cumin powder
1/4 tsp of garam masala
Method
1. First of all, wash and chop the moringa leaves. 
2. Now boil it with little water till soft. I have microwaved it for 5 minutes with little water.
3.  Next take boiled and cooled drumstick leaves, curd, salt and all the remaining ingredients in a big container of mixer blender.
4. Blend it for few seconds.
5. Moringa leaves lassi is ready, transfer into glasses and serve.

Kale  leaves are called phak-ka-na in Thailand.  It is very healthy leafy vegetable full of iron and fibers. Today I made its lassi.  It is very easy and simple to make.  Here below is-complete process of its making: 
Ingredients 
2 handful of choppped tender kale leaves
3 cups of curd
black salt to taste
1/4 tsp of black pepper powder
pinch of soanth powder (dried ginger powder)
1/2 tsp of roasted cumin powder
1/4 tsp of garam masala
Method
1. First of all, wash and chop the kale leaves. 
2. Now boil it with little water till soft.
3.  Next take boiled and cooled kale leaves, curd, salt and all the remaining ingredients in a big container of mixer blender.
4. Blend it for few seconds not too much. 
5. Kale leaves lassi is ready and transfer into glasses and serve.

Palm fruit/nungu/ice apple/ is  just jelly like fruit. It is very good in summer.  Today I am writing how I made its milk shake.  Here below is the whole process :
Ingredients:
5 pieces of palm fruit
3 tsp of sugar or to taste
1 tbsp of rooh hafza
2 cups of milk
Method
1.  Wash the palm fruit pieces.  
2. Remove the outer skin.  Inside it is just like jelly.
3.  Take the milk, sugar, palm fruit and rooh hafza in the big zar of blender.  Blend it to smooth liquid,
4,  Delicious palm fruit milk shake is ready to serve.

Passion/exotic fruit is a very refreshing fruit which contains phyto nutrients such as carotene, vitamins A, & C.  It contains jelly type yellow seedy pulp.  Today I am writing how to prepare juice/drink out of its pulp.  Here below is how I made it:
Ingredients
8 passion fruit
4 tbsp of sugar
salt to taste
fresh black pepper poweder
1/4 tsp of garam masala
1 glass of fresh water
Method
1.  Wash the passion fruits.  Cut into halves.
2.  Scoop out the pulp in a bowl with a spoon.
3.  Take the pulp, water and sugar in blender and blend it for 2-3 seconds.
4.  Now filter it through a sieve and collect the juice in a bowl.
5. Add the salt, garam masala and fresh black pepper powder. Mix it well.
6.  Pour into glasses. Refreshing passion fruit juice is ready to serve.

Dark colored grapes are considered to be the healthiest one. They are not only delicious but packed with lots of nutrients. Dark colored grapes promote better -blood sugar level, cardiac health, brain function, and control obesity.  I have prepared lassi with these grapes.  Here is whole process how we can make lassi with it:
Ingredients
1.5 cups of curd
20  seedless black grapes
1.5 tsp of sugar
1/4 tsp of black salt or to taste
1/2 tsp of roasted cumin powder
1/4 tsp of crusher black pepper
few mint leaves
Method
1. Wash the grapes. If it has seeds then make halves of it and remove the seeds. Here I am using seedless black grapes
2. Take curd, black grapes, sugar,salt in big zar of blender and blend it till smooth.
3.  Transfer it into serving glasses.
4.  Now add hand torn mint leaves,and roasted cumin powder and mix it with spoon.
5.  Sprinkle fresh crushed black pepper..
6.  Black grapes lassi is ready to serve.  It can be served by adding ice cubes or of normal temperature.

Kacchi lassi is very popular in Greater Punjab area.  It is a rustic/desi drink.  In summer. it gives very cool and soothing effect after coming from scorching heat. This lassi is made and served on Nirjala ekadshi, chabbil/payoo to the thirsty passersby on the road. Children enjoy it a lot.  It has many health benefits too.  Making kacchi lassi is very simple and easy.  Even children can make it.  Here below is given the whole process how we can make it:

Ingredients:
1 cup of fresh milk
5 cups of water
4 tbsp of sugar/roohafja to taste
1 tbsp of soaked sabza/tukmaria.sweet basil seeds
Method 
1.  Take water and milk in a jug.
2.  Add sugar or roohafja or both.  In villages, little roohhafja is added just to give it a color, therefore, they add both sugar as well as rooh-hafza.
3. Cool and refreshing plain kacchi lassi is ready to serve.
4. Add soaked sabza seeds and rooh-hafza. Serve chilled with ice cubes.
Tip
Serve at day time only.
Do not keep for long hrs.  Prepare and consume immediately.
