Today I am sharing with you a very delicious white bean soup recipe. It takes little time to cook but it is very healthy and yummy. White kidney beans are rich in fiber both soluble and insoluble. Once in your digestive system, soluble fiber binds itself with the bile acids and removes it out of your body. This prevents such bile acids from being reabsorbed in your liver and hence inhibits synthesis of harmful cholesterol.Rich in vitamin B9 -- also called folate or folic acid -- and low in fat, white kidney beans are heart-healthy. Folate reduces the levels of the amino acid homocysteine in the bloodstream.White kidney beans are rich in vitamin B1, or thiamin, which is necessary for formation and operation of brain cells. Thiamin is a key component in the synthesis of acetylcholine, which ensures that your memory functions properly. When eaten daily, a 1-cup serving of white kidney beans can help improve and maintain your cognitive function. A very delicious and healthy recipe on your way. White Bean Soup

Ingredients
  • 2 cups white kidney beans
  • 2 big tomatoes chopped
  • 1 big onion chopped
  • 10 garlic cloves crushed
  • 1/2 tsp dried rosemary
  • 1/2 tsp thyme
  • 6 cups vegetable stock
  • 1 tbsp fresh cream / Greek yogurt
  • 2 tsp olive oil
  • 1 tsp grated cheese (optional)
  • 1 tbsp lemon juice
  • to taste tsp salt and pepper
Cooking Directions
  1. Soak beans in water overnight. Now in a heavy bottom pan heat oil add crushed garlic and onion. Stir for few second then add white beans, tomatoes, rosemary, thyme, salt and pepper and vegetable stock. Cover and in a slow flame cook for 2 hours or until the beans are soft. To make it more colorful you can add finely chopped spinach and cook for another 20 minutes. Now add grated cheese if using and fresh cream or Greek yogurt which one you prefer to use and lemon juice. Garnish with cilantro or parsley and serve hot. Your delicious yummy white bean soup is ready to relish.

It's quick to make and awesome creamy to have with chips nachos or you may even use it as a bread spread. Enjoy delicious green dip and wish you all HAPPY ST. PATRICK"S DAY. Enjoy green.



Green Dip

Ingredients
  • 1 cumber cut into dices with skin
  • 1 green bell pepper
  • 1 onion cubed
  • 6 to 8 garlic clove
  • 1 small boiled potato
  • 1/2 tsp thyme
  • 1 tbsp finely chopped mint and cilantro leaves
  • 2 tsp olive oil
  • 1/2 tsp butter
  • 1 tsp fresh cream
  • 4 tbsp lemon juice or to tatse
  • 2 pinch sugar
  • to taste black salt and pepper
  • 1/4 tsp chilly flakes to garnish
Cooking Directions
  1. Heat oil in a pan add garlic, onion, green bell pepper, cucumber and potato with black salt, pepper and sugar and saute for a minute or two. Then cool the mixture and put it in a blender with butter, finely chopped mint and cilantro, thyme. Blend till the mixture is very smooth. Then add lemon juice and fresh cream and mix well. Garnish the dip with chilly flakes and serve with nachos or chips.

Today I am sharing with you all a very delicious Asian flavored Sesame Cucumber salad. Cucumber is very healthy a good source of Vitamin B. Sesame And Cucumber Salad

Ingredients
  • 2 cucumber
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • 1 tbsp white sesame seed ( slightly toasted)
  • 1 tsp sugar
  • to taste salt and pepper
Cooking Directions
  1. With a sharp knife, slice the cucumbers into circles.
  2. Combine rest of the ingredients in a large bowl and toss together until completely incorporated and the sugar has dissolved. Now add the cucumber slices and mix with the ingredients. Serve immediately at room temperature. To make it more eye appealing add few small cubes of tomatoes and spring onion. Your delicious sesame cucumber salad is ready.

Bloody Mary Mocktail

Ingredients
  • 1/2 cup tomato juice
  • 1 tsp tobaso sauce
  • 1 tsp ginger juice
  • 1/4 tsp mustard sauce
  • 1 tbsp lemon juice
  • 1/2 tsp sugar (optional)
  • 1 tbsp roasted poppy seeds
  • 1 pinch black salt
  • 1 pint club soda
Cooking Directions
  1. Take tomato juice, ginger juice, tobasco sauce, mustard sauce, lemon juice, sugar and black salt. Mix well. Strain the mixture.Now take the mixture in a shaker and add chilled club soda. Give one good shake. Rim the serving glass with toasted poppy seed. Add the chilled hot and spicy Bloody Mary mocktail. Garnish with lemon rind. Spinach Pepper And Coconut Clear Soup

Ingredients
  • 1/4 cup small coconut chunks
  • 10 to 12 big spinach leaves
  • 4 seedless red banana pepper chopped
  • 1/4 tsp coriander powder
  • 1 tsp olive oil
  • 1 tsp butter/ diet butter
  • 1 tsp very thin cheese slices
  • 1 tsp fresh cilantro/ mint
  • 1 bowl clear vegetable stock/ water
  • 1 tsp lemon juice
  • to taste salt and pepper
Cooking Directions
  1. Heat one teaspoon oil in pan. Add the coconut chunks. Add coriander powder. Fry till little golden. Then add chopped pepper. Fry for few second then add the spinach leaves. Salt and pepper. Mix well. Add bowl of clear stock or water. Let it come to boil. Cook for 6 to 8 minutes. Add butter and lemon juice and chopped cilantro or mint leaves the one you like. Put off the flame. Ladle the soup in the bowl. To give a feel good feeling add few thin slices of cheese if you want. Enjoy a hearty healthy comfy spinach pepper and coconut clear soup.
