Pasta With Roasted Pumpkin

Today I will share with you all a very delicious creamy pasta with roasted pumpkin topping. This dish is a blend of creamy sweetness. It may seem a little heavy as cheese and cream and milk all are added but I also use pumpkin which is an extremely nutrient dense food, meaning it is chock-full of vitamins and minerals but low on calories.
Pumpkin is one of the best-known sources of beta-carotene, a powerful antioxidant known to give orange vegetables and fruits their vibrant color and which is converted to vitamin A in the body. Consuming foods rich in beta-carotene may reduce the risk of developing certain types of cancer, offer protection against asthma and heart disease, and delay aging and body degeneration.Eating pumpkin is good for the heart! The fiber, potassium and vitamin C content in pumpkin all support heart health. Consuming adequate potassium is almost as important as decreasing sodium intake for treatment of hypertension (high-blood pressure). Other foods that are high in potassium include cantaloupe, pineapple, tomatoes, oranges, spinach and bananas.
Increased potassium intakes are also associated with a reduced risk of stroke, protection against loss of muscle mass, preservation of bone mineral density and reduction in the formation of kidney stones.
For women of child-bearing age, consuming more iron from plant sources such as spinach, beans, pumpkin, tomatoes, and beets appear to promote fertility, according Harvard Medical School's Harvard Health Publications. The vitamin A in pumpkin (consumed as beta-carotene then converted to vitamin A in the body) is also essential during pregnancy and lactation for hormone synthesis.
Plant foods like pumpkins that are high in both vitamin C and beta-carotene offer an immunity boost from their powerful combination of nutrients.

Pasta With Roasted Pumpkin
Ingredients
  • 1 cup penne/ ratatouille pasta cooked
  • 1tsp garlic finely chopped
  • 1/4 cup milk
  • 3 tbsp grated cheese
  • 1 tsp flour
  • 1/4 cup fresh cream (optional)
  • 1 cup cubed pumpkin
  • 1 1/2 tsp butter / diet butter
  • to taste freshly crushed pepper
  • to taste salt
  • 1/2 tsp mixed Italian herb (optional)
  • 1/2 tsp lemon juice (optional)
  • 1 tsp grated cheese for garnish
Cooking Directions
  1. Boil water in a steamer and steam the pumpkin cubes till little tender. Heat 1 tsp butter in a pan. Add chopped garlic. Place steamed pumpkin cubes ( with it I added few cubes of green bell pepper and red onion to add more color n crunch . You may or may not use it ) in an even layer across the bottom of the skillet and allow to pan-fry until lightly browned on the underside.Sprinkle salt and freshly crushed pepper. Put off the flame. Meanwhile cook the pasta.
  2. Heat 1/2 tsp butter on another pan. Add chopped garlic. Then add flour. Fry a bit util you get a mild frying flavor then add milk. Let it come to boil. Then add cheese, salt pepper and mixed Italian herb if using.Let the cheese melt and as the gravy thickens add cooked pasta and cream. Mix well. Put off the flame.Spread the creamy pasta top it with roasted pumpkin. Sprinkle grated cheese and lemon juice ( a dash of lemon juice act as a palate cleanser in this dish) skip if you want to. Salmon With Lemon

Ingredients
  • 2 fillets salmon
  • 1 tsp olive oil
  • 1 lemon thin wedges
  • 1 onion thinly sliced
  • 1 tsp pasta sauce
  • 2 pinch oregano
  • 1/4 tsp crushed pepper
  • to tsp salt

Cooking Directions
  1. Marinate the fish steaks with pasta sauce, olive oil, salt, crushed pepper. Now take a foil a little big than the fish steaks. Place a base of thinly sliced onion then place the fish and top with few thin lemon wedge. Make a airtight packets with each steak. Place it in crock pot. Cook in low fire for 1 to 2 hours or still the fish is done. Garnish with your favorite green . Mostly used is dill but I make a change using mint leaves.
  2. Those who want a quick fix they can use the foil packet in a pressure cooker and cook till one whistle. Then put off the flame. Let it rest in the cooker for 10 minutes. Then bring the packet out. Let it rest in room temperature for a hour before serving so that all the flavors mingle together and you get a juicy soft succulent fish dish. Enjoy poached salmon with lemon.

Shredded Egg Salad

I was looking for something new and simple for my dinner and then a I came across this simple shredded Egg Salad. It's not only easy to make but taste awesome. I am sure if you try it once you will love this eye appealing shredded egg salad.

Ingredients
  • 3 egg hard boiled
  • 2 tbsp grated cheese
  • 1 tsp chopped onion
  • 1/8 tsp olive oil
  • 1 tsp chopped parsley/ cilantro
  • to taste salt and pepper

Cooking Directions
  1. Take hard boiled eggs and let it rest in ice water for 6 to 8 minutes. Then peel of the shell . With a grater grate the eggs in a bowl. Then add grated cheese, greens of your choice, chopped onion. Very gently mix and drizzle a little olive oil. Serve and enjoy delicious shredded egg salad.

Ten Minute Pasta

In a busy day when you need some easy fix, can try this delicious ten minutes pasta recipe. Good for anytime whether it is for breakfast, lunch or dinner. It never turned me down after a busy day it bring smile to my face and my dear ones. Make it more healthy adding more veggies, egg or cooked shredded chicken. I am sure you will love this delicious ten minutes pasta recipe.


Ten Minutes Pasta

Ingredients
  • 250 gm pasta
  • 1/2 cup carrot chopped
  • 1 green bell pepper cubed 
  • 2 baby corn thinly sliced blanched
  • 1 onion sliced
  • 5 cloves garlic crushed
  • 1 tbsp pasta sauce
  • 2 tbsp cream cheese
  • 1 tsp olive oil
  • 1/2 tsp oregano
  • to taste salt and pepper

Cooking Directions
  1. Cook the pasta according to the pack instructions. In a small bowl mix cream cheese, pasta sauce and oregano. You can use any veggie or cooked chicken in it. I use the those are handy to me. Heat olive oil add crushed garlic, sliced onion, carrot , bell pepper , baby corn. toss all well. Add the cooked pasta with cream cheese pasta sauce mix. Mix well. Check the seasoning and add if needed.Put off the flame. You can make it more delicious by adding grated cheese if calorie count is not your take but I skip that temptation. Garnish with fresh mint sprig or basil. Your quick and fast 10 minutes pasta is ready to relish.

Ingredients
  • 2 cups ripe mango pulp
  • 2 cup sugar
  • 2 cup water
  • 1/2 tsp cinnamon powder
  • 1 tsp grated ginger
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp chilly flakes
  • 1/4 tsp salt

Cooking Directions
  1. In a pan take water and sugar . Let it come to boil until it is sticky. Then add cinnamon powder, grated ginger and lemon zest let it boil in medium flame. Then add ripe mango pulp. Boil till you get the thick jam like consistency stirring continuously. When you get the desired consistency add chilly flakes and mix well.Transfer mango jam to jars while hot. Allow to cool before sealing completely and store in refrigerator.
