Spicy Warm Kidney Beans Salad

Ingredients
  • 1 cup kidney beans boiled
  • 1 onion sliced
  • 1 tsp ginger chopped
  • 1 green bell pepper sliced
  • 1 tomato sliced
  • 1/2 cup green peas
  • 3 tbsp tomato garlic sauce
  • 1 tsp olive oil
  • 1/2 tsp dry basil/ or fresh leaves
  • 1 green chilly chopped (optional)
  • to taste salt and pepper
  • 1 tsp lime juice
  •  shaved cheese slices
  • 1tsp chopped parsley for garnish
  • 3 drops balsamic vinegar
Cooking Directions
  1. Heat oil in pan. Then add chopped garlic fry till little golden. Add sliced onion. Fry till translucent. Then add boiled kidney beans, boiled green peas, sliced green bell pepper, salt and pepper. Stir for 2 to 3 minutes. Then add tomato garlic sauce. Mix well. Add sliced tomato and green chilly if using. Mix well. Put off the flame. Add lime juice. Now garnish with shaved cheese slices...more the merrier ...;) , chopped parsley and drops of balsamic vinegar. Serve and relish warm spicy kidney bean salad.

Happy Halloween With Pumpkin Mushroom Soup

Ingredients
  • 1 kg Pumpkin
  • 1 head garlic
  • 1 tsp rosemary powder
  • 1 tsp olive oil
  • 10 button mushroom cut into halves
  • 1 tsp butter
  • 1 tomato garlic sauce
  • 1 small onion chopped
  • 3 to 4 cups chicken stock
  • 1/2 tsp dry roasted coarsely grind cumin powder
  • 2 cube grated cheese
  • 1/2 cup fresh cream
  • 1 tsp olive oil
  • 1 tsp lemon juice (optional)
  • to taste salt and pepper
Cooking Directions
  1. Take the flesh of pumpkin rub it with rosemary and mashed garlic drizzle olive oil and roast in oven till bit tender. Cool down and then make a smooth puree. Heat butter in pan and place the mushroom cook over high heat until the moisture is cooked off. Add the tomato garlic sauce toss and keep aside. Take another sauce pan add olive oil then chopped onion. fry till translucent. Add the pumpkin puree. Stir for 2 minutes.
  2. Add chicken stock. Let it come to boil. Then simmer it for 10 to 12 minutes in low heat. Now add grated cheese. Adjust seasoning. Mix well. Then add fresh cream, cook for another one minute. Put off the flame. Sprinkle coarsely ground cumin powder. Mix the cooked mushroom in it. Sprinkle little lemon juice if needed. You can do it another way also ladle the soup in a bowl and then place the mushroom in one side as garnish. Enjoy a happy Halloween with hot Pumpkin Mushroom yummy soup.

 A very delicious healthy and filling salad good at any time of the day. This lentil salad idea is inspired from the recipes of  two good friends of mine Jagruti and Shobha who are both wonderful food bloggers and very beautiful ladies inside out......you can check the delicious varieties of this recipe and many other mouthwatering dishes in their blogs. Inspired from them I just twisted little bit and made my version and it comes out awesomely delicious. Two toasted brown bread ...one apple and a bowl of yummy healthy lentil salad what more can you ask for to enjoy a filling breakfast.



Healthy Lentil Salad

Ingredients
  • 1 cup boiled yellow Bengal gram/ sweet corn
  • 1 big tomato chopped
  • 1 cucumber chopped
  • 1 onion chopped
  • 1/2 cup coconut grated
  • 1/2 tsp grated ginger
  • 1 tbsp tomato sauce
  • 2 tbsp lemon juice
  • 1/2 tsp chilly flakes or sauce ( optional)
  • 2 tsp oil
  • 2 tsp grated cheese (optional)
  • to taste salt and pepper
Cooking Directions
  1. Boil the lentil or sweet corn whatever you prefer to use until bit crunchy and not too soft. Strain and let it dry. Now in a small bowl take oil, salt , pepper, chilly flakes or sauce if using and tomato sauce and lemon juice. Mix well. Take a big bowl take the lentil and grated coconut, ginger and chopped cucumber , tomato and onion. Add the vinaigrette and grated cheese. Mix well and serve lentil salad immediately.

Zero oil vegetable soup is a very delicious and healthy soup. Good for the weight watcher and heart healthy too. You can  take and mix any vegetable of your choice. I just suggest  few which I like.One caution while choosing the vegetables if you are pregnant or planning such then skip raw papaya. The Papaya latex's main constitiuants are papain and chymopapain which have teratogenic (abnormalities of physiological development) and abortifacient (Can induce an abortion) effects . It does this by increasing the chances of uterine contractions as the papain acts like prostaglandin and oxytocin which are known to put a mothers body into labour and hence an adverse effect on the babies and mothers health. I just want all my readers to stay safe healthy and happy. I am sure you all will like this completely oil free comfy soup. Enjoy.



Zero Oil Vegetable Soup

Ingredients
  • 2 carrots cubes
  • 4 to 6 okra cut into halves
  • 4 to 6 big chunks of bottle gourd with or without skin
  • 4 to 6 big chunks of skinless raw papaya
  • 2 to 3 baby potatoes optional
  • 6 to 7 french beans head and tail off and then cut into big pieces
  • 1 big tomato cut into chunks
  • 1 big onion cut into chunks
  • 3 to 4 garlic clove
  • 1 inch fresh ginger chopped
  • hand full of chopped fresh coriander and mint leaves
  • 1/2 tsp whole cumin
  • 1/2 tsp whole coriander
  • 1 to 2 tsp lemon juice
  • to taste salt and pepper
Cooking Directions
  1. Boil water in a saucepan and then add all the vegetables, onion, ginger, garlic and chopped coriander and mint leaves. Cover with a lid and then cook till done. Now heat a pan and dry roast the cumin and coriander seed. Add the boiled vegetables in it. Add salt and pepper and let it boil for another 2 minutes and then end up with dash of lemon juice.
