Kids and grown ups both will be pampered  no doubt and as the bite size is too small even one with restriction can pop up a little one and enjoy a guilt free pleasure. Crazy Cake BItes

Crazy Cake Bites

Ingredients
  • 100 g sunflower oil
  • 2 eggs
  • 100 g castor sugar or to taste
  • 50 ml fresh orange juice
  • 25 g candied orange peel chopped
  • 20 g sultana
  • 25 g chopped mixed nuts
  • 120 g self raising flour
  • 1/4 tsp baking soda
  • 1 pinch salt

Cooking Directions
  1. Grease, line and grease a 20 x 7.5cm loaf pan and preheat oven to 175°C. Sift flour and bicarbonate of soda to a mixing bowl. Combine canola oil, sugar, eggs, fruit juice . Stir until sugar dissolves. Pour mixture into the flour and add all the fruit peel, sultana and nuts. Use a wooden spoon to stir until well blended. Transfer batter into prepared loaf pan and bake for 35-40 minutes or until cooked through when tested with a wooden skewer. Once the cake cool up. Make bite size pieces of this orange cake. Make two batch. Now add butter with mixed fruit jam. Heat a little so that they both melt and mix well. Now roll this cake bites in it. Make one batch of this jam rolled cakes. Melt chocolate in another pan. Now roll other batch in it. Plate each batch side by side and then I top them with cadbury shots . You can use your own creative idea to make it more interesting. Wish all my friends a very Happy New Year 2013. Just few hours left to enter a whole new year and here I am to share with you a delicious herbed chicken recipe as promised in my earlier post broccoli rice. I am sure you all will like this yummy and healthy chicken with this lovely salad. Enjoy !



Herbed Chicken With Radish Pepper Salad

Ingredients
  • 4 boneless chicken breast peices
  • 1tsp chopped ginger
  • 2tsp chopped garlic
  • 1/4 cup finely chopped fresh cilantro and mint leaves
  • 1/2 tsp thyme
  • 1tbsp lemon juice
  • 2tsp olive oil
    For Radish Pepper Salad
  • 1/2 cup radish strips
  • 1/2 cup red and yellow bell pepper
  • 1/4 cup carrots strips
  • 1 onion rings
  • 2tsp mustard sauce
  • 1tsp red whine vinegar
  • 1/2 tsp sugar (optional)
  • 1 tsp olive oil
  • to taste salt and pepper
Cooking Directions
  1. Make smooth paste of cilantro, mint, ginger, garlic.
  2. Add thyme, olive oil, salt, pepper and lemon juice. Mix well.
  3. Marinate the breast piece with this herbed mixture for 4 to 5 hours.
  4. Grill on a medium flame about 6 to 8 minutes on each side.
  5. For radish pepper salad. Blanched radish and carrot.
  6. Take a oil, mustard sauce, sugar if using, salt, pepper, red whine vinegar in a bowl and mix well. Now in a bowl take pepper , radish and carrot add the vinaigrette. Mix well and serve with herbed chicken.You can also serve broccoli rice with this and  have a delicious complete  meal.

Just four days  left when we will be in a totally fresh New year 2013.In this New Year rush if you want something to cook that is really quick and easy then Broccoli rice can be a good choice.It is healthy, quick to cook and even you can use your leftover rice and it taste awesome. You can please your guest and your loved ones within minutes. So what are you looking for give broccoli rice a try and make your New Year delicious, special and stress free.



Broccoli Rice

Ingredients
  • 2 to 3 cups cooked  rice (basmati)
  • 1 cup small florets of broccoli
  • 1/2 cup chopped red bell pepper
  • 1/2 cup finely shredded beetroot
  • 2 tbsp butter/ olive oil
  • 1 chicken seasoning cube
  • 1/2 tbsp chopped ginger
  • 1/2 tsp chopped garlic
  • 1/2 tsp sugar
  • to taste salt and pepper

Cooking Directions

  1. Heat butter or oil . Add chopped ginger fry till red then add chopped garlic. Stir for few seconds. Add broccoli, beet root and red bell pepper. Stir and cook for 2 minutes. Add the cooked rice. Add chicken seasoning cube, sugar, salt and pepper. Stir for 2 to 3 minutes. Serve hot with delicious herbed chicken .....coming up next.
