Fiery Prawn

Fiery prawn is a very delicious prawn dish. In this recipe and last few days if you are following my posts then you  must have notice that I am adding green chilly as green chilly is loaded with health benefits. Green chillies are rich sources of antioxidants and this makes them act like janitors of the body. They can protect the body against free radical damage giving you natural immunity to cancer and also slowing down the ageing process.Indian green chillies are rich sources of Vitamin C. You might have noticed that having chillies helps you open up your blocked nostrils. The Vitamin C in green chillies strengthens your natural immunity to diseases.Green chilli peppers are also rich in Vitamin E that is essential for producing certain natural skin oils.All the good things that you get from the chillies come at the cost of no calories. Chillies have zero calories and thus you can have them even when you are on a diet to lose weight.So with all this benefits I am sure you will love this yummy fiery prawn. Enjoy fiery prawn.


Fiery Prawn

Ingredients
  • 12 to 15 small prawn
  • 3 onion finely sliced
  • 1 Indian green chilly chopped 
  • 1/2 tsp tomato garlic sauce
  • a pinch sugar
  • 2 tsp olive oil / butter
  • 1/2 tsp lemon juice
  • to taste salt

Cooking Directions
  1. Heat oil or butter whatever you are using in a pan. Then add finely sliced onion. Fry till little soft and golden then add the prawn and chopped green chilly. You can skip green chilly if you want it to be less fiery and substitute it with pepper powder. But green chilly do give a peppy jerk in taste bud and it's healthy too. Then fry prawn for another 2 minutes. Add pinch of sugar, tomato garlic sauce and salt. Mix well. Sprinkle little bit of lemon juice and put off the flame. You can stuff this as sandwich filling or just have it as a side dish with a hard toast bread. I am sure you will love fiery prawn any time.

This tri color one bite appetizer is to celebrate Indian Independence. I am sure you all will love this tri color one bite appetizer with caramelized sesame dip. Enjoy.

Tri color bite appetizer With Caramelized Sesame Dip

Ingredients
  • 10 carrot thick slices peeled
  • 10 small cheese cubes
  • 10 fresh leaves of coriander
  • 1/2 cup cream cheese/ Greek yogurt/ hung curd
  • 1/2 tsp soy sauce
  • 1/2 tsp mustard sauce
  • 1 tsp sugar
  • 1 tbsp roasted sesame seed
  • 1 tsp lemon juice
  • to taste salt and pepper
  • 10 small skrewers
Cooking Directions
  1. Thread coriander leaves ( you can use mint leaves too), cheese cube and carrot slice in to each skewer and keep aside.
  2. In a bowl take cream cheese or yogurt or hung curd whatever you are using add soy sauce, mustard sauce, salt, pepper, lemon juice. Mix well. Caramelize the sugar then add the roasted sesame seed. Mix. Add this caramelized sesame in the dip. Mix well. Dip Dip tri color one bite and relish.

Spicy Baby Corn

Sharing with you all today a delicious yummy spicy baby corn recipe you all will love. You can change the recipe if this is too hot for your taste bud.Skip green chilly and instead of Manchurian sauce  use only sweet chilly sauce. I am sure with little creative add from your side you can make this spicy baby corn more delectable. So enjoy yummy tasty fiery spicy baby corn.


Spicy Baby Corn

Ingredients
Spicy Baby Corn
  • 12 to 15 baby corn
  • 1/2 tsp garlic paste
  • 1/4 tsp pepper powder
  • 2 tbsp cornflour
  • 1 egg
  • 1 onion finely chopped
  • 6 to 8 garlic chopped
  • 2 green chilly chopped ( optional)
  • 1 tsp soy sauce
  • 1 tbsp Manchurian sauce
  • 1 tsp sweet chilly sauce
  • 1 tsp vinegar
  • 6 to 8 tbsp oil
  • to taste salt and pepper
Cooking Directions
  1. Blanched the baby corn so they became little soft. Chop them into small bite size pieces. Now in a bowl take garlic paste, red chilly powder,cornflour and salt. Mix well. Add beaten egg. Mix well. Your batter is ready. Heat 6 tbsp of oil . Dip the baby corn pieces into the batter. Deep fry them till little golden then drain them on a kitchen towel. Now in another pan heat 1 tbsp of oil add chopped garlic fry a little. Then add chopped onion fry little. Then add fried baby corn, soy sauce, Manchurian sauce, sweet chilly sauce, chopped green chilly if using, salt and pepper. Toss well. So that the sauces get well mixed with the fried baby corn. Now add a vinegar. Toss once again and put off the flame. Your yummy super spicy baby corn is ready. You can sprinkle finely chopped spring onion to add fresh color to the dish. Enjoy with noodles or simple munch as a fiery starter spicy baby corn.

Thin Spicy Lamb Patties

Ingredients :
  • 2 cup ground lamb / goat meat
  • 2 onion finely chopped
  • 3 tbsp garlic paste
  • 1 tbsp ginger chopped
  • 4 tbsp grated cheese
  • 1/2 tsp mixed dried herb/ spices
  • 2 tbsp fresh coriander and parsley finely chopped
  • 1 tbsp fresh mint chopped
  • 1 tbsp red chilly sauce (optional)
  • 1 tsp tomato sauce
  • 2 to 3 oil
  • to taste salt and pepper

Cooking Directions
  1. Take a bowl in it take ground lamb, cheese, onion, garlic, ginger, cheese, dry herb or spices (what ever you are using), bread crumb, fresh coriander, mint and parsley, red chilly sauce, tomato sauce. Mix together until well combined. Roll the mixture into equal size balls, then press to flatten. Place on a plate, cover and refrigerate for 5 minutes.
  2. Heat a hot plate or grill to medium-hot and oil the surface well. Place the patties on the hot plate and cook for 4 to 6 minutes on each side or until cooked through. Serve the patties with a simple side salad .

Ingredients
  • 6 cream crackers
  • 3 egg yolk hard boiled
  • 12 thin slices of apple
  • 6 grapes
  • 3 tbsp Indian cottage cheese
  • 1 tbsp mustard sauce
  • 1 tbsp tomato sauce
  • 1 tsp cream cheese
  • 1/2 tsp black salt
  • 1/2 tsp pepper
  • 1/2 tsp roasted cumin
  • 1 tsp finely chopped parsley/ coriander/ mint leaves

Cooking Directions

  1. In a small bowl mix black salt, pepper and roasted cumin. Keep aside.
  2. In a bowl mix Indian cottage cheese, cream cheese, tomato sauce and mustard sauce. Mix very well. Keep aside.
  3. Now take the cream crackers, make a small layer of cottage cheese, then top with hard boiled egg yolk. Garnish with grapes and apple slices. Sprinkle mixed spices prepared earlier and then sprinkle little green of your choice. Your healthy delicious finger food is ready to serve.

Onion rings are very common and loved snacks in United States, Canada, United Kingdom, Ireland, Australia, and some parts of Asia.They generally consist of a cross-sectional "ring" of onion (the circular structure of which lends itself well to this method of preparation) dipped in batter or bread crumbs and then deep fried. Today I am sharing with you all a very delicious and easy to make onion rings. I am sure all of you will love to enjoy this crispy crunchy onion rings.

Ingredients
  • 4 large onion
  • 11/2 cup refined flour
  • 3 tbsp cornflour
  • 2 egg
  • 1/2 tsp baking powder
  • 1/2 tsp pepper powder
  • 4 tbsp milk
  • 1 cup oil
  • to taste salt

Cooking Directions
  1. Peel the onion and slice it thick. Separate the onion roundels. Keep away the middle part only use the outer rings. Now in a bowl sieve together refined flour, cornstarch, salt, pepper powder and baking powder. Add 1 tbsp of oil, milk and egg. Whip this batter with whisk well so to make which is not too thick nor runny. Heat oil in fry pan. Dip the onion rings in the batter and then deep fry them till crisp and brown. Serve hot with your favorite sauce or ketchup. Enjoy crispy delicious onion rings.
    Crispy fried onion rings are my favorite while I am watching movie or cricket. As all you are my friends I can share a secret that I too love to go lazy and sit back in my couch and enjoy a movie or a match specially when it's cricket or football and spend a no cook day. Previously there was no option but our local restaurants whom we have to call a day prior and book a meal and then send someone to bring that back to home but now it's so easy I just go online to foodpanda select my city and choose my favorite food joint and within hours hot ready delicious food of my choice is right on my table...foodpanda work just as a genie. For Cricket World Cup 2015 there are some special coupons voila it's a delicious fun I am enjoying.

Ingredients
  • 6 mini cheese stuffed buns
  • 1 egg
  • 1tsp onion juice
  • 1tsp ginger n garlic juice
  • 6 heart shaped beetroot sliced blanched in vegetable broth
  • 3 to 4 tbsp crumb
  • 1 tsp salt n pepper
  • 1/2 cup vegetable oil

Cooking Directions
  1. Whisk egg with onion, garlic, ginger juice, salt and pepper. Dip the buns in egg mixture and then coat with crumbs. Fry till golden. If you want to use less oil use air-fries to fry them. It will be crispy outside and gooey within. Take them out. Place the blanched beetroot slice on them. Fix them with small wooden skewers and then enjoy the crispy fried cheesey buns with your favorite dip or sauce. Enjoy this mini delights as your V-day special appetizer.

Chicken Spring Roll

Spring rolls of different shapes, sizes and fillings have been a popular snack in Asia for centuries. It is believed that spring rolls originated from China. It was a seasonal food consumed during the spring, started as a pancake filled with the new season's spring vegetables, a welcome change from the preserved foods of the long winter months.Today I am sharing a very easy and quick spring roll recipe.I am sure you will love it.The best part of spring roll stuffing is that you can fill it up with any winter veggies, sprout, fish and meat and make it as healthy as you can just keep in mind that the stuffing you put in is dry or else it will make the spring roll wrapper soggy and then it's tough to fry. In today's recipe if used a simple yet yummy stuffing,  you can even use leftover chicken to make this stuffing. Enjoy Chicken spring roll.



Chicken Spring Roll

Ingredients
  • 10 spring roll sheet
  • 1 cup cooked chicken shredded
  • 1 onion finely chopped
  • 1 bell pepper finely chopped
  • 1tsp soy sauce
  • to taste salt n pepper
  • 1 cup oil for frying
Cooking Directions
  1. In a bowl take shredded chicken, onion, bell pepper, soy sauce, salt n pepper. Mix well .Defrost the wrapper for 30 minutes before using or as per package instruction. Take each wrapper on the work surface in a rectangular way. Place 1 tbsp of stuffing in one end of the wrapper now roll tight and then fold from the left n then from right. Make a envelop Finally roll it completely and seal the edge using a little cornflour/wheatflour-water mixture. Heat the oil in a deep non- stick pan and deep-fry, 2 rolls at a time on a medium flame, till they turn golden brown in colour from all the sides.Then place them all in a kitchen paper so the excess oil get absorbed.Now place them on a plate and serve immediately with your favorite hot sauce. I serve it with Thai chilly garlic sauce.
  2. For those who think it is quiet tough to fold the spring roll , you can put the stuffing and then fold like a triangle. It look quiet interesting, and then fry. Quick fix if you are in hurry or not too confident to fold spring roll correctly. Have fun with your folds and enjoy delicious crisp rolls or triangles..=P =D.

Burnt Garlic fish is a very delicious preparation where the fish takes up the flavor of  burnt garlic with the sweet and sour apple mango salsa it's just a heavenly combo to explore.Ripe mango add the sweetness and the and lemon add the zing. Fish it self is very healthy as it is rich in omega 3 fatty acid but with it I am sure  you will have some serotonin (happy hormones) secretion too. So have fun and and get go fishy!



Burnt Garlic Fish With Apple Mango Salsa

Ingredients
  • 2 pieces salmon/hailbut/ cod
  • 4 to 6 garlic
  • 1 /2 lemon juice
  • 2 lemon wedge
  • 1 tsp butter/ diet butter/ olive oil
  • salt and pepper to taste
  • For salsa
  • 1 apple chopped
  • 1 ripe mango chopped
  • 1 onion chopped
  • 1 tomato( seedless) chopped
  • 1 lemon juice
  • 1/4 tsp chilly flakes
  • 1tsp olive oil
  •  salt to taste
Cooking Directions
  1. Take butter in a grill pan and place the garlic on it then over it place the fish. There should be 3 to 4 garlic below the fish. Sprinkle salt and pepper and cover and cook the fish till it is well done in both sides and burnt garlic smell came out. Put off the flame. Bath the fish with lemon juice.Cover the lid let it rest for few minutes while you prepare the salsa.
  2. Now take a bowl add chopped tomato, apple, onion, chilly flakes, salt and olive oil and lemon juice. Mix well. Your salsa is ready. Place apple mango salsa in your serving plate and then place the cooked fish above it. This is a very delicious quick to make food you can have it any time. I am sure you all will love it.

Today I am sharing with you all a delicious spicy appetizer to make your Valentine's Day special -potato cheese garlic melba. Who said you can't taste love in small bites... a little less is always better. So a crispy yummy dose of snacks to rock your Valentine's day mocktail party.


Potato Cheese Garlic Melba 

Ingredients
  • 15 garlic melba toast
  • 15 thick slice of boiled baby potatoes
  • 1tbsp onion juice
  • 1tbsp ginger garlic juice
  • 15 small cheese cubes
  • 1 tsp roasted cumin powder
  • 15 small traingles of tomatoes
  • 1 tsp butter/ olive oil
  • 1tsp lemon juice
  • 1tsp chopped parsley
  • 15 thin almond sticks
  • to taste salt and pepper
Cooking Directions
  1. Marinate the boiled potato slices with onion,ginger garlic juice, salt and pepper for 15 minutes. Heat butter in a skillet now toss with salt, pepper and lemon juice.Put off the flame and let it cool down. Now arrange the melba toast place a single slice of potato, small cheese cube on it then a tomato slice and place a almond stick on it. Sprinkle toasted cumin powder and chopped parley on each toast. Serve immediately with your favorite drink.

For this recipe I use ingredients according to availability like instead of silken tofu, bonito flakes ( dried fish flakes) and wasabi I use regular tofu, boiled fish flakes and mustard sauce, so this Hiyayakko may not be the actual representative of the traditional recipe but trust me this is super easy recipe, loaded with health benefit and taste superb. Tofu supplies full spectrum of protein, calcium, vitamin and minerals. As all soy product tofu contains isoflavones. Isoflavones helps to reduce the risk of osteoporosis, and also menopausal symptoms such as hot flushes and mood swings. On the other hand fish used in this recipe is low in fat, high in protein and an excellent source of omega 3 fatty acids. Regular intake of fish can reduce the risk of various disease and disorders. Onions contain specific amino acids are called methionine and cystine and, among other things, they are very good at detoxifying your body from heavy metals.In fact, they are able to latch on to mercury, cadmium and lead and escort them out of the body. With all this healthy ingredients toady I prepare this delicious Hiyayakko. This dish needs minimum cooking, you just need to assemble and sit, relax and relish this wonderful healthy appetizer.



Hiyayakko/Japanese Cold Tofu


Ingredients

  • 1 block tofu/ silken tofu
  • 2 tbsp bonito flakes/  boiled fish flakes
  • 1 tbsp soy sauce
  • 3 tbsp slightly fried onion
  • a big drop of wasabi/ mustard sauce
  • 2 tbsp chopped green onion
  • 1/4 tsp grated ginger
  • 2 pinch sugar (optional)
Cooking Directions
  1. Take a big chunk of tofu or silken tofu. Now above it place the boiled fish flakes.
  2. On it place the fried onions. In a bowl mix soy sauce, ginger and sugar if using.
  3. Pour this soy sauce mixture above it. Now sprinkle green onion and pour a big drop of wasabi or mustard sauce. Serve chilled.

Begedil is a very popular Malay appetizer. Potato cutlet or potato patties are known as Begedil in Malaysia. It is very easy to make quick dish and those who are new to Malaysian cuisine then this dish is great to start with. With potatoes you can add green peas which are rich in iron and vitamin C, which helps to maintain our immune system, and carrots which provide a lot of nutrition to our body. This is indeed a great party food and you can enjoy with a tall glass of chilled mocktail. I am sure you will love this quick easy and delicious Malaysian appetizer.


Ingredients:

Big potatoes 3( peeled washed and cut into circles)
Spring onion 1 bunch finely chopped
Shallots 1 cup fried
Green peas ½ cup
Carrot ½ finely shredded
Turmeric powder 1tsp
Cilantro handful finely chopped
White pepper powder ½ tsp
Eggs 1 to 2 (beaten)
Oil for deep frying
Salt and pepper to taste

Chilly garlic soy sauce
Sweet Soy sauce 4tbsp
Chilly sauce 2tsp
Fried garlic paste 1/2 tsp tsp

Procedure:

Traditional recipe calls for deep fry the potato slices and drains oil then mash them in a dry bowl. But I just boiled them on salted water and mashed it . If you have no problem with oil and want to enjoy the real Malaysian taste go for the fried one otherwise take my route. I promise in this way too you will get a very delicious appetizer. One after another add all the other ingredients and mix well. Check the seasoning and shape them in a medium sized ball then press down lightly to make patties shape. Set aside. Now heat enough oil in a deep fryer. Coat each begedil in the beaten egg and fry till lightly golden. Traditionally it is served with chilly sauce but it is bit too hot for me so I make my own dipping sauce. Mix all the sauce ingredients together and your chilly garlic soy sauce is ready. Serve hot begedil with this dipping sauce or you can try it with mayonnaise.
