Find Good and Natural Recipes

Khichadi is considered a light, healthy and comfort dish.  It is very good to have it while stomach is upset.  It is prepared by mixing green moong dal and rice for patients, though it can be made with other dals too. Today I have prepared it in microwave with multi stage + delayed cooking.  Delay start cooking is very convenient function. With this feature, we can prepare food, even we are not at home or busy in other work. Here below is the whole process how to prepare khichdi with these functions and without(in simple microwave) too: Read carefully both the ways:
Ingredients
3/4 cup of mixed rice and green moong dal
salt to taste
1 tsp of turmeric powder
pinch of asafetida
1 tsp of cumin seeds
1 tsp of oil
1 tbsp of grated ginger
onion and tomato (optional)
Method
1. Wash the mixed dal and rice few times with water.
2. Take the dal and rice with 2.5 cups of water in ceramic pot . Its lid should be hole in it.
3. Add the salt, turmeric powder, cumin seeds, asfetida, ginger and oil.  If using onion and tomato can be added too now.  It is optional. Here I am making simple khichadi without it.
4. As we are making it in multistage cooking +delayed cooking .  So keep it in microwave on turntable and close the door of microwave.
5.  Now first of all clock should be set on exact time.
6.  First we have to set power level and time (multi stage) as we needed different different power level and time for cooking it. Therefore, press power level, it will show 100% .  Programme it for 3 minutes on 100% power.  Now again press power level to 50 %. and set the time 2 minutes.  Now again press power level to 30 % and set time for 15 minutes. Thus, we programmed 20 minutes time in total.
100%--------------3 minutes
50% ---------------2 minutes
30%---------------15 minutes
7. Now after setting power level and time press the clock icon to set the desired time for delay cooking. I wash the dal and rice at 9 AM. At least 2- 3 hours should be soaking time.  So I set the time for delayed cooking 11.30 AM. Then to confirm the time press the go/start icon.
8.  After setting the time for delay cooking, microwave oven clock will show the present time as usual.
9.  At exact 11.30 cooking is started.  After 20 minutes, khichdi is ready.
10. Now let it be in the microwave for 2 minutes as standing time.
11.  Now take out the pot from the microwave and stir.  Again cover it with lid till time of eating.
Khichdi in Simple Microwave
1. Wash dal and rice and soak it for 3 hours.
2.  Put these soaked dal and rice in a ceramic pot with salt, turmeric powder, ginger, asafetida, cumin seeds and 1 tsp of oil.
3.  Place the pot in microwave and cook it for 3 minutes on 100 % power.
4.  Now again cook it on 2 minutes on 50 % power.
5.  After that cook it on 30 % power for 15 minutes.  
6.  Now let it be for 2 minutes inside after cooking for standing time.
7.  Now take out the pot and stir and cover the lid till the time of eating.
8.  Healthy khichdi is ready to serve. It tastes great with ghee, pickle, curd, papad, and raita etc.
Tip
No need to stir in between in both ways.

Aaloo Kadhi can be eaten while observing fast.  During navratris fast, generally we get fed up eating fried stuffs every day.  This kadhi can be enjoyed with samo/samak/samkiye/sanwa rice pulav or with kuttu roti.  Some people eat turmeric during fast.  So if you are the one who doesn't take turmeric, kashmiri red chili can be used to give it a little color.  It is very easy and simple to make.  Moreover, it needs very few ingredients.  Here is the whole process how we can make it:
 Ingredients
3 medium sized boiled potato
1.5 cups sour curd
salt to paste
1 tsp of turmeric powder (optional)
1/2 tsp of red chili powder
1/2 tsp of garam masala
1 tsp of coriander seeds
few curry leaves
2 tsp of pure ghee/ oil
1 finely chopped green chili
few dried red chili chunks
handful of finely chopped cilantro
Method
1.  Boil and peel the potato.  Now mash it very smooth.
2.  Take curd in a big bowl. Add salt, turmeric, and red chili powder and whisk it for a minute.
3.  After that add mashed potatoes and 1 cup of water and whisk it for a moment.
4.  Heat the oil in a pan.  Now add the hand crushed coriander seeds, curry leaves and red chili chunks. Let it be slightly brown.
5.  Now add curd and potato batter constantly stirring.  
6.  When it starts boiling, it is time to stop stirring.  
7.  Now lower the heat to the minimum and cover the pan with a cover.
8.  Stir occasionally.  Let it cook till thick like kadhi.
9.  Potato kadhi is ready.  Remove from heat.
10.  Add garam masala and cilantro and stir.
Tip
Before boiling point, stirring is very essential.

Rice kheer is the queen among all kheers made with different things. It is made almost on all auspicious occasions.  Today I am writing the recipe of this delicious rice kheer.  Here is the whole process how I made it:
 Ingredients
2 liters of milk
3/4 cup of sugar
1/4 cup of basmati rice
10 almonds
7 cashewnuts
1 tbsp of chirongi
2 tbsp of kishmish
Method
1. Clean and wash rice.  Soak it for 1/2 an hour.
2.  Take a deep and heavy bottomed pan. First wash it and put 2 tbsp of water.  Now pour milk in it.
3.  As it starts boiling, add soaked rice to it and lower the heat to medium.
4.  Cook till it becomes very thick, occasionally stirring. 
5.  Add sugar and let it dissolve.
6.  Cook it for few more minutes and remove from the heat. It will take approximately 1.5 hour.
7.  Add sliced dry fruits and stir.
8.  Delicious rice kheer is ready to serve.  Enjoy it chilled or warm as desired.
 
Tips
1. Soaking rice gives better effects.
2. Don't add too much rice.
3.  Adding  few drops of pure ghee protects from spilling out.
4.  Add kishmish/raisins after soaking  in water for few minutes to the lukewarm kheer.  Never add to the hot kheer.
5. Wash the pan before starting cooking. In fact there should be 2-3 tbsp of water in it before putting milk in it.  It protects the milk from sticking to bottom.
6.  Keep the steel spatula all the times in it while cooking kheer, it protects too from burning to the bottom.

Tandoori roti  made from tortilla is quite easy and can be prepared in a very less time.  It hardly takes 2 minutes in whole.  Here is the whole process how we can make tandoori roti in OTG from wheat flour totilla:
Ingredient
wheat flour tortillas
Method
1. Preheat the OTG for 10 mintutes with upper and lower grill on, on the maximum temperature.  Here I have set on 250 degree C.  Tray should be inside the oven.
2.  Now place the tortilla on the heated tray and place it in the oven just near the lower grill.  Be ensure upper and lower grills should be on.
3.  Immediately it starts puffing up.  Check it after few seconds whether it has done. If done, turn it with a tong.  Cook for few seconds more on the other side.
4.  Totillla tandoori roti is ready and take out from the oven. It got ready in less than one minute.
Tips
1.  To make the perfect tandoori roti, oven should be heated properly.  Otherwise , you will get hard roti.
2. Some times tortillas sides open, in that case, reseal its sides with the back of the bowl.  Press it on the edges of raw tortilla before placing in the oven, in circular motion.
