Gobhi/cauliflower/phool gobhi is used for making many dishes.  Earlier I have written its parantha and sabzi recipe.  Today I am writing about its pakora/pakoda.  Here below is what is required and how it is made:
Ingredients
1 medium sized cauliflower
1 cup of besan
salt to taste
1 tsp of turmeric powder
1/2 tsp of chili powder
1 tsp of coriander powder
1/2 tsp of soanf/fennel powder
1 tsp of kasoori methi powder
1 tsp of garam masala
1 tsp of ajvain/carom seeds
small pinch of sodium bi-carb
1/4 cup of chopped cilantro
1 finely chopped green chili
1/2 tsp of lime juice
oil for frying
Method
1.  Wash the cauliflower and cut the flat florets.
2. Take the besan in a big bowl.  Add salt, turmeric powder, chili powder, garam masala, 1/2 tsp of lemon juice, coriander powder, soanf powder, carom seeds and mix.  Now make thick pouring consistency of batter.
3.  Next add finely chopped green chili, cilantro and kasoori methi powder. Mix thoroughly. After that add soda bi-carb and mix gently.  Adding soda bi-carb is optional.
4. Heat the oil in a frying pan.  Dip the cauliflower florets one by one in besan batter and fry light brown from both sides by turning with slotted spoon.  Now take out from the oil. Fry all the pakoras like wise.
5.  Now with the back of any flat bowl press very gently all the pakoras.
6.  Now again fry these pressed pakoras again till crisp.
7.  Crispy gobhi pakoras are ready to serve.

Wheat Daliya kheer is very nutritious and healthy dish ideal for breakfast. Here I have made this with very less milk.  Here below is how we can make it:
Ingredients:
1 cup of wheat daliya
3/4 glass of milk
2 tsp of pure ghee
1/3 cup of sugar or to taste
3 cups of water
Method:
1.  Take the daliya in a thick bottomed pan or in a pressure cooker.  Add 1 tsp of pure ghee and roast it till golden brown on low flame.
2.  Now add three cups of water and stir it well with spatula. Now close the lid and increase the flame to full.  As the first whistle comes, lower the flame and cook it for 5 minutes.  After 5 minutes remove from fire. As it cools off , open the lid and keep it on the flame again.
If making it in a pan, add 4 and 1/2 cups of water and let it boil on full flame,  As it starts boiling, lower the heat to the minimum and cover it with a lid.  Cook it till it gets soft.
3. Now add milk as to make it of kheer consistency, if you have less milk then increase the quantity of water while boiling and add milk as available. As it starts boiling, add sugar and 1 tsp of pure ghee.  Cook 1 minute more. Remove from fire.
4.  Add handful of mixed chopped , sliced dry fruits such as almonds, cashews and raisins.
5.  Delicious daliya kheer is ready to serve.

Moringa/drumstick leaves contain seven times the vitamin c of oranges, 4 times the vitamins A of the carrots, four times the calcium of milk, three times the potassium of bananas and two times the proteins of yogurt. In fact, these leaves are power house of nutritional value.  Last Sunday I made its leaves parantha in breakfast.  Here below is its full details:
 Ingredients
1.5 cups of wheat flour
1 cup of besan
3-4 handfuls of finely chopped drum stick/moringa leaves
1/2 cup of finely chopped cilantro with its stems
salt to taste
1 tsp of crushed ajvain
1 tsp of cumin seeds
1 tsp of garam masala
2 finely chopped fresh chili of any color
1 tbsp of finely chopped onion
1 tsp of grated ginger
1 cup of water for making dough
oil
Method
1. Sieve besan and wheat flour.  Add salt, garam masala, cumin seeds, ajvain seeds and mix well.
2. Now add onion, ginger, fresh chilies, drum sticks leaves, cilantro and mix well.
3. Make a soft dough with 1 cup of water.  Keep it for 10 minutes for rest. 2 tbsp of water is left after kneading the dough.
4.  Now again make the dough smooth  with hands for few minutes.
5.  Heat a tawa or flat pan on medium heat.
6.  Now make five balls out of it for making four paranthas.
7. Roll a round roti with rolling pin by applying plethan ( dry wheat flour) .
8.  Now in the centre of this rolled roti apply 1/4 tsp of oil and fold  it in any shape.  Here I have folded in sqaure shape.
9.  Place the rolled parantha on the tawa.  when it seems dry from one side, flip it over to the other side.
10.  Apply oil to both the sides and cook it till crisp.
11. Crispy drum stick leaves parantha is ready to serve.

Tips:
1. Applying oil to the roti before folding parantha is optional and can be avoided too.
2.  Parantha can be made in any shape.
3.  Round roti can be cooked without oil too.
4.  It tastes great if makes it spicy by putting crushed fresh chilies  which we can crush in mixer grinder.
