Find Good and Natural Recipes

Vegetarian enchiladas is Mexican dish.  Here I have made it according to Indian vegetarian taste. It is full meal complete in itself. Its making is very simple.  Here below is its full recipe:
Ingredients
4 tortillas
For Sauce
5-6 ripe tomatoes
1 red bell pepper
1 finely chopped onion
1" piece of ginger
salt to taste
4-5 sweet basil leaves
1 fresh chili
1/2 tsp of red chili powder
2 tbsp of white vinegar
3 tsp of sugar
2 tbsp of oil
For Filling 
1 cup of boiled rajma
1 green bell pepper
1 /4 cup of finely chopped onion
1 fresh green chili
salt to taste
1 tbsp of white vinegar
2 tbsp of oil
Method
Making of Sauce
1. Heat the oil in a pan. Saute onion and ginger then add roughly chopped  red bell pepper.  Cook it for 2 to 3 minutes.  After that add roughly chopped tomatoes, basil leaves, white vinegar, sugar, salt, fresh chili, red chili powder and 1/4 glass of water.  Cover the pan with lid and cook till it gets soft.
2.  Now let it cool off completely. 
3.  Now take it in container of blender and blend it till smooth.  chatpati tomato sauce is ready.
Filling
1.  Heat the oil in a pan. Add onion and ginger and cook it till translucent. After that add finely chopped green bell pepper , 2 tbsp of boiled rajma water and salt. cover the pan with lad and cook it till semi soft.
2.  Now add rajmah and slightly mash it with potato masher.  Now cook it till thick . Filling is ready.
Stuffing the tortilla
Take 1 tortilla cut into 2 halves and place 1 tbsp of stuffing on each half and roll it or take one tortilla and spread stuffing and roll and cut into two according to your baking tray size.  Prepare all the rolls from tortilla like this.
Preparing for baking
1. Take a baking tray.  Spread some sauce 1 inch thick layer on basing tray.  Now place all the tortillas roll on it.  Again spread the sauce over it.  cover completely with sauce.
2. Now spread some cottage cheese in cubes or by grating it.  Mozzarella cheese/Cheddar cheese can be used instead of cottage cheese.
3.  Preheat the OTG for 10 minutes. Now place the tray on middle rack.  Bake it for 10 minutes on 180 degree Celsius. Now upper rods turn on for broiling.  Broil it for 5 minutes.
4.  Now take out the tray and garnish with basil leaves, finely chopped green onion leaves.
Vegetarian enchiladas is ready to serve

Crispy Nachos Chips is a Mexican snacks item.  It is served with fresh salsa. Here I have made it with corn tortillas. It can be made in children party.  Children love it. In Few minutes it can be prepared with tortillas.  Here below is how it can be made:
Ingredients
Few corn tortillas
oil for frying
salt 
black pepper powder
Method
1.  Stack the tortillas on chopping board and cut into 8 triangles.
2.  Heat the oil in a frying pan. 
3.  Put into oil handful of tortillas one by one so that they should not deshape and stick to each other.
4. Fry till golden brown.
5. Take out with any spatula when it is done. 
6. Sprinkle salt and black pepper powder.  Crispy corn tortilla Nachos chips are ready to serve.
7.  Enjoy it with fresh salsa.

Kachalu/taro root is a fibrous root which gives a feeling of ful stomach for a longer times after having a small meal. It is very helpful in losing weight.  One cup of cooked kachalu contains 187 calories. Seeing its size, it seems impossible to boil.  But its boiling is very simple.  In pressure cooker, it takes hardly 8-10 minutes.  Here below is how we can boil it:
Ingredient
1 whole kachalu
half glass of water
Method
1. Wash the kachalu thoroughly with fresh water.  Take out its dirt properly by rubbing with cloth and water.
2.  Take the kachalu with half glass of water in a pressure cooker.  Close the lid.  Keep it on flame.
3.  When it starts whistling, lower the flame to sim.  Cook it for 8-10 minutes.
4.  Now remove from flame.
5.  Let the pressure cooker be cool completely.  Now open the lid and take out with any big spoon in a plate.
6.  when it cools off completely, peel and cut into desired pieces.  This boiled kachalu can be used in  making various dishes.

Salsa dip is tomatoes chunky chutney made with tomatoes, onion and different types of peppers. It is served with Mexican food specially with nachos.  It is very delicious, simple and easy to  make. Here below is how it can be made:
Ingredients:
3 medium sized tomatoes
1/4 cup of chopped onion
1/4 cup of chopped red bell pepper
1/4 cup of chopped green bell pepper
1 achari fresh green chili
handful of chopped cilantro
1 tbsp of lemon juice
salt to taste
1 tsp of roasted cumin powder
1/4 tsp of black pepper powder
1 inch piece of grated ginger
Method
1. Wash and chop tomatoes,onion  and all the peppers,
2. Take cilantro, roughly chopped tomatoes, red and green bell pepper, ginger, onion and green chili in the container of vegetable chopper. Blend or chop in it to coarse texture.
3. Now add roasted cumin powder, lime juice, salt, black pepper and
 chop again for few seconds.
4. Chatpati fresh salsa dip it ready.  Transfer it into a serving bowl and enjoy with crispy nachos.
Tips
To make it in smoky flavor roast the tomatoes and bell peppers on flame. Peel and make salsa.  Here I have made it with fresh which requires no cooking.

Murmara /puffed rice is used to offer Gods and Goddesses in temples. It is used in bhel and some namkeens. It is low in calories. One cup of murmure contains 54 calories. Today I am writing the recipe of its poha.  It is very delicious and easy to make.  Here below is its full recipe: 
Ingredients
2 cups of murmura
1 onion (medium size)
1/2 cup of mixed vegetables/peas
1 tbsp of oil
few curry leaves
1 tsp of black mustard seeds
pinch of asafetida
salt to taste
1/2 tsp of turmeric powder
1/2 tsp of sugar
1 tbsp of lemon juice
few peanuts
1 tsp of peanuts powder
1 tsp of roasted channa powder
1 green chili
Method
1.Soak the murmure in water for 10 minutes.
2 Drain out the water through a sieve.  Keep the murmure for 10 minutes.
3.Wash the frozen mixed vegetables or peas.  Put it in the soaked murmure.  
4. Heat the oil in a big frying pan. Add asafetida and mustard seeds and let it splutter till it stops it self. Now put curry leaves and peanuts. Now add onion and cook  it till translucent.
5.  Next add green chili, and murure along with salt, turmeric and sugar. Mix well.  Lower the heat.
6. After that add peanuts powder and roasted channa powder and lemon juice and stir well.  cook it for few minutes.
7.  Delicious murmura poha is ready to serve.
