Find Good and Natural Recipes

Kachalu/taro root is a fibrous root which gives a feeling of ful stomach for a longer times after having a small meal. It is very helpful in losing weight.  One cup of cooked kachalu contains 187 calories. Seeing its size, it seems impossible to boil.  But its boiling is very simple.  In pressure cooker, it takes hardly 8-10 minutes.  Here below is how we can boil it:
Ingredient
1 whole kachalu
half glass of water
Method
1. Wash the kachalu thoroughly with fresh water.  Take out its dirt properly by rubbing with cloth and water.
2.  Take the kachalu with half glass of water in a pressure cooker.  Close the lid.  Keep it on flame.
3.  When it starts whistling, lower the flame to sim.  Cook it for 8-10 minutes.
4.  Now remove from flame.
5.  Let the pressure cooker be cool completely.  Now open the lid and take out with any big spoon in a plate.
6.  when it cools off completely, peel and cut into desired pieces.  This boiled kachalu can be used in  making various dishes.

Salsa dip is tomatoes chunky chutney made with tomatoes, onion and different types of peppers. It is served with Mexican food specially with nachos.  It is very delicious, simple and easy to  make. Here below is how it can be made:
Ingredients:
3 medium sized tomatoes
1/4 cup of chopped onion
1/4 cup of chopped red bell pepper
1/4 cup of chopped green bell pepper
1 achari fresh green chili
handful of chopped cilantro
1 tbsp of lemon juice
salt to taste
1 tsp of roasted cumin powder
1/4 tsp of black pepper powder
1 inch piece of grated ginger
Method
1. Wash and chop tomatoes,onion  and all the peppers,
2. Take cilantro, roughly chopped tomatoes, red and green bell pepper, ginger, onion and green chili in the container of vegetable chopper. Blend or chop in it to coarse texture.
3. Now add roasted cumin powder, lime juice, salt, black pepper and
 chop again for few seconds.
4. Chatpati fresh salsa dip it ready.  Transfer it into a serving bowl and enjoy with crispy nachos.
Tips
To make it in smoky flavor roast the tomatoes and bell peppers on flame. Peel and make salsa.  Here I have made it with fresh which requires no cooking.

Murmara /puffed rice is used to offer Gods and Goddesses in temples. It is used in bhel and some namkeens. It is low in calories. One cup of murmure contains 54 calories. Today I am writing the recipe of its poha.  It is very delicious and easy to make.  Here below is its full recipe: 
Ingredients
2 cups of murmura
1 onion (medium size)
1/2 cup of mixed vegetables/peas
1 tbsp of oil
few curry leaves
1 tsp of black mustard seeds
pinch of asafetida
salt to taste
1/2 tsp of turmeric powder
1/2 tsp of sugar
1 tbsp of lemon juice
few peanuts
1 tsp of peanuts powder
1 tsp of roasted channa powder
1 green chili
Method
1.Soak the murmure in water for 10 minutes.
2 Drain out the water through a sieve.  Keep the murmure for 10 minutes.
3.Wash the frozen mixed vegetables or peas.  Put it in the soaked murmure.  
4. Heat the oil in a big frying pan. Add asafetida and mustard seeds and let it splutter till it stops it self. Now put curry leaves and peanuts. Now add onion and cook  it till translucent.
5.  Next add green chili, and murure along with salt, turmeric and sugar. Mix well.  Lower the heat.
6. After that add peanuts powder and roasted channa powder and lemon juice and stir well.  cook it for few minutes.
7.  Delicious murmura poha is ready to serve.

Fried Gorditas are made with corn flour in Mexico. It is quite similar to our poori.  The only difference is we can make it in advance and it remains fluffy all the time, even after many days. I made this in ladies kitty party, just microwaved 40 seconds in microwave before serving.  I served it with Rajma and imli water with onion flavor. Traditionally it is served as a sandwitch, which is filled with rajma paste, chutneys and salad. Here below is how we can make it:
Ingredients (12 pieces)
2.5 cups of makki ka aata
3/4 cups of all purpose flour
1 tbsp of baking powder
1/2 tsp of salt
1.5 cups of water
oil for deep frying
Ingredients for (55 pieces)
10 cups of makki ka aata
3 cups of maida/all purpose flour
4 tbsp of baking powder
3 tsp of salt
5 cups of water
Method
1. Sieve the makka+all purpose flour+baking powder and salt together through a sieve.
2.  Now make a dough with water.
3. Make 12 balls out of it.
4. Now place one dough ball between two wet plastic pieces and press it gently into round shape.
5.  Heat the oil in a frying pan.  Now fry the rolled gorditas in hot oil on medium flame. It should be puffed up.  One side atleast take 30 seconds.  One gorditas should be fried in 1 minute or little bit more.  Therefore adjust the heat accordingly.  Puffed gortditas remains in the same puffing position for many days.  It does not become flat after taking out of the oil.
6.  When it is done from both sides, take out from the oil.
Tips
1. When we place the rolled gordita in hot oil, there will be bubbling.  When bubbles settles, only then puff it gently with spatula.
2. Adjust the flame as one gordita should be fried in one minute.  Never fry in low flame, it will not fluff.
3.  Fry only one at a time.

'Burf wali kulfi  le lo' voice used to come in the afternoon in summer in our childhood. It is favorite of all children even we elders too. In my recent kitty party, I served it instead of juices.  Everyone loved it. Burf wali kulfi or frozen ice pops are very easy to make and even children can prepare it.  Here below is how we can make it:
Ingredients
Tipco orange juice or any other juice
few ice cream sticks
Popsicle mold
aluminum foil
wax paper
Method
1. Take any juice.  Here I have used Tipco orange juice or take out the juice form oranges.  Add sugar and little salt to it and mix well.
2.  Now pour the juice in Popsicle molds.
3. Cover it with aluminum foil. Now make a small cut with a knife, in which ice cream sticks can be inserted . Hole should be exact the same width of sticks otherwise it will not stand in the center.
4. Insert the ice cream sticks in the whole.
5. Keep the mold in freezer section of refrigerator for 8 hrs..
6. After that take out from the freeze. and keep the mold in water. burf kulfi will leave its side and it is the time to take out from the mould.
7. Tempting burf kulfi is ready to serve.
8.  If making for small parties, then place a wax paper in a plastic box and keep it on a small distance. Again put another wax paper on the ice pops and another batch of it can be kept on it.  In this way many layers of kulfis can be kept.. close the container and keep it in the freeze.  Take out only at serving time.
