Find Good and Natural Recipes

Mathris are tea time snack. It can be made of aata, maida, besan etc.It can be made in many shapes and sizes.  Here below is full recipe of tikoni jaali mathri:
 Ingredients
6 cups of all purpose flour/maida
salt to taste1/2 tsp of crushed black pepper
2 tsp of ajvain/carom seeds
1 tbsp of cumin seeds
1 cup of oil for moyan
1 cup+2 tbsp of water for dough
oil for frying
Method
1.  Sieve the all purpose flour/maida.
2.  Take maida in a big bowl.  Add all the dry ingredients salt, ajvain, cumin seeds, and mix.
3.  Now add oil for moyan. Rub it with both hands.
4.  Now make a hard dough with 1 cup+2 tbsp of water.
5.  Keep the dough for 15 minutes for rest.  Cover it with wet cloth or with any inverted bowl.
6.  Now divide the dough into small parts.  Make balls out of it.
7.  Roll the balls just like round poori.  Now cut it with knife in four parts. In each part make 2-3 cuts in a way from upper and lower and its sides part should be joined. See the mathri carefully.
8.  Heat the oil in a frying pan. Flame should be medium.
9.  Fry all the slotted mathris on medium hot oil. It will take time.  All the bubbles will disappear when it is done.
10.  Take out with any spatula from the frying pan.  Crispy and delicious slotted mathris are ready to serve.

Lacche wali mathri is a delicious mathri with very little sweetness,  Though its making is little tickey, but taking some cautions, it can be prepared.  We start loosing patience when its saata starts coming out. Here below is its full recipe:
Ingredients
1 cup of maida
1 tsp of oil for moyan
For Satta
1/4 cup of boora
1/4 cup of rice flour
2 tsp of pure ghee
oil for frying
Method
1. Take the maida/all purpose flour in a big bowl.  Add oil for moyan and rub with hands.
2. Now with 1/4  cup of water knead the dough which should be niether hard nor too soft. Keep the dough for rest for 15 minutes.
3. for preparing saatta take the pure ghee in  a bowl and add boora and rice flour to it.  Mix well.  It should not be too loose.
4.  Now divide the dough into two parts.  Make balls out of it.
5.  Roll each ball into a big roti by applying oil to the chakle and rolling pin.  Instead of chakla it can be rolled on any hard surface.
6.  Now apply saata to the rolled roti with fingers.  It should be very thin layer.  If apply too much it will come out while we again roll it.
7.  Now make tight roll of it.  Prepare the second roll from the other dough boll like wise.
8.  Now cut each roll into 3 pieces.  Don't cut too thin.
9.  Now grease your hand and place one piece on the palm in the way cutting place should be above and down and press gently with other hand's palm to flatten it.  Make it flatten it again very gently.  Now keep it on the hard surface and make two cuts in  middle of this mathri.  Prepare all the mathris like it.
10.Heat the oil in a frying pan.  Put a small piece of dough to check whether oil is hot or not. If it come out above immedialty, it means it is how.  Now lower the heat to medium.
11.  Now it is the time to fry all the mathris.  Fry only two or three at a time depending on the quantity of oil in which you are frying it.
12. On medium heat it will be crispy.  It needs patience.  When it gets crispy take out from the frying pan with any slotted spoon.
13.  Sweet multi layered mathri is ready.

Mathris are made in various flavours. Today I have made methi masala mathri.  It is very delicious and worth trying. Here below is in full details how to make it:
Ingredients
2 cups of all purpose flour/maida
salt to taste
1 tsp of ajvian
1 tsp of coarse black pepper
1/4 cup of oil for moyan
1/4 cup+2tbsp of water
handful of dried kasuri methi
1 tsp of cumin seeds
oil for frying
Method
1. Sieve the maida. Add salt, ajvain,cumin seeds, black pepper, and mix. 
2. Now add 1/4 cup of oil and mix it by rubbing with both hands.
3. Make a hard dough with 1/4 cup+2bsp of water.
5. Keep it rest for 10 minutes.
6. Now make it smooth with oily hands for few minutes.
7. Now make 25 small balls/pedis out of it. 
8. Roll it into small roundels. After that prick it with tooth prick or fork. 
9. Heat the oil in a frying pan on medium heat.
10. Fry all the masala mathris in hot oil on low to medium flame till golden brown.  It takes about 8 to 10 minutes. Take out from oil.
11. Crispy and flavorful methi mathris are ready to serve.

4. Make a hard dough with 1/4 cup of water. 
5. Keep it rest for 5 minutes.
6. Now make it smooth with oily hands for few minutes.
7. Now make 25 small balls/pedis out of it. 
8. Roll it into small roundels. After that prick it with tooth prick or fork. 
9. Heat the oil in a frying pan on medium heat.
10. fry all the mathis in hot oil on low to medium flame till golden brown.  It takes 8 to 10 minutes. Take out from oil.
