Find Good and Natural Recipes

Raita is an Indian side dish of yogurt  and it is made with various vegetables and leaves.  Here below I am writing the recipe of kathal/jackfruit raita.: 
Ingredients
1/2 cup of  jack-fruit pulp
2 cups of curd
1 tbsp of chopped mint leaves
1 tsp of chopped mint leaves
1/2 tsp of sugar
¼ tsp of finely chopped green chili
½ tsp of garam masala
½ tsp of roasted cumin powder
1/4 tsp of black pepper powder
½ tsp of cumin seeds
Pinch of heeng
Salt to taste
½ tsp of oil
Method
1. 1.  Smear oil on hands and knife.This step is very necessary to tackle the problem of latex or sticky  and milky substance.
2.  Take the raw jack fruit which is available in the market for making sabzi etc. Peel it and cut into pieces.  While cutting,  peel its seeds too with knife.  If it is tender then no need to peel it.
3.  Now take this kathal into pressure cooker with 1/4 cup of water and little salt. I boiled it in hawkins pressure cooker.  When it comes on full pressure and first whistle comes, keep the flame on sim for1 minute.  Now remove from heat. We need completely cool boiled kathal. When it gets cooled, mash it with the back of big spoon.
4. After that beat the curd in a big bowl. Add kathal pulp, chopped mint leaves, sugar, mint leaves, green chili, and salt.  Mix properly.
If oil free is making then add cumin seeds poder and garam masala and mix.  Oil free kathal raita is ready.  Next steps written below is with little bit oil. That is completely optional
5.  Heat the oil in a ladle. Add hing and cumin seeds .  Let it crackle till it stops itself. Add this to the raita.
6. Now add garam masala and cumin powder.
7.  Kathal raita is ready to serve.

Raitas are made with many vegetables and ingredients. Here I have made phulki raita.  It is very delicious and goes well with main meal.  It is very easy and simple to make.  Here below is its full recipe:
Ingredients
2 cups of curd
8-9 besan phulkis
1 tsp of sugar
1/4 tsp of garam masala
1/4 tsp of roasted cumin powder
black salt to taste
few mint leaves
Method
1. First of all prepare the phulkis/fulkis.  For this see the post on this blog Pakodi/Fulki.
2.  Soak the fulkis in water. If using fresh, soak it for 2-3 minutes in fresh water.  But if using frozen phulkis soak it in warm water for 5-7 minutes.
3.  Take the curd, sugar, salt in a bowl.  Beat the curd with spoon or beater.
4.  Now squeeze the phulkis/fulkis with very gentle hand.
5.  Add the squeezed phulkis in beaten curd.  Add all the spices and hand torn mint leaves too.  Mix it thoroughly with spoon.
6. Fulki raita is ready to serve.

Japanese cucumbers are generally thin skinned and never bitter in taste. In this raita, I have used japanese cucumber and Marua leaves.  It is very cool and refreshing.  Here is how I made it:
 Ingredients
1.5 cup of curd
1 grated Japanese cucumber
few sweet basil (marua) leaves
1/4 tsp of crushed black pepper
salt to taste
1/2 tsp of sugar (optional)
1/2 tsp of roasted cumin powder
1/2 tsp of garam masala
1/2 finely chopped green chili (optional)
Method
1.  Wash the cucumber and sweet basil leaves.
2.  Grate the cucumber and roughly chop the sweet basil leaves.
3.  Beat the curd with spoon. Dissolve the sugar. If thin skinned, no need to peel. Today I have peeled it.
4.  Add grated cucumber and marua leaves .
5. Now add salt, black pepper, garam masala, cumin powder, and green chili.  Mix properly with spoon.
6.  Cool and refreshing cucumber and marua raita is ready to serve.  Serve chilled.

Papaya is a natural source of vitamins and minerals that are essential for the normal functioning of the body. It is used in making many dishes.  Today I am writing how to make its raita.  Here below is the whole process :
Ingredients
1.5 cup of thick curd
1 cup of chopped papaya
black salt to taste
1/2 tsp of black pepper powder
1/4 tsp of garam masala
1/2 tsp of sugar (optional)
1/2 tsp of roasted cumin powder
handful of chopped cilantro
1/2 finely chopeed green chili (optional)
Method
1.  Wash and peel the ripe papaya little thick.  Because near the skin papaya is slightly bitter.
2. Now chop it finely.
3.  Take the curd into a bowl and whisk it for a minute.
4.  Add all the spices and mix.
5.  Now add green chili, cilantro and chopped papaya. Mix well with spoon.
6.  Sweet and sour papaya raita is redy to serve.  Garnish it with cilantro and roasted cumin powder.

Raitas are made with various fruits and vegetables.  Today I am writing about the fruit raita which I have made with melon. It is very delicious and healthy.  Here I have made it completely oil free.  Here comes the recipe:
 Ingredients
1 cup of curd
handful of grated melon
1/4 tsp of finely chopped green chili
2 tbsp of finely chopped cilantro
1/4 tsp of crushed black pepper
1/4 tsp of roasted cumin powder
1/4 tso of garam masala
1 tsp of sugar
salt to taste
Method
1.  Wash, peel and grate the melon.
2.  Beat the curd to smooth with spoon.
3.  Add sugar, salt, cilantro, green chili, garam masala, and grated melon.  Mix it well.
4.  Now add roasted cumin seeds powder, black pepper and mix.
5.  Delicious and healthy melon raita is ready to serve. Chill it in the refrigerator and serve.
