Pasta Tomatina

Hello friends returning to blogging after a long break. Hope all you are doing well. Today I 'm sharing with you a very delicious pasta recipe Pasta tomatina. It's truly drool worthy. In this recipe I use farm fresh ripe red tomatoes. The tomato has been referred to as a "functional food," a food that goes beyond providing just basic nutrition. Due to their beneficial phytochemicals such as lycopene, tomatoes also play a role in preventing chronic disease and deliver other health benefits.Tomatoes are also an excellent source vitamin C, biotin, molybdenum and vitamin K. They are also a very good source of copper, potassium, manganese, dietary fiber, vitamin A (in the form of beta-carotene), vitamin B6, folate, niacin, vitamin E and phosphorus. Pasta is a perfect foundation for healthy, nutritious and satisfying meals.Pasta tomatina is such a delicius healthy recipe filled with antioxidant-rich tomato sauce and protein-packed cheese with little dash of fiber rich vegetables. So enjoy yummy Pasta tomatina.





Pasta Tomatina

Ingredients
  • 100 g pasta of your choice
  • 1 cup tomato puree
  • 1 tbsp red chilly sauce (optional)
  • 1 tsp mixed Italian dried herbs
  • 1/2 cup cream cheese
  • 1 1/2 tbsp crushed garlic
  • 2 tbsp butter
  • 1/2 cup chicken / vegetable stock
  • 1 onion big slices (optional)
  • 4 tbsp finely chopped beetroot (optional)
  • 2 tsp finely chopped green beans (optional)
  • to taste salt and pepper

Cooking Directions
  1. Boil the pasta in water adding salt and a teaspoon of oil.
  2. In a pan add a teaspoon of butter fry the sliced onion and with toss finely chopped beetroot and green beans with little salt and pepper. Keep aside.
  3. In another pan heat a teaspoon of butter add garlic. Fry a little. then add tomato puree. Stir well. Add dried herbs, red chilly sauce if using want little heat , salt and pepper. Mix well . Then add 1/2 cup of stock. Let it boil. When the sauce thickens. Add cream cheese. Mix well. Add boiled pasta and let the sauce get well coated now you can add fried onion and veggies. Mix well. Put off the flame.Serve hot a delicious whole meal pasta tomatina.

Shell pasta are actually known as conchiglie in Italian. A miniature variety called conchigliette. I am sure you all will like this easy but delicious and healthy pasta recipe with conchigliette, that I am sharing with you all today. You can make water poached egg and top it with if you want this recipe to be more healthy but this gooey style of eggs add on more creamy richness to this pasta. I use whole black pepper in this recipe which may seem bit new to you all but black pepper has it's own medicinal values, it is used to improve digestion, stimulate appetite, and treat gastrointestinal problems. So more health add in this recipe. Give this easy quick shell pasta with gooey egg scramble a try and enjoy a delicious meal.



Shell Pasta With Gooey Egg Scramble

Ingredients
  • 1 pack shell pasta
  • 1 cup tomato puree
  • 2 tbsp tomato paste
  • 1 tsp chopped garlic
  • 1 onion chopped
  • 1/4 cup bell pepper cubes
  • 3 to 4 egg
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/4 tsp cumin powder
  • 4 tbsp grated cheese
  • 2 tbsp olive oil
  • 1/2 tsp whole black pepper
  • 1/2 tsp sugar
  • 1 tsp salt and pepper
Cooking Directions
  1. Cooked the shell pasta according to package instruction. On a low heat place a pan grease with very little oil, break the eggs one by one into the pan wait for few second then scramble the egg so that it remains gooey. Keep aside. Heat oil in pan. Add whole black pepper, chopped garlic,onion and bell pepper.Fry till onions are translucent. Now add tomato puree, tomato paste, basil, oregano, cumin powder, sugar, salt and pepper. Mix well.
  2. Let it cook for few second then add the cooked pasta. Mix well. Put off the flame. Serve in a plate and top with gooey scramble egg and grated cheese. Enjoy Shell pasta with gooey egg scramble.

Halloween is on the way and its fun time with lots of fresh pumpkin recipes. Today I share a very simple yet supernaturally delicious pumpkin pasta recipe. I am sure it will rock your Halloween party. Give it a try and let me know how you like it!



Pumpkin Prawn Pasta

Ingredients
  • 1 bowl Cannelloni pasta ( cooked as per package instruction)
  • 10 to 12 shrimp
  • 1 cup pumpkin paste
  • 1 tsp garlic paste
  • 2 cheese cube grated
  • 2 tbsp butter
  • ½ tsp mixed Italian herb ( basil and oregano)
  • a pinch sugar
  • 1tbsp lemon juice
  • 1 tbsp chopped fresh mint leaves
  • Crushed pepper to taste
  • Salt to taste
Cooking Directions
  1. Heat 1 tbsp of butter those who are health conscious you can substitute it with sunflower oil. Add shrimp to it slightly saute then add the cooked pasta and mix well with pinch of salt and pepper. Put off the flame and keep aside. Now in another saucepan heat one table spoon of butter. Saute garlic till you get the roasted smell. Then add the pumpkin paste and ½ a cup of water let it boil then add sugar, salt and crushed pepper. Cook for 5 minutes. Let the sauce thickens, and then add pasta and shrimp. Mix well. Add mixed Italian herb and half of grated cheese. Mix well. Put off the flame mix the lemon juice. Serve the pumpkin prawn pasta in a serving dish. Sprinkle the rest of grated cheese and chopped fresh mint leaves. Your yummy pumpkin prawn pasta is ready to relish and rock the Halloween party.
