Pasta Tomatina

Hello friends returning to blogging after a long break. Hope all you are doing well. Today I 'm sharing with you a very delicious pasta recipe Pasta tomatina. It's truly drool worthy. In this recipe I use farm fresh ripe red tomatoes. The tomato has been referred to as a "functional food," a food that goes beyond providing just basic nutrition. Due to their beneficial phytochemicals such as lycopene, tomatoes also play a role in preventing chronic disease and deliver other health benefits.Tomatoes are also an excellent source vitamin C, biotin, molybdenum and vitamin K. They are also a very good source of copper, potassium, manganese, dietary fiber, vitamin A (in the form of beta-carotene), vitamin B6, folate, niacin, vitamin E and phosphorus. Pasta is a perfect foundation for healthy, nutritious and satisfying meals.Pasta tomatina is such a delicius healthy recipe filled with antioxidant-rich tomato sauce and protein-packed cheese with little dash of fiber rich vegetables. So enjoy yummy Pasta tomatina.





Pasta Tomatina

Ingredients
  • 100 g pasta of your choice
  • 1 cup tomato puree
  • 1 tbsp red chilly sauce (optional)
  • 1 tsp mixed Italian dried herbs
  • 1/2 cup cream cheese
  • 1 1/2 tbsp crushed garlic
  • 2 tbsp butter
  • 1/2 cup chicken / vegetable stock
  • 1 onion big slices (optional)
  • 4 tbsp finely chopped beetroot (optional)
  • 2 tsp finely chopped green beans (optional)
  • to taste salt and pepper

Cooking Directions
  1. Boil the pasta in water adding salt and a teaspoon of oil.
  2. In a pan add a teaspoon of butter fry the sliced onion and with toss finely chopped beetroot and green beans with little salt and pepper. Keep aside.
  3. In another pan heat a teaspoon of butter add garlic. Fry a little. then add tomato puree. Stir well. Add dried herbs, red chilly sauce if using want little heat , salt and pepper. Mix well . Then add 1/2 cup of stock. Let it boil. When the sauce thickens. Add cream cheese. Mix well. Add boiled pasta and let the sauce get well coated now you can add fried onion and veggies. Mix well. Put off the flame.Serve hot a delicious whole meal pasta tomatina.

Steamed egg is a very delicious and healthy preparation and can be taken anytime, take as breakfast, lunch or dinner , it just rocks. Steamed egg is very popular in Chinese cuisine, it is a Chinese home-style dish found all over China.Not only in China it is also popular in Japan and Korea.I am sure you baked, poached, fried eggs  number of times but if you haven't yet tried steamed egg then give it a try. I didn't use the authentic Chinese or Korean style but  this is a fusion style. I love this and hope you will love it too.

Steamed Egg

Ingredients
  • 2 large egg
  • 1 onion chopped
  • 1/2 tsp ginger chopped
  • 1/2 tsp garlic chopped
  • 2 broccoli florets cut into small peices
  • 2 tbsp red, green and yellow pepper chopped
  • 1tbsp chopped tomato( seedless)
  • 3 tbsp grated cheese
  • 1 tbsp chicken stock/ water
  • to taste salt and pepper
Cooking Directions
  1. Take a bowl beat two eggs. Add water or chicken stock ( chicken stock used in this recipe used make this recipe more soft and fluffy). Beat well. Then add all the ingredients.
  2. Mix well. . Then pour the whole mixture into a greased dish or ramekin mold. Sprinkle generously cheese over it. Now cover and steam until the egg is fully cooked and firm and cheese is melted. Your steamed egg is ready. I think you can have this healthy meal anytime of the day. For those who are weight watching can skip cheese if you want. It will taste great even without cheese but with cheese it is just awesome. Try and love it.

For past few days due to some tight work schedule I need to make some quick yet filling lunch. So other day I cook this pasta omellete, this is awesomely delicious and you can add any vegetable, fish, seafood, meat of your choice and make it within minutes but to make perfect omelet there is simple trick go through the recipe and see and you will know it. The best part of this pasta omelette recipe is you can use your leftover to make a wonderful dish. Try this quick, easy and delicious pasta omelette and enjoy a filling savory lunch.



Pasta Omelette

Ingredients
  • 1 cup boiled pasta
  • 1 sliced onion
  • 1/4 cup cooked chicken cube
  • 1/4 tsp chicken seasoning powder
  • 1 clove crushed garlic
  • 4 to 5 eggs
  • 1 tbsp cheese sauce
  • 2 tbsp olive oil
  • 2 tbsp grated cheese
  • 1 tbsp finely chopped parsley
  • Salt and pepper to taste
Cooking Directions
    Heat a teaspoon of olive oil in pan. Add sliced onion and crushed garlic. As the onion became transparent add cooked chicken, boiled pasta and cheese sauce, parsley and seasoning powder. Mix well. Add salt and pepper if needed. Toss and then put off the flame. Let the mixture cool down. Now in another bowl lightly beat eggs here lies the trick the amount of egg should be such so that it can hold all the other ingredients added to it. Add pinch of salt and pepper. Add the cooked pasta and mix well. Heat rest of the olive oil in a pan and pour the mixture. This pasta omelette is much heavy than the regular omelette. Let it set in a medium flame for 3 to 5 minutes. Then cook in a low flame for another 2 to 3 minutes until the base is golden. Leave to cool for 5 minutes in the pan then cut into wedges. Garnish with grated cheese and tomato pasta sauce. Serve hot and relish.
