Find Good and Natural Recipes

Couscous has become a popular side dish. It is very easy to cook. If one has arrangement of boiling water just like in hotel, hospitals  etc., it can be easily made. Mainly used in salads. It works well with fruits and vegetables as well as with sweet and savory dishes too. Here below is its salad recipe:
 Ingredients
1 cup of couscous
1 peeled and chopped apple
1 green capsicum
1/4 cup of grated or chopped carrots
1/2 red capsicum
1/2 yellow capsicum
1 finely chopped fresh green chili
2 tomatoes
1 cucumber
3 tbsp of chopped cilantro
1 tbsp of mint leaves
1 handful of corn
1/4 cup boiled white chickpeas
1/2 lemon
1/2 tsp of ginger juice
salt to taste
handful of chopped green onion leaves. 
1/2 tsp of garam masala
1/2 tsp of crushed black pepper
Method
1. Soak 1 cup of couscous with 1 cup of boiled water, salt and 1 tsp of oil. Close the the lid. Keep it for 5 minutes. 
 2. After 5 minutes stir  it with fork very gently in order to separate each grain.
3. Peel and chop all the fruits and vegetables very finely.
4.  Take all the fruits, corn, carrots, chickpeas, tomatoes, green chili, cucumber, green onion leaves and soaked couscous in a tray and mix it with two forks.
5.  Add salt, garam masala and black pepper.
6.  Squeeze lemon juice and ginger juice to it and mix.
7.  Now add hand torn mint leaves and finely chopped cilantro.  Give it a good stir.
8. Chatpata couscous salad is ready to serve.
Tip: One can use fruits and vegetables which needs no cooking of one's choice.

Raw mangos/kairi/aambi are a great source of vitamin C. it is generally used to make pickle, chutney etc.  Today I am writing the recipe of its soup with fulkis.  It is very chatpata soup as well as healthy too. Here below is the full recipe:
 Ingredients
1 big raw mango
7-8 tsp of sugar
small lump of jaggery
salt to taste
1/2 tsp of red chili powder
1/2 tsp of turmeric powder
pinch of heeng
1 tbsp of ginger paste
few mint leaves
1/2 tsp of roasted cumin powder
1/4 tsp of chaat masala
2 pinches of garam masala powder
Few besan pakodis/fulkis
Method
1.  Wash and peel the raw mango/kairi/aambi and cut into pieces.
2. Now take the mango pieces, ginger, salt, red chili, turmeric, heeng and jaggery ,with 2&1/2 cups of water in a pressure cooker and keep it on the flame.
3.  As soon as the first whistle comes, lower the flame and cook it for 10 minutes. After that remove from fire.
4.  Let the pressure cooker cool completely.  Filter the boiled mango through a colander/sieve to make it smooth.
5. Now take it in a pan and keep it again on fire.  Add sugar and let it dissolve and remove from heat. Now add all the remaining spices-roasted cumin powder, chaat masala, mint leaves and garam masala.
6.  Soak the besan pakoris/fulkis in normal water for 10 minutes.  After that squeeze it with light hands. For making fulki, see previous post Pkodi/Fulki
8. Then add these squeezed pakoris/fulkis in the mango pulp.
9.  Chatpata raw mango soup with pakodis/fulkis are ready to serve.
Tip
Quantity of sugar and jaggery depends on the sourness of mango. Everything can be adjusted according to taste.

Water melon rind is used in making many dishes.  Today I have made its soup.  Its very healthy and nutritious. It works well for me in headache for getting some relief. Here is its recipe:
Ingredients
white rind of small half water melon 
water melon seeds
1 medium size onion
3 medium size tomatoes
1 inch piece of ginger
12 pepper corn
1 tsp of sugar
1 tbsp of lime juice
salt to taste
1/2 tsp of garam-masala
1 tbsp of tomato ketchup (optiional)
Method
1.  After eating water melon's  red part, peel the white rind. Here I have used its seeds too.
2.  Now chop roughly onion, ginger, and tomatoes. though I have written medium size tomatoes, but I have used here very tiny tomatoes.
3.  Next take the water melon rind, its seeds, onion, ginger, tomatoes, salt and pepper corn with 3 cups of water in a pressure cooker.  When it comes on full pressure and first whistle comes, lower the heat and cook it for 10 minutes. Here I am making it in Hawkins Pressure cooker of 3 liters.
4.  Now let it cool off completely.
5.  After that open the lid and take it in the blender and make it smooth.
6.  Now strain it through a strainer.
7.  Next take it again in  cooker and keep it on flame.  Add sugar, lime juice and garam  masala  and mix.  When it starts boiling, remove from heat.
8.  Lastly, add tomato ketchup and mix.
9.  Healthy water melon soup is ready to serve.

In previous post I have wrritten the recipe of pumpkin leaves pakore.  In pakoras I used its tender stalk and leaves only.  I have made the soup of its remaining little hard stalk.  It turned very well for us.  Really it is  worth making. so I thought of sharing it with all the readers too. Here is the whole process How I made it:
 Ingredients
Remaining hard stalk of pumpkin leaves
1 small onion
2 ripe tomatoes
1 small green chili
1 inch piece of ginger
5 munakka (black raisins)
salt to taste
1/4 tsp of garam masala
6 black pepper corn
25 no. of peanuts
1 tbsp of boiled black channa (optional)
1 tsp of lemon juice
1 tsp of tamarind chutney
1 tsp of sugar
1 tsp of  butter ( optional)
1 tsp of corn flour
Method
1. Wash and cut the pumpkin leaves remaining hard stalk, onion, tomatoes, ginger and green chili.
2.  Now take all the ingredients i.e stalk,onion, tomatoes, black pepper corn, peanuts, boiled black channa, ginger and green chili in a pressure cooker with one steel glass of water. Add salt too.

3.  Close the lid and keep it on the heat.  When it starts whistling, lower the heat to lowest point and cook it for 5 minutes.
4.  Now remove from heat.  After opening the lid, put the black raisins too.  Let it cool completely.
5.  On getting it cools completely, add 1 tsp of corn flour. And take it in blender and blend it till roughly smooth.
6.  Now filter through it sieve.  Again keep on heat and add tamarind chutney, sugar and let it cook for 5 minutes occasionally stirring.
7.  Now remove from heat.  Add lime juice, garam masala and butter.
8.  Healthy pumpkin hard stalk soup is ready to serve.
